Blueberry Crumb Bars

photo (2)photophoto (3)photo (4) It’s summertime and blueberries are abundant and deliciously sweet. These blueberry bars are great to make and keep in freezer till you need them. I combined a few recipes that I had and kept my fingers crossed and made a mess in the kitchen and used too much butter and here it goes. Sometimes I just don’t feel like using electric mixer even though I seemed to use a lot of different mixing bowls for this one. I had seen another recipe for a blueberry crumble but it called for shortening, so I substituted butter. It’s a lot of butter I know, but how much can be in one piece? My plan is to eat a little of this and freeze the rest for when my family comes out next month. As I was cutting it up to freeze I managed to eat way more than I should have and they were really beautiful and delicious. Just the right amount of sweet. I let them sit in fridge overnight, and they were way easier to cut into right out of the fridge. They are now nestled in the freezer except for the few pieces I left out to eat. I would keep unused and unfrozen pieces in the fridge and take out and bring to room temp. when you’re ready to eat them. You can also heat up in microwave if you prefer them warm. Either way, once you taste this buttery fruity combo you’ll be hooked.

Ingredients:

1 cup sugar plus 1/2 cup sugar

1 teaspoon baking powder

2 sticks cold unsalted butter I cut it up into small diced pieces. I sliced stick in half, and then cut up into smaller pieces which would be easier to blend in.

1 egg

3 cups all-purpose flour

1/4 teaspoon salt

4 teaspoons cornstarch

1/4 cup of lemon juice and zest of one whole lemon ( I did use a large lemon)

4 cups fresh blueberries

9 x 13 inch pan , I used a glass Pyrex and it was perfect

Directions:

Preheat the oven to 375 degrees and Spray 9 x 13 pan. I used Bakers Aid Baking Spray because there is enough butter in this already.

In a medium size bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Using a fork or pastry cutter blend in the cold butter pieces and egg. Then with clean hands I played with the dough a bit and got a crumbly texture going. I took half the dough and patted it down gently into pan with my hands. I made as clean an edge as I could, but I wouldn’t worry too much about that.

In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix into the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble with your clean hands the remaining dough over the berry layer.

Bake in preheated oven for about 45 minutes or until top is slightly browned. I baked for 50 minutes , then checked on them. I baked for another 5 minutes. Cool completely before cutting into squares. I actually cooled in refrigerator over night, and cut up the next day.

Shrimp with Tomatoes and Corn

I saw this recipe on the New York Times cooking site by Ali Slagle. One of my most favorite cooking sites. I made a few changes to recipe and would highly recommend checking out this recipe. Sometimes I serve with rice but this recipe stands on its own as a meal. You can use pasta or bread as well. If you love shrimp and corn and tomatoes this one’s for you.

Perfect in the summer months with all that sweet fresh corn out there. Grab some fresh corn and use it in this wonderful dish.

Ingredients:

1 pound large shrimp, peeled and deveined — I used under 12 ( meaning 12 to a pound) Mexican White Shrimp– this is the shrimp I prefer but use what you can get and like

Kosher Salt and Pepper 

2 Tablespoons Extra-Virgin Olive Oil

1 pint cherry or grape tomatoes — there are so many variations out there now– I used these tiny little grape tomatoes but would use different colors as well ( heirloom grape / cherry tomatoes)

2 cups fresh or frozen corn– app. 4 ears fresh corn

5 garlic cloves–minced

1/2 teaspoon red-pepper flakes — we like the heat use at your own discretion– this was not spicy

1/4 cup dry white wine

2 Tablespoons fresh lemon juice from 1 large lemon

2 Tablespoons unsalted butter

*extra lemon wedges and cut up fresh basil for serving–totally optional

Directions:

Pat the shrimp dry and season with salt and pepper. In a large skillet heat the olive oil over medium high heat. Add the shrimp and cook until pink and lightly golden in spots, app. 1 – 2 minutes on each side. Remove with slotted spoon to a plate and set aside. You will finish cooking through at the end and you don’t want shrimp to over-cook.

Add the tomatoes to the skillet, you can season with a little salt and pepper if you’d like and cook stirring a few times just till the tomatoes to start to blister, 3-4 minutes. Add the corn, season with salt and pepper, and cook, stirring a few times to incorporate. Tomatoes will start to burst and the corn is golden , another 3- 4 minutes.

Add the minced garlic and red-pepper flakes and cook stirring another few minutes. 

Reduce heat to medium and add the wine and lemon juice, stirring any brown bits from the bottom of the pan. Cook until nearly evaporated, then add the butter and stir until melted . Add back the shrimp and stir until warmed through and shrimp is fully cooked , another 2 minutes or so. Stove was on medium-low.

Taste for Salt and Pepper . Add some fresh Basil if you’d like and you can serve with some extra lemon wedges .

Tomato Time Pasta– perfect Summer Pasta made with fresh tomatoes–Meatless

photo 2 (3)photo 4 (2)photo 5 (3)Nothing but beautiful tomatoes out there begging to be eaten in a million different ways. Perfect for a “Meatless Monday” dish or any night of the week . There are tons of local tomatoes out there now. At any local farmers market you can pick up pints of these beautiful babies. This is a lovely light pasta.

I had bought 2 pints of those beautiful little cherry tomatoes and right now there are those gorgeous yellow sunburst tomatoes also available.  I wasn’t sure what I would do with them. They varied in size so I knew if I made a sauce some were getting cut and some would stay whole. Nothing ever sounds better than a plate of pasta to me,  nothing.   These beautiful tomatoes are only out for such a limited time you have to get them while the getting is good.  Some of the tomatoes were super small and I left them whole while I halved the larger ones. There are so many variations of this sauce and feel free to improvise. We love it this way. So simple and so delicious.

Ingredients:

1 lb. spaghetti , any kind of long spaghetti is good for this — sometimes I use bucatini type and sometimes I use thin type long spaghetti– use whatever you’d like

1/4 cup extra-virgin olive oil plus more as needed

4 cloves garlic, peeled and minced.

1/2 teaspoon crushed red pepper* we like it spicy so if you don’t want it that spicy cut to 1/4, I actually used 1 whole teaspoon and it packed a lot of kick.

2 pints of cherry tomatoes or little plum tomatoes or you can use about 3 cups of chopped fresh tomatoes of any type. I cut the larger tomatoes in 1/2 and I left the little ones whole– last night I used 2 packages of sugar bomb tomatoes they were 12 oz. each and it was perfect

app. 20 leaves of fresh basil, I just cut them up into small slivers–this is totally optional if your kids don’t like green stuff– but it looks pretty

Kosher Salt and Freshly Ground Black Pepper to taste –I used app. 1 teaspoon on tomatoes and added towards the end as needed

freshly grated parmesan at your discretion

Directions:

Cook pasta according to directions on box for al dente. Reserve a cup of pasta water in the event you may need a little more liquid in your sauce. Add 2 tablespoons of salt to cooking water for pasta. The Italians like to say that their pasta water should be like sea water good and salty. After finished cooking pasta — reserve 1 cup of pasta water and set aside before you drain pasta.

Heat a large sauté pan over medium heat add 4 tablespoons of olive oil and garlic, cook until garlic is golden about 2 minutes. Be careful you don’t want to burn this garlic. Add the crushed red pepper now and the tomatoes, and cook over medium low heat. I also added some kosher salt (about 1/2 teaspoon to start, you can always add more) and a little freshly ground black pepper. Stir for a while to make sure garlic doesn’t burn and tomatoes start to burst and deflate about 5  minutes and if you think you need a little more olive oil add it now . I let the tomatoes simmer in the pan for about 15 minutes to 1/2 hour for the best consistency. I smashed down stubborn little tomatoes at the end with the back of a wooden spoon or a masher if you have one.  A very low simmer at the end.  Taste for Salt and Pepper. The longer the tomatoes sit in the oil and cook down on a low simmer the better the sauce will be so if you have a little time let it sit. I think my tomatoes sat for at least 2 hours like this. Once tomatoes were cooked down  I just turned off heat covered it and let it sit. Before eating while making the pasta I heated up on a low simmer.

Once the spaghetti is cooked and you’ve drained it ( remember to reserve a cup of pasta water).  Add the pasta water a little at a time to the pan with tomatoes and over medium-low  heat toss the pasta with the tomatoes well. Add the basil . I let everyone add their own cheese at the table.

Remove the pan from the heat and plate it up.

Yum! and even more delicious the next day.

Peach Dump Cake

I had all of these lovely peaches and wanted to make something sort of homemade without a lot of muss or fuss. This is easy as can be and delicious as can be. You’ll need about 6-8 large peaches — app. 6 cups. I threw it all together and had a yummy dessert using only 4 ingredients. The simplest peach dessert recipe ever. The most difficult part of this recipe was peeling and slicing the peaches.

Ingredients:

6 cups Fresh Peaches– about 6-8 large peaches — peeled and sliced

1/2 cup sugar —

1 box Vanilla – White or Yellow Cake Mix

1 stick of unsalted butter cut into thin slices

*Vanilla Ice Cream –optional but I wouldn’t serve without it

Directions:

Pre heat oven to 350 degrees

Peel and slice the peaches and place in a medium sized bowl. Toss with sugar.

Pour peaches into a prepared 9×13 baking dish ( spray with cooking spray — I love Bakers Aid for baking but anyone will do. Spread peaches out evenly. Sprinkle cake mix evenly all over the peaches.

Slice the butter into very thin pieces and place the butter over the cake mix, try to cover the entire pan with butter

Bake for 45-50 minutes until bubbly and golden.

Remove from the oven and let it sit for a bit.

Serve with Vanilla ice cream

Unfortunately we were so excited to eat it I didn’t take any good pics this time out but I will next time I make it.

I just have this one photo of it in a dessert dish with ice cream.

Grilled Corn Salad with avocado and a simple vinaigrette

It’s summertime and this salad was a perfect accompaniment to our bbq steak. I love grilled corn — I just put this corn on the cob on the grill for about 10 minutes — don’t burn it just get char marks all over to the best of your ability. You can adapt this salad to anything you’d like to add or subtract — you can add radishes instead of onions, bell peppers, cucumbers( I’d use the Persian type of cuke ) this is what I did last night and it was delicious and fresh tasting. You can also use any type of dressing you’d like. I used basil but you can easily substitute cilantro.

Salad:

3 ears grilled corn — removed from the cob

1 ripe avocado cubed or diced – add to salad right before serving

3/4 cup crumbled feta

1 cup tomatoes — I cut small grape tomatoes in 1/2

1/2 cup red onion – diced

Handful of fresh basil — cut up

Vinaigrette:

1/4 cup good quality extra virgin olive oil

4 Tablespoons red wine or apple cider vinegar or champagne vinegar

1 teaspoon garlic powder

salt and pepper to taste

Directions:

For the salad: mix together all of the above ingredients in a bowl

Whisk together vinaigrette ingredients or place in a small jar with fitted lid and shake to combine. Taste for salt and pepper and adjust

When ready to serve the salad, add the avocado and however much dressing you’d like and gently toss I used very little dressing just enough to coat vegetables and I have leftover dressing.

* I had leftover salad so I picked out any left over avocado in it because it would turn bad the next day and the salad will last for a few days as is

A Berry Patriotic Trifle

I made this for the Fourth of July a few years ago and it was so very pretty and pretty yummy too. I honestly didn’t care how good it tasted because it looked that good but it really was very yummy. Very easy to make and no baking involved. Perfect for the Fourth or Labor Day or really any old time . Actually this would be lovely made with all blackberries , all strawberries and just serve it any old time if you’re not feeling the Patriotic theme. It’s delicious and an easy solution for dessert for those summer bbq’s.

You’ll need a Trifle Bowl — worth the investment.

Happy Fourth of July America! Land of the Free because of the Brave!

Ingredients:

1 store bought angel food cake

For the syrup:

1/4 cup sugar

1/4 cup fresh lemon juice

1/4 cup water

1/4 tsp. Almond Extract

Whipped Cream Cheese:

2/3 cup sugar

1 lb. Cream cheese , at room temperature

2 cups Heavy Cream, at room temperature

Fruit:

2 pints blueberries

2 pints strawberries, hulled and sliced

Directions:

Heat 1/4 cup sugar, lemon juice , and 1/4 cup water in a saucepan over medium-high heat, stirring, until the sugar dissolves. Remove from the heat and stir in the almond extract.

Cut the pre made angel cake into 1 ” slices

Brush both sides of the sliced cake with syrup — I put on a rimmed baking sheet to do this

Cut the slices into 1″ cubes

Beat 2/3 cup sugar and the cream cheese with a mixer with paddle attachment on medium speed until smooth and light. Add the cream and beat on medium-high speed until smooth and the consistency of whipped cream

Arrange half of the cake cubes in the bottom a 13 cup trifle dish. Sprinkle evenly with a layer of blueberries. Dollop half of the cream mixture over the blueberries and gently spread

Top with a layer of strawberries

Layer the remaining cake cubes on top of the strawberries. Then sprinkle with more blueberries

Top with remaining whipped cream and finish with the remaining strawberries and blueberries, arranging them in a decorative pattern. Cover and refrigerate for at least a few hours. Overnight is perfect and what I recommend.

Like I said any berries will do , it’s a lovely dessert.

Chickpea, Feta and Tomato Salad (with cukes) Raw and Vegetarian

Chickpea, Feta, and Tomato ( with cukes) Salad

I served this salad with my Easiest Chicken Ever, it is fresh tasting , and crunchy. very easy and can be made throughout the year. it is very good using heirloom tomatoes, which I couldn’t find this time out.  It’s also perfect with small, grape tomatoes, which can be found everywhere, at any time. Enjoy! pretty low in calories as well. 🙂 Just saying…. this is a delightful fresh tasting side dish and perfect for any bbq or dinner you may be having.

INGREDIENTS:

1 can (15 oz) chickpeas, rinsed and drained (try and buy the organic ones)

1 pint cherry, grape or heirloom (if in season) tomatoes. (If you are using the little ones, cut them in 1/2. If you are using the larger ones, slice and cut into small chunks

2 oz (approx. 1/3 cup or to your liking) feta, crumbled or cubed

2 tablespoons fresh lemon juice (approx. 1 average lemon)

kosher salt

freshly ground black pepper

dried oregano gives it a real mediterranean flavor use as little or as much as you’d like — sprinkle a little and taste for flavor

DIRECTIONS:

Combine everything in a bowl and season with salt and pepper and oregano to taste, flavors will come together nicely , I let it sit out for app. 1/2 hour before serving, give it a mix from the bottom before serving. Taste for seasoning.

*Should serve approx. 4

*Very low in calories (yeah!)

Salmon Glazed with Brown Sugar and Dijon Mustard

Simple ingredients and Delicious Results I have been making this salmon recipe forever — Joel loves it and so do I. 4 easily obtainable ingredients and you have a delicious meal . Salmon, brown sugar, dijon mustard and Salt and Pepper. Give it a try over rice or potatoes and whatever green vegetables your family eats . Enjoy!

Ththis is how I made it the next time with roasted string beans and rice pilaf

Ingredients:

I used 2 Salmon Fillets for the 2 of us– app. 8 oz. each I like Farmed Organically or Wild and the next time I made it I asked for a mid cut piece of Salmon app. 1 to 1 1/2 lb. all about the same thickness and only 1 piece — whatever works best for you

Dijon Mustard

Brown Sugar

Kosher Salt and Freshly Ground Black Pepper

Directions:

Heat oven to 400 degrees

Make a mixture of Dijon Mustard and brown sugar, start with small amounts and increase how much mustard to brown sugar you like.

Salt and Pepper the salmon fillets

I spray a baking sheet with cooking spray, place the fillets skin side down. Slather the tops of the fillets with the glaze and put them in the top half of the oven.

Roast for about 10-12 minutes depending on your oven and how thick your salmon is and how much you like salmon to cook.

I served alongside Rice and Roasted Brussels Sprouts. And roasted string beans and roasted cauliflower.

Easy Peasy Chicken Caprese

This is one of those recipes that I make that is so super easy. Very few ingredients and other than cutting tomatoes and mozzarella balls, there is very little prep. You gotta love meals like this, especially in the summer when these beautiful heirloom tomatoes are abundant. I really only make this in the summer . It is light and delicious and makes for a beautiful salad as well and you can serve it at room temperature. I made this last night with burnt brussel sprouts on the side . You’re not going to believe how easy this is. It’s amazing!

Ingredients:

1 container marinated bocconcini ( mozzarella balls) you will need the oil from the container to marinate chicken ( it comes in an olive oil marinade with spices)

4 skinless, boneless chicken breast halves , I buy them pounded thin or use chicken tenderloins –you just don’t want them too too thick

Kosher Salt and Freshly Ground Black Pepper

1 pint heirloom ( if you can get them) cherry or grape tomatoes, halved

*a little cut up basil is always a good idea!

Directions:

Take bocconcini balls out of the marinade. Cut bocconcini balls in quarters. Transfer about 1/2 of the marinade from bocconcini to a medium size baking dish , add the chicken , salt and pepper the chicken and let it sit at room temperature for about an hour before cooking. If you’d like you can refrigerate , and take out and bring to room temperature before grilling.

Put cheese in a bowl, add the remaining oil marinade and add the cut tomatoes to this bowl. Salt and Pepper to taste, give it a good stir and put in refrigerator till you’re ready to cook chicken. I removed from fridge about 1/2 hour before I cooked the chicken. Just bring it to room temperature.

Grill the chicken over medium high heat , till you get nice grill marks, probably about 8 minutes. You can cut the chicken into smaller pieces and mix with tomatoes and cheese. I just plated up the chicken and put tomato/cheese mixture on the plate. Perfect summer meal.
