A Real Deal Blueberry Cobbler

Last summer I posted a few things to do with blueberries. I recently found this recipe and realized it was a combination of 2 separate recipes–one for the blueberry filling and one for biscuits. When combined, this is a true cobbler and not a crisp. Yum! The thing of it is that you really don’t want this hanging around in the fridge for too long, because it is that
good. You will keep eating it and I promise you that. So make it for company and at least six people so you have a teensy bit left over. Use the fresh blueberries which are in abundance now. It’s almost a must to serve this with vanilla ice cream, as it complements it so well! If you’d like, you can make this a day ahead for sure, I’ve even frozen it. It comes out perfectly. Now is the time to try and bake this delightful dessert with all of the beautiful blueberries out there. I think it’s still good to try and make this, just had to get this one out.

Ingredients:

1 pound blueberries or 3 1/2 cups

1 tablespoon cornstarch or arrowroot

2 tablespoons lemon juice (fresh)

1 cup all -purpose flour

3/4 cup sugar ( you can use turbinado (raw ) sugar as well ( divided)

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup milk ( don’t use fat free, if you must, use 2%) I prefer whole milk in baking or low-fat buttermilk always works.

3 tablespoons butter, melted

3/4 cup boiling water

Directions:

Preheat the oven to 350 degrees. Spread the blueberries in an ungreased but sprayed ( I always use Pam or else I can’t clean the pan) 8 or 9 inch square baking pan. Sprinkle with cornstarch
and drizzle with lemon juice. Set aside.

In a medium size bowl, combine the flour, 1/2 cup sugar, baking powder and salt. Add the milk and the butter.

Stir until just combined ( shouldn’t be smooth) then drop mounds of dough onto the blueberries.

Pour boiling water over the dough and fruit. Sprinkle top with remaining 1/4 cup sugar.

Bake until the biscuits are golden brown and the blueberries are bubbly. 45- 60 minutes.

Serve warm or at room temperature. If you are preparing ahead , either frozen or in fridge, take out of freezer and bring to room temperature, I then put in oven till it starts to bubble.

I’ve tried so many noodle puddings, but keep coming back to the same old , same old. they’ve been passed down in so many different incarnations. i don’t even know what the original one is anymore. this is my most favorite. also a perfect break fast food. can and should be made ahead of time, they hold together better.  we used to add apricot jam, but it really was overkill. we omitted it, and it is perfect just the way it is. thanks to karyn r. for this noodle pudding and for being such a great cooking buddy for as far back as i can remember.

1 lb. noodles ( i use extra wide egg noodles, you’ll need a bag and 1/4 app. just eyeball it)

Napa Noodle Salad

4 cups sliced Napa Cabbage ( I cheat and buy the cabbage in a bag. It’s not always Napa but sometimes I don’t feel like chopping.  if you buy the bag, it’s fine, just use 1 whole bag. It’s more than 4 cups but it’s fine, and if all you can find is the cole slaw kind it’s Ok too, it will just have some carrots and some purple cabbage.

5 green onions (scallions) sliced very thin (green parts only)

Mix cabbage and green onions and refrigerate for a few hours (at least 2). This gives it a chance to meld and wilt a bit.

5 ears of corn

1 small red onion (diced) (if you don’t like a lot of onion, just use less)

3 Tablespoons good olive oil

3 Tablespoons cider vinegar

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 cup fresh basil leaves

1 pint of red grape tomatoes (cut in 1/2 or 1/4)

Instructions:

In a large pot of boiling salted water, cook the corn for 3 minutes just to take the starch out. Drain and put into large bowl of ice water to stop the cooking and make it turn bright yellow. Once the corn is cool, cut the kernels off the cob (if you keep it flat side down it is easier to cut). If you have a bundt pan, that is perfect for cutting corn into b/c the kernels tend to fly all over.

Gazpacho in the Blender

As much as we hate to see it happen, summer is coming to an end. Gazpacho is all about the summer though and now is the most perfect time to make it. It’s so cool and refreshing. This recipe is super easy and I make it all in the blender. I love it very spicy so I use Jalapeno peppers and Serrano chiles. I also add some Tabasco. Obviously, you don’t have to add this hot stuff. Just make it without the spicy additions. My sister is out here now and she likes it as spicy as I do. Feel free to indulge as you wish. We loved it! August and the farmer’s markets are bursting with the most beautiful vegetables. It is a perfect time for making ratatouille. Ratatouille is a classic French casserole stew consisting of eggplant, onions, peppers, tomatoes, and zucchini. I was in a book club and we had just read Julie and Julia. Zucchini Time Bread

It’s that time of year again when zucchinis are everywhere. I love to use them in breads, muffins and fritters. This morning I baked 2 zucchini loaves with the help of this recipe. It takes a lot of ingredients but it’s worth it. With the help of a food processor the zucchini is shredded in no time. Zucchini came from my friend Shelly’s garden and they were beautiful. If you have a friend who has some get a hold of it, or just buy it from the market. Breads are awesome because you can freeze them and take them out and bring back them memory of that summer day you baked them.  Enjoy!

Ingredients:

1 cup whole wheat flour

1 1/4 cups all-purpose flour

1/2 teaspoon salt

2 teaspoons baking soda 1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 cup sugar

1 cup lt. brown sugar (packed)

4 eggs, beaten

3/4  cup vegetable oil

2 cups grated zucchini

1/3 cup water

1 teaspoon fresh lemon juice

1 cup chopped walnuts or pecans

Directions:

Preheat oven to 350 degrees.

In one large bowl combine flour, salt, nutmeg, cinnamon, sugars, and baking soda.

In another large bowl, combine * grated zucchini , oil , eggs and water.

Mix wet ingredients into dry , add nuts.

Bake in 2 standard loaf pans, sprayed well with nonstick spray I used Pam Baking Spray. Cook for about an hour, check after 50 minutes, use a cake tester till it comes clean. My breads took 55 minutes.

You can cook in mini loaf pans ( probably 5) for about 45 minutes.

*grating zucchini is so very easy with food processor grating blade. Just cut  pieces to fit into feed tube. It’s perfection.

made this again for dinner last night, used fresh tomatoes from Farmer’s Market, didn’t make a bit of difference. This is a light, delightful very yummy meal. Very easy to prepare, just make sure you brown up the chicken with enough salt and pepper first. Enjoy.

This is a delightful  “what’s in the house ” kind of dinner.  Most of the ingredients in this recipe you’ll have on hand and are easily obtainable.   Enjoy this delicious light pasta meal–it’s perfect for a nice lunch, dinner, or brunch dish. Prep time is quick , about 1/2 hour start to finish.  This is really a beautiful meal in one bowl– protein and veggies.

*I cut this recipe in 1/2 this evening for just the 2 of us. This dish should feed 5 – 6 This recipe is delicious at room temperature or hot or even cold the next day. Wonderful left-overs are always a good thing.

1 pound small pasta ( penne, rigatoni, I used Fusilli Bucati ) I like a small macaroni as opposed to spaghetti in this recipe. Boxes vary and sometimes a box of pasta is 12 oz. — which is fine

Made this delicious pasta once again for dinner last night with chicken sausage , this really is so super easy and perfection in a bowl.

This is a sauceless pasta. Very light, very tasty, and very easy to make. There aren’t a lot of ingredients, and it doesn’t take a long time to make. My husband, Joel, hates green things and loves this dish. And he even eats all the peas on his plate, which makes me very happy. A shout out to Giada de Laurentis for the inspiration here. 

INGREDIENTS:

1/2 cup olive oil

1 lb turkey sausages, casings removed (just squeeze all the meat out; I like Italian-style turkey sausage)

1 box of cremini mushrooms (Baby Bella), approx. 10 oz. (roughly chopped)

About 3/4 bag frozen peas (take them out of freezer about an hour before, just slightly thawed is perfect)

1 lb Farfalle pasta (bow ties)

Salt and pepper, to taste

Freshly grated parmesan, to taste

Came home from our hike up East Snowmass Trail ( which was so beautiful). We were up there for 5 hours , came down and was too tired to even think about shopping for ingredients or getting dressed to go out. Looked in fridge and had cheese and butter. Looked in pantry and had pasta and pepper. There you have it , perfection in a bowl once again. Try it if you haven’t, it’s very rich and very good.

This is restaurant worthy pasta, made in a saute pan, 12″ size would be perfect . This pasta has very few ingredients and you probably have all of them in the house . When I am not sure what to make and I really don’t feel like going out, this is up there with my “go to ” meals. It’s comforting and has a kick of heat from the black pepper. Original recipe is just black pepper and the fresher the better, start out with whole black peppercorns, I grind them right before I am using them. It’s an elegant adult version of mac and cheese and a simple standard all at the same time. I try and use 2 cheeses when I can, but if you only have 1 type of grated cheese, it’s fine.
