Lobsta Pasta

Lobster and Pasta and no wrangling with a messy lobster, just yummy lobster meat and tomatoes with pasta. I just adore this combo and while it may be a tad rich there is no heavy sauce just delicious fresh ingredients.  I picked up the lobster meat at Grace’s Marketplace in Greenvale and I also use Roslyn Seafood Gourmet on Willis Avenue.  I call ahead because they don’t always have it on hand so you may have to order ahead of time.
I got this recipe from the NY Times Wednesday dining Section and made a few adjustments to my liking. It is perfect for the summer, winter, spring or fall. I actually think it’s a perfect way to serve Lobster and the lobster goes pretty far in a recipe like this.
* 4-6 servings, or increase ingredients and make it for more.

Ingredients:

1 lb. cooked lobster meat

1 lb. pasta such as bucatini, lasagnetti, rigatoncini, or long ziti, macaroni or any sturdy type pasta.

4 tablespoons olive oil

2 large shallots finely diced

4 garlic cloves, minced

1/4 – 1/2 teaspoon red pepper flakes (this was spicy so you may want to adjust to your liking)

app. 2 cups chopped cherry tomatoes or little grape tomatoes if you can find yellow tomatoes mix them in with the red tomatoes, I used a whole container , I sliced in 1/2 .

–I put 1/2 teaspoon of kosher salt and a few grinds of the pepper mill on tomatoes. I added a teeny bit more salt, you’ll have to taste for it –taste a piece of tomato and you’ll know if you need more salt and pepper.

app. 2 handfuls basil leaves, torn or roughly chopped–obviously this adds a bit of punch to the plate but not entirely necessary.

Directions:

Bring a pot of well salted water to a boil and cook pasta according to directions for al dente.

Pour olive oil in a wide skillet over medium-high heat. Add shallots and cook for a couple of minutes till shallots soften without browning. Add garlic and red pepper and cook down for another minute or so. Add tomatoes and season generously with salt and pepper, I like to break down the tomatoes a little, so I cooked for about 15 minutes.  Add lobster meat to skillet, stir to coat and heat through for another 5 minutes. Turn off heat until pasta is ready.

When pasta is al dente, drain, add to skillet, and season with salt and pepper. Toss well and transfer to a wide bowl or platter. Add basil, toss once more and serve immediately. Keep a little pasta water on hand if you need to moisten pasta.

This was amazingly delicious, and what the hey we’re worth it right?

Kale and Quinoa Salad – Summer Salad Perfection

I love Quinoa and I love Kale. I saw this recipe on Dana Slatkin’s Beverly Hills Farm Girl site,  it is a delicious healthy recipe which I highly recommend . I made a few changes in some of the ingredients I added. You can add or substitute to your heart’s content. I used her recipe for salad dressing, as I am always looking for new ways to re-invent the “wheel”. This dressing is very tasty and I highly recommend but any of the vinaigrettes that I have posted on here will do just fine. It is the summer , time to kick back and enjoy life. Part of enjoying life is eating, and eating well. I made this for dinner last night and even Joel took a taste, which is shocking. I don’t think it’s his favorite but it certainly is one of mine. It’s worth the effort and I plan on eating the leftovers today for lunch. So healthy! try it. Thanks Dana .

Ingredients:

Salad Ingredients:

1 bunch kale, chopped in food processor ( see picture) remove stems and I remove the ribs and just use the leaves. I used 2 bunches because I had 2 in the house. It was a lot of kale and increased the size of the salad by a lot.

1 cucumber , I scoop out the seeds and dice it. You can use Kirby cukes  or Persians which have very few seeds.

1/2 container of Grape Tomatoes , cut up

1/2 – 1 cup Shaved Parmesan, if you don’t have shaved , grated will do just fine

1/2 cup toasted Pine Nuts , place in oven at 350 degrees for about 3 – 4 minutes.

1/2 – 1 cup dried cranberries, or dried cherries ( which I had and used) or just plain old raisins, I just like the color of the cranberries and cherries

2 cups Quinoa. While preparing Quinoa use equal amounts quinoa and water. I disregard box directions. I used 2 cups liquid ( water or broth) to 2 cups quinoa. It comes out dryer and not mushy at all.

Champgne Vinaigrette ( from the Beverly Hills Farmgirl)

1 tablespoon Dijon mustard

1 teaspoon whole grain mustard

1/3 cup Champagne Vinegar

1 tablespoon Rice Wine Vinegar

1 teaspoon Honey

3/4 cup Extra Virgin Olive Oil

Kosher Salt ( app. 1/4 teaspoon) taste for salt

Freshly Ground Black Pepper, a few grinds to taste

I used a blender and threw all ingredients in and streamed the olive oil in until dressing was emulsified. Taste for Salt and Pepper.

In a large salad bowl toss the kale, quinoa, cheese, tomatoes , cukes, pine nuts and dried fruit of your choice. I made a few hours before serving, and used 1/2 of the vinaigrette and dressed at the table for those who preferred more or less dressing. Can definitley be made a few hours before serving, and I left it out at room temperature for about 2 hours.

This is one of my most favorite recipes ever. I almost always have the ingredients and all I have to do is pick up the riced cauliflower now that is sold almost everywhere.  This is a total game changer, you’ll still have to make sure the cauliflower is dry and that is a little time-consuming but worth the effort! The single most important thing about this recipe is getting the moisture out of the cauliflower  (see directions below)   It is so worth the effort. It is low in carbs, high in protein and really delicious. I think the crust alone would be great but with the sauce and cheese it really was like eating pizza but guilt free. I don’t really do the “diet” food thing but every once in a while something grabs my attention like this recipe and it is really good.

I now only make the pizza in a small rectangular pan–9×12 is the size I use

*apparently it’s 155 calories per serving –6 servings — Joel and I finish 1 whole pizza — just saying. You can make as an appetizer but it is best served Hot. You can re heat in the microwave if you happen to have left overs. It’s also nice with a green salad!

Ingredients:

For the crust:

1 head cauliflower, coarsely chopped or a package of cauliflower crumbles — it’s a 16 oz. package it is sold in the produce section and Green Giant makes one as well

3/4 cup shredded part-skim mozzarella

3/4 cup grated parmesan

4 egg whites, beaten genlty

1/2 teaspoon garlic powder

1 Tablespoon Italian Seasonings (available in most supermarkets in the spice section)

Kosher Salt to Taste

Freshly Ground Black Pepper , to taste

Toppings:

this is what I did but you can use any vegetable toppings you like ( peppers, onions, mushrooms, spinach etc.)

app. 1/2 cup of tomato sauce, I always keep my own sauce in the freezer for times like this. If you don’t have “home-made” use jarred sauce. I have a great recipe on my blog under the title “Sunday Night Red Sauce” or my Basic Tomato Sauce originally posted August, 2011 . You can make your own red sauce if you have a little extra time.

1/2 cup shredded part-skim mozzarella

1/4 cup grated parmesan cheese

sprinkle of oregano –optional

sprinkle of crushed red pepper–optional

Directions:

Preheat oven to 425 degrees.

Place chopped cauliflower into a bowl that can go in to the microwave. Cover bowl with a paper towel and microwave for 8 minutes until cooked through. Allow cauliflower to cool briefly before squeezing out as much water as possible with a cheese cloth or good paper towels. I really tried to get the water out , it makes for a crispy crust. I did it in batches and put between towels and really squeezed it out. Do not try and rush through this step because you will ruin the dough. Cloth towels work the best but you’ll need a thin cloth one to do the job. Paper towels are a bit messy but you can triple up on them and squeeze the water out.

Mash the cauliflower and let cool for about 10 minutes.

I also whisk my 4 egg whites gently before adding into the other ingredients.

Add the mozzarella cheese, parmesan cheese, Italian seasonings, garlic powder, egg whites, salt and pepper to the mashed cauliflower. Mix thoroughly.

Get out your baking sheet if you have one and spray generously with a cooking spray . You can also make a round pizza on a larger baking sheet, the presentation wasn’t as beautiful but it worked and tasted great. Or pick up a small rectangular pan , I promise it won’t owe you a dime when you’re done with it.

Pour the cauliflower mixture into the pan and spread it out to the corners making sure there is enough cauliflower all over, it works perfectly don’t leave holes. Play with the crust a bit till it covers the whole bottom of pan. Place in oven for 15-20 minutes until golden brown and crispy.

After 20 minutes remove from oven and add sauce, cheese, any toppings you would like. I just added sauce, cheese, and some seasonings.

Place under broiler until cheese is hot and bubbly, this time will vary depending on your own oven, so keep an eye on it.

Slice and Enjoy!

Easy Skillet Lasagna

This was truly one of the most epic meals! The whole meal in under an hour, and yes that’s lasagna folks. While I love a real lasagna I didn’t have the time to put the whole thing together and deal with it. Once you have the ingredients the prep time is minimal and you aren’t using store bought sauce , this is with sauce you make and I can’t say enough about the way it tasted! This can be done a few different ways and I invite you to play around with the ingredients and spices to your own liking. All I can say is Wow!  Delicious! Joel was very happy with our Sunday night dinner, I should have taken a picture of the big smile he had on his face when he saw this on his plate.  All in one pot is truly a great way to cook, no fuss, no muss and no having to deal with cooking lasagna noodles!!!!!! Yeah!

This can easily be made with ricotta cheese and spinach or any veggies you like. I would even try it with cut up eggplant!

*You’ll need a large oven proof skillet with lid

Ingredients:

1 to 1/2 Tablespoon Olive Oil–I used 1 1/2 you can start with 1 and add more to onions if you need it

1/2 lb. ground beef ( I used 80/20)

3 Italian sausage links, casings removed ( I used Hot Italian Sausage) use what you like , you can use turkey or chicken sausage as well

1 onion, diced

1 14.5 oz. can diced tomatoes

1 8oz.can tomato sauce

*Italian seasonings , if you have Italian seasonings in a jar that’s great if not use a little dried oregano and dried basil. Italian Seasonings is available in the spice department of all food stores.

*1/2 teaspoon crushed red pepper

App. 1/4 tsp. Kosher Salt and more to taste

2-3 garlic cloves, minced

app. 10 lasagna noodles, broken into 1/4’s, if it breaks up differently don’t worry it’s a very loose recipe! 8 ounces Farfalle Pasta also works if you don’t feel like using the lasagna noodles. Un-cooked Noodles!!!!!

8 oz. mozzarella balls ( fresh) I used the small ones this time. Use whatever cheese you like but these worked out beautifully.  You can always use shredded mozzarella, or just cut a large ball of mozzarella into small pieces ( as much or as little as you’d like) if using shredded mozzarella, you’ll need about 1 cup

2 cups water

Freshly grated Parmesan Cheese for serving

*you can also use 1 cup Ricotta Cheese for a very cheesy version, I would use this if I was making it with spinach and going veggie.

Directions:

Heat olive oil in a large skillet over medium-high heat. Add onions and cook till translucent, add garlic towards the end of onion process. Add ground beef to the onions, stirring occasionally till browned. I removed with slotted spoon and set aside in a bowl. I then cooked up the sausage making sure to crumble the sausage as it cooked.  I then removed sausage to bowl with meat , onions, and garlic and drained all excess fat from pan.

Pre-heat oven to Broil

Return meat to pan, add tomato sauce, diced tomatoes, spices, add 1/4 tsp. kosher salt to taste, if you need more add it. Add in the meat mixture and stir, bring to a simmer and add in broken lasagna pieces and 2 cups of water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13- 15 minutes for al dente. I stirred it gently a few times just to make certain that the noodles cooked through and didn’t stick together.

Remove from the heat . I placed my Mozzarella on top and placed in oven under broiler for about 5 mins. Check on it because you don’t want it to blacken. All ovens are different, in mine it needed about 6 minutes to just start browning without burning, but you don’t want to burn this up so set timer and keep an eye on it!

Remove from the oven and let it sit out for a few minutes. Plate it up and let everyone add their own parmesan cheese! Enjoy! you will.

This would serve 4. It’s tough to double because you would need a super large pan.

This makes for an amazing leftover!

 

 

 

 

Summer Crumble — Peach and Blueberries

photo 3 (6)photo 3 (7)photo 2 (6)photo 2 (8)A crumble or a crisp whatever you call it there is no reason not to make this simple delicious dessert. In the summer you have so very many seasonal fruits to choose from and all sorts of delicious combinations. I used peaches and blueberries today because the peaches are amazingly beautiful and I had an abundance of blueberries. Any stone fruit, berries, or pitted cherries will work. In the Fall I make this with apples and pears which is Joel’s favorite of all time. The fruit comes out soft and tender and the crumbly crunchy cap is ever so crisp. Delicious served warm with a scoop of vanilla ice cream.

I used an 8×11 pyrex but any baking dish around that size will work out just fine.

You’ll need a food processor to do the crisp topping this way. You must use cold butter straight out of fridge. I also added a little bit of chopped nuts but this is totally optional.

Plums and Nectarines work just as well. I also sprinkled a dash of cinnamon on the top (just a touch) right before baking , this is also totally optional.

Ingredients:

Fruit Mixture:

app. 8 cups sliced stone fruit, berries or pitted cherries I used peaches which I pitted, peeled and sliced and 1 container of blueberries (6 oz.)

1 cup sugar

2 Tbsp. Corn Starch

1 tsp. finely grated orange zest ( almost a whole orange)

2 Tbsp. of freshly squeezed orange juice from zested orange

pinch of kosher salt

In a large bowl toss fruit, sugar, cornstarch, salt, zest and juice together with a spoon. Set aside. I also sprayed baking dish with Bakers Aid cooking spray which is great stuff.

Preheat oven to 375 degrees.

Crumble Topping:

Ingredients:

3/4 + 1/4 cup of old-fashioned oats separated. 3/4 cup will be used at beginning and 1/4 cup at end.

1/3 cup all-purpose flour

1/4 cup light brown sugar ( firmly packed)

1/2 teaspoon kosher salt

1 stick chilled unsalted butter , straight out of fridge and this is important here. Butter should be diced into small pieces. Cut stick in half then cut into small uniform pieces.

Directions for crumble topping:

In the bowl of food processor with blade , pulse oats, flour, light brown sugar, salt together. Then through the top tube drop in diced cold butter and pulse until no dry spots remain, it takes a few minutes. Transfer to a bowl and add in 1/4 cup old-fashioned oats with your fingers.

Transfer fruit mixture to prepared baking dish, scatter crumble topping over the mixture. I added some chopped nuts and a little cinnamon at this point. Place baking dish on a baking sheet ( sprayed with cooking spray as well) and bake at 375 degrees for at least 50 minutes, check on it. You don’t want to pull it out too soon because you want the crumble to brown perfectly and the fruit will not thicken. You’ll know it’s ready by the color of the crumble topping.

Allow to cool for an hour.

You can heat up before eating at 250 degrees covered for about a 1/2 hour should be enough.

You can freeze this as well. Take out the night before you’ll want it and let it defrost in the refrigerator, the next day take it out and let it come to room temperature before re-heating. I freeze it often and it works out quite well.

 

 

 

 

Sesame Chicken and Vegetable Stir-Fry

It was Monday night, and was deciding on what to prepare for dinner when I realized that I love stir-fry and hadn’t made it in a while. Don’t worry if you don’t have a wok, just a large frying pan will do fine. I used my large frying pan. It’s not an exact science but you will need certain key ingredients. I decided to make it and foraged through my pantry, I was missing a few things but substituted a few other things and it worked out just fine. It was delicious .I would have liked bok choy and some other chinese vegetables but used what I had. I had a little red pepper, a few mushrooms and broccoli. Onions would be fine too. Almost any veggies you like, and obviously tofu can be substituted for chicken. This is what I did. If using tofu, use the extra firm type.

Ingredients:

5 Tbsp. soy sauce ( I always use reduced sodium)

2 tsp. toasted sesame oil

5 tsp. honey

1 1/4 lb. boneless, skinless chicken breasts, I had butcher cut it into strips or you can do it yourself

4 Tbsp. Canola Oil possible . you will need about 2 to cook chicken and then another 2 to cook vegetables, but you may need a bit more, I try to use as little as possible to start you can always add

2 green onions, white parts only thinly sliced and reserve the green tops

1 Tbsp. grated fresh ginger ( which I didn’t have , so I used powdered ginger, not as good but it will do)

3 cloves of garlic, minced

1 cup chicken broth ( again you may need a little more but I was able to make it work with 1 cup)

2-4 tsp. cornstarch ( I didn’t have this either so I used 3 tsp. flour and it worked)

1 Tbsp. rice vinegar

vegetables ( whatever you like) broccoli, cut into florets, bok choy, baby corn, onions, red peppers, mushrooms, snap peas, etc.

1 Tbsp. toasted sesame seeds ( just put sesame seeds in a small frying pan and brown up, watch them it happens quickly)

*1 tsp. chili paste (optional) but adds great flavor

Directions:

in a medium bowl whisk together 3 Tbsp. soy sauce, 1 tsp. sesame oil and 2 tsp. honey , add cut up chicken , toss then marinate for about 1/2 hour

In a seperate small bowl, whisk together broth, remaining soy sauce, 1 tsp. sesame oil,  remaining honey,   vinegar and *chili paste. After whisking together I put in a small saucepan and heated it up till it thickened , I started with 2 tsp. of corn starch and added as it needed to thicken,  cook and stir for about 4 minutes till it darkens in color and gets thick. I let it just sit on stovetop till I needed it.( just stir it occasionally)

Heat up 2 tsp. canola oil in large skillet/wok  and cook chicken in hot oil until browned through about 6 minutes depending on the size of your chicken pieces. Transfer to serving plate

In same skillet as chicken heat 2 more tsp. canola oil add white parts of onions, ginger, and garlic. Cook and stir for a few minutes at medium high without burning. Adjust heat. Then add remaining vegetables and stir fry till they begin to cook , when vegetables are cooked, add chicken and pour sauce over chicken . Cook for a few minutes, and I served over brown rice. Sprinkle with sesame seeds and green onion tops. Now I would use cauliflower rice as well with this, it would be veggie overload but quite delicious!

Avocado Salad with Corn and Tomatoes and Lots of Good Stuff – Vegan

DSCN0190 DSCN0195 DSCN0194 DSCN0199It’s June 1 so let’s break out the Summer Food. This is a most perfect summer salad and it is a vegetarian delight. totally vegan. I am not a vegan so I was grilling steaks for dinner and wanted to do a cold salad on the side. I had 2 beautiful ripe avocados on hand and all the ingredients for this yummy salad.  I had some fresh corn so I just brought the water to a boil threw it in and when it turned yellow took it out and threw it in a bowl of ice water to stop the cooking.   Of course I love  jalapenos , use your own discretion and this would be amazing without as well but it was kick ass with them.  You can make the salad ahead and let juices meld but don’t add the avocados till you’re ready to serve.  You can give them a little squeeze of fresh lime juice so they won’t turn brown so fast.  I like to serve salad at room temperature, you just don’t get the flavors when it’s too cold. It will keep in fridge for a few days, but you’ll have to take out the leftover avocado since it will turn brown. I cut this salad in 1/2 for the 2 of us. This easily will serve 6 as a side. By the way Joel took a bite but too much healthy stuff going on in here for his liking, although he’s gotten better he’s not quite up to this yet, it’s OK because there was more for me with leftovers.

I was inspired for this recipe from the Barefoot Contessa recipe for Guacamole Salad. The corn was my idea.

Ingredients:

2 cobs of fresh corn ( cook and then shuck corn off the cob) if no fresh corn available use frozen . I use frozen when I have to and 1 small bag is usually sufficient. The frozen corn will defrost very quickly so just take it out and when you mix in with other ingredients it will start to completely thaw by the time you’re ready to serve. You want to serve at room temperature anyway.

1 pint grape tomatoes , halved

1 yellow bell pepper, seeded and diced into small pieces ( app. 1/2 “)

1 15 oz. can black beans, rinsed and drained

1/2 cup small diced red onion

2 tablespoons minced fresh jalapeno peppers, seeded ( app. 2 small jalapenos) use at your own discretion . Remove Seeds

1/2 teaspoon freshly grated lime zest

1/4 cup freshly squeezed lime juice ( 2 limes)

1/4 cup good olive oil

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon minced fresh garlic

1/4 teaspoon ground cayenne pepper

2 ripe Hass avocados, seeded, peeled and cut into small cubes.

Directions:

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt and pepper, garlic and cayenne pepper. Pour over the vegetables. Toss well. In the meanwhile cook the corn , bring water to a boil throw in for a few minutes to turn bright yellow, then I throw in a bowl of ice water for a few minutes to stop the cooking and lock in flavor and color. Then remove corn from cob. I let the salad sit for about an hour before adding avocados into the salad. Just fold avocados into the salad when you’re ready to serve. Check for seasoning and serve at room temperature.

photo (3) Memorial Day has already passed and Summer Season is officially upon us even though it’s not technically Summer yet.  This brings me to this delicious dessert filled with the most delicious in season blackberries.  I have posted numerous blueberry cobblers but this one has to be my personal favorite made with Blackberries.  It’s a real deal Old Fashioned Cobbler.  You can really make this with any fruit but I love Blackberries while they’re sweet, plump and delicious! Blueberries and Red Raspberries will also work  well. Or you can mix up the fruits!

 

Ingredients:

1 pound or about 3 1/2 – 4 cups blackberries , cleaned , rinsed and dried

1 tablespoon arrowroot or cornstarch

2 tablespoons fresh lemon juice

1 cup all-purpose flour

3/4 cup sugar, I use regular granulated sugar for cobbler inside and on top I use turbinado sugar. 1/2 cup granulated sugar for inside cobbler and 1/4 cup turbinado

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup whole milk or you can use low-fat buttermilk

3 tablespoons unsalted butter, melted

3/4 cup boiling water

Directions:

Preheat the oven to 350 degrees.

In a bowl I place the clean blackberries that I’ve washed and dried. I sprinkle them with the arrowroot and lemon juice and mix gently  Set aside.

In a medium size bowl, I sift the flour, 1/2 cup sugar, baking powder and salt. Add the milk and butter. Stir until just combined, don’t over stir, it shouldn’t be smooth. Then by the moundful drop dough onto blackberries. I spread around a little bit but don’t completely cover the top of berries. ( see photo) the dough will spread a little once it’s baked.

Pour boiling water over the dough and fruit before you bake it. Sprinkle top with 1/4 turbinado sugar or regular sugar. Raw sugar or turbinado sugar makes it a little crunchier topping. I prefer it to regular sugar for a topping.

*if you are preparing in advance which is what I did today. Prepare up till the boiling water and sugar part. Refrigerate for up to 2 days , bring to room temperature then pour boiling water and top with sugar and bake. I baked for app. 45 minutes till dough gets browned and crackly looking and blackberries are bubbling. ( see photos)

Remove from oven and let sit but serve while it’s still warm with ice-cream for extra added deliciousness!

Getting Ready to Cook

This is one of my all time favorite recipes and the easiest, quickest to prepare. Buy shrimp from a reputable fish store or Whole Foods type of market and have them clean and de-vein them. My husband Joel is an ex-seafood guy and he always cleans and de-veins the shrimp. It is a collaborative effort in our house.  Once the shrimp and prep is done this recipe takes all of 15 minutes to cook.

Ingredients are simple and you probably have most of the ingredients in your pantry. Directions are super simple and so easy to follow, you will look like a “super chef” and impress the pants off of everybody!

Ingredients:

2 Tablespoons unsalted butter

2 Tablespoons olive oil

4 minced garlic cloves

1/2 cup dry white wine–use whatever you have open as long as it’s not too fruity, if you don’t want to use wine use chicken broth or vegetable broth

1 teaspoon kosher salt

Freshly ground black pepper– about 10-12 turns on the pepper mill

1 1/2 lbs. large or extra large shrimp .shelled– we are big fans of Mexican White Shrimp and I used under 10’s which means there are approximately 10 to a pound.

1/2 cup ( app.) chopped fresh Italian parsley

Freshly squeezed juice of half a lemon

*pinch of crushed red pepper flakes

Cooked Pasta or Rice — I used brown rice this time around

Directions:

In a large skillet, melt butter along with olive oil. Add garlic and saute until fragrant , app. 2 mins.

Add wine or broth, salt, red pepper flakes, and black pepper and bring to a simmer.

Let wine reduce by half, app. 3 minutes.

Add shrimp and saute until the shrimp just turn pink, 2-4 mins. on each side depending on their size. Squeeze the lemon over the shrimp, I stirred the shrimp in the sauce one final time and served over brown rice and using a large spoon poured any excess sauce over the shrimp (as much or as little as you’d like) I then sprinkled with a little fresh chopped parsley and Voila!!!!

This shrimp would be delicious served over rice , pasta or all by itself.

Cauliflower Fried Rice

My new obsession is cauliflower rice and I have to admit that since you can now find the cauliflower already chopped up and ready to use there is no excuse not to make this. I used to have to chop the cauliflower in my processor which was time consuming and I would have to dry it on towels as it was always slightly watery. Now it’s available in pre-prepared cauliflower rice packages. Both Green Giant chopped cauliflower in a bag as well as at Trader Joe’s. The pre-chopped bags come in 16 ounce size bags which is what I used for this recipe.  You can buy extra bags and keep them frozen!  It’s wildly popular so grab it while you can and get a few extra bags while you’re at it. Of course you can always chop your own if you don’t have access to any of these products.

This was so delicious and I add chicken or shrimp or even tofu . Other veggies are great here too like broccoli , kale, whole small pieces of cauliflower etc.  There are so very many variations on this theme, feel free to go wild with it. It’s a low carb alternative to regular rice and a delicious healthy way to do so. Photos of rice bowl with shrimp and kale are here as well.

This is how I do it.

Ingredients:

1 bag chopped cauliflower rice ( I found Green Giant brand and used it) I used a 16 oz. bag  you can use up to 24 oz. Or 1 medium head of cauliflower.

2 Tablespoons reduced sodium soy sauce- you may want to add more at the end , you’ll wait and taste

1 Tablespoon Sesame Oil

2 Tablespoons vegetable oil, plus a little bit for eggs as well. You can cut the oil down on eggs if you’d like. I felt like I needed the 2 tbsp. of oil for onions , etc. You can start 1 tbsp. and add as you need.

1/8 teaspoon ground ginger– you can use fresh if you prefer

2 large eggs-beaten

1 cup frozen peas and carrots –I had it in the house and how easy was this? you can use broccoli or corn or all.

1 onion diced

2 cloves garlic -minced

1/8 teaspoon freshly ground black pepper , about 6 grinds on the pepper mill will do

*pinch of crushed red pepper

*kale — after onions were sautéed I threw torn up kale pieces to pan right before cauliflower rice and other ingredients. Kale broke down rather quickly and was an extra added delicious flavor to this bowl.

*chicken, shrimp whatever protein you like . I used a thin chicken cutlet as it was just for me, if I were making for more people I would probably add about 1/2 lb. of cutlets diced up.

2 green onions (scallions) thinly sliced

*salt and pepper to taste — you may want to add a little but don’t add till the end and you’ve tasted it. I added a little sprinkling of salt and pepper.

Directions:

If you must make the cauliflower rice, take out the processor, pulse cauliflower in the large bowl of a food processor until it resembles rice, about 3 minutes, set aside. If you bought the bag–you’re ready.

In a small bowl, whisk together soy sauce, sesame oil, ginger and a little black pepper

Heat about 1/2 Tbsp. of vegetable oil in a medium skillet over low heat , add beaten eggs and cook until cooked through. I didn’t scramble , I made a large pancake. About 2-3 minutes per side, flipping once. Let cool completely before dicing into small pieces, set aside to cool.

Heat 1- 2 Tablespoons Vegetable Oil in a large skillet or wok over medium high heat. Add garlic and onion to the skillet and cook, stirring often, until onions become translucent, at least 5 minutes. I like my onions translucent for this recipe. Lower the heat and stir in peas and carrots (and any other veggies you’d like) and cook until vegetables are tender, about 5 minutes. I cut up a thin chicken cutlet into small pieces and added it with the vegetables. I ended up using the 2 Tablespoons of oil, do what works best for you.

Stir in the cauliflower, diced up eggs, green onions and soy sauce mixture. Cook, stirring constantly, until heated through and the cauliflower is tender, about 5 minutes . Taste for soy sauce and add if necessary. I didn’t add any salt because the soy sauce was salty enough.
