Eggplant and Tomato with or without Pasta

photo 5 (11) photo 5 (12) photo 4 (12) photo 3 (16) photo 5 (13)Another wonderful inspiration from Jessica Seinfeld’s cookbook “The Can’t Cookbook”,  even though I can cook there are so many great and easy recipes in this book. This was certainly one of them. I served over pasta (see photos) and it is so easy! Everyone gets nervous about cooking eggplant and I really am not sure why that is, well this will cure you of that fear if you have it. You can just make this as a side dish without the pasta but any reason to eat pasta in this house is a good one.

Eggplants should be smooth-skinned, evenly firm and without soft spots. I bought organic ,  when  I’m eating the peel or the skin I  try to buy organic, same goes for tomatoes.

Ingredients:

1 large eggplant or 2 small ones

4 cloves garlic

1 pint cherry or grape type tomatoes

6 sprigs fresh thyme

1/3 cup olive oil

3/4 teaspoon kosher salt

*1/4 teaspoon crushed red pepper ( optional )

1/4 teaspoon freshly ground black pepper

Directions:

Preheat the oven to 400 degrees. Wash the eggplant and the tomatoes. Cut off and discard the stem. Cut the eggplant into 1 inch thick round pieces. Stack 2 rounds, then slice  rounds 2 x and 2x across to make 1″ cubes. ( see photos). Smash the 4 garlic cloves with the back of large knife. Prepare baking dish by spraying lightly with Pam spray.

Place the eggplant , garlic, tomatoes, and thyme in baking dish.  Sprinkle salt , pepper and crushed red pepper if you’re using it. With clean hands toss together until the eggplant is coated with olive oil and don’t worry if it’s over-crowded. It will break down and there will be plenty of room.

Roast until the eggplant is really soft and tender. I roasted for an hour and gave it a stir and was good to go.

I served over pasta but you certainly don’t have to have pasta,  you can eat this just as is. If you’re serving over pasta you may want to drizzle a little more olive oil into the eggplant and tomato mixture–just for a little more saucier consistency.

Summer Salad–Farm Fresh Farro

I am always on the search for some new vegetarian recipes to try out.  The inspiration for this salad came from some beautiful radishes from the farmers market and some fresh sugar snap peas. During the summer months with all the beautiful fresh vegetables available it’s super easy to throw together these salads. The fresh parmesan pieces give it the extra kick and salt it needs, use as much or as little as you like. I prefer pearled farro for this recipe. Feel free to experiment and use whatever ingredients suit your taste.

Ingredients:

1 cup pearled farro

1 cup sugar snap peas

4 large radishes

*2 scallions -optional

*fresh mint app. 1/4 cup loosely packed –also optional

1/4 cup parmesan pieces- leave in chunks or shave whichever you prefer

3 tablespoons fresh lemon juice

2 tablespoons olive oil

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

Directions:

Follow directions on the box of farro or fill a saucepan to about an inch from the top. Bring to a boil, and add the farro and cook until tender but still chewy, about 10 minutes. Drain in a strainer and run under cold water to cool down. Drain out excess water and let sit while you prep the rest of the salad.

Wash the snap peas and radishes. Remove the stems from the snap peas, cut them crosswise into 1/2″ pieces and add to a medium bowl. Trim the stems off the radishes and remove the root ends. Slice the radishes in half , then slice crosswise into thin half moons. Add the radishes to the bowl. Trim the ends of the scallions, wash and then slice the white and light green parts of the scallions into small rounds. Add to the bowl. Tear the mint leaves and add to the bowl. Take the parmesan and crumble into the bowl, you can use your hands or a knife to crumble parmesan. Add the cooled farro to the bowl.

Add the lemon juice, olive oil, salt and pepper to the bowl. Taste for seasonings. Mix and allow to sit for a bit before serving. I made ahead and stored in fridge. I removed before serving for a while to bring to room temperature.

 

Sheet-Pan Feta with chickpeas and tomatoes–

I saw this recipe in the NYT Cooking Section by Ali Slagle and decided to make it as a side dish/main dish for my daughter who is a vegetarian. I ate it as a side dish and can attest to its tastiness . The feta is soft and creamy and plays nicely with the sweet juicy tomatoes and chickpeas are slightly sticky from the honey and if you’d like add some spice with crushed red pepper flakes. Eat with pita, salad hummus or even yogurt. This is what I did last night . It’s a simple meal which is delicious.

Ingredients:

2 cans (15 oz.) chickpeas ( garbanzo beans) drained, rinsed and as dry as you can get them

2 pints cherry or sungold tomatoes I used Sugarbombs which Whole Foods sells

1 shallot thinly sliced

1/4 cup Extra virgin olive oil

2 Tablespoons honey if you’re adventurous you can use Hot Honey for more kick but leave off the red pepper

1/4 -1/2 teaspoon crushed red pepper flakes

Kosher Salt

I used 1 block of feta sliced into 1″ blocks ( see photo)

Directions:

Pre heat the oven to 400 degrees. On a sheet pan, stir together the chickpeas, tomatoes, shallot, olive oil honey and crushed red pepper. Season with salt, then spread in an even layer. arrange the feta blocks among the chickpeas.

Roast until the feta and tomatoes are soft and the chickpeas turn a golden brown, 30-35 minutes. This is meant to be eaten right away and hot. The feta will harden as it cools so reheat the leftovers. You can add rice or a thin pasta would be perfect as well or orzo.

*you can use sliced red onion if no shallot

*fresh basil would be a nice addition

**if you’re not on board with the vegetarian version you can add some sausage along with chickpeas or chicken

*you can half recipe easily enough

*can sub halloumi for feta

My Most fav Lemon vinaigrette

I am a huge fan of lemons and citrus flavor and this salad dressing hits all the flavors that I love I even throw a 1/2 teaspoon of Honey in there for that sweet hit. If you want to omit the honey you can and you can substitute it with maple syrup if you’d like. This blows away store bought dressing and gotta say a little effort is involved but super easy, you can double on it if you’d like. You’re going to make this dressing again and again and again it’s easy versatile and delicious. You can drizzle it on a salad, a grains bowl, salmon, and veggies it will pep up anything and keeps well in the fridge. Enjoy! and you’re welcome.

Ingredients:

1/4 cup fresh lemon juice

1 garlic clove , minced

1 teaspoon Dijon mustard – I usually use a heaping teaspoon

1/4 teaspoon kosher salt or sea salt

a dash of freshly ground black pepper

1/2 teaspoon honey or maple syrup

1/4 cup extra virgin olive oil

Directions:

I put all ingredients except for olive oil in my mini processor, then drizzle in the olive oil give it a few whirls and it should be fine. If no little processor whisk in a small bowl and add olive oil slowly whisking as you go. The mini processor is a must for me does the garlic and whisks it all together.

I then put in a jar with a tight fitting lid ( see photo) and shake to combine before serving. It should stay good for a week in the fridge. Olive oil will solidify a bit but just take it out of fridge before serving to soften .

Cowboy Caviar

This is a great dip as an appetizer with chips but I served it as a side dish alongside my chicken fajitas along with some chips. Ingredients can be swapped out to use what you like or don’t like just try and keep the quantities the same. I couldn’t find black eyed peas so used pinto beans and it was fine. I love a bit of spicy so used a jalapeño and I love cilantro but so many people don’t like it so I left it out this time. It ‘s very delicious and other than a bit of chopping up veggies which can be done ahead it’s super easy! You can add some fresh avocado chunks at the end right before serving and you can make a day ahead and maybe drain some of the liquid before serving, it’s almost better the next day since flavors meld overnight. A squeeze of fresh lime would also be nice. I wouldn’t omit the sugar as the amount is so small in relation to the whole recipe that health concerns are negligible. The sugar adds overall flavor and adds a balance between the acidity and the saltiness flavor. Have fun with this recipe no matter how you do it — no right and no wrong here do it your way. Enjoy!

Ingredients:

for the dressing:

1/3 cup Olive Oil

1/4 cup red wine vinegar

3-4 garlic cloves -minced

1 teaspoon granulated sugar

Kosher Salt and black pepper

For the Salad:

3 plum tomatoes, cored , seeded if desired and diced — you can also use halved cherry tomatoes and use about 1/2 pint

1/2 red onion, finely diced — app. 3/4 up

1 15 oz. can black beans, rinsed and drained

1 15 oz. can black eyed peas , rinsed and drained– I used Pinto because I couldn’t find black eyed peas out here in CO whatever beans you like you can even use 2 cans of black beans

1 1/2 cups fresh corn kernels ( about 3-4 cobs) or thawed drained frozen sweet corn about 8 oz. or even roasted corn ( Trader Joes) if you like it and can get it– I used 4 cobs of fresh corn which is so abundant right now

1 red, green, or orange or yellow bell pepper, seeded and finely diced

1 jalapeno, seeded and finely diced *

*1/2 cup chopped cilantro leaves plus more for garnish — totally optional

1 scallion, white and green parts, added at the end before serving for garnish

*tortilla chips, for serving also optional

Directions:

Make the dressing: In a medium bowl, whisk the olive oil, vinegar, garlic, sugar, 1/2 teaspoon kosher salt and 1/2 teaspoon black pepper to combine– set aside

Add the tomatoes, red onion, drained and rinsed beans, corn, bell pepper, jalapeño, and if you’re using cilantro, Toss to combine with dressing and season for salt and pepper. Cover with plastic wrap and refrigerate for at least 2 hours before serving or even overnight.

To serve, take out of fridge, toss well and taste for seasonings. Sprinkle with scallions and if you’re serving as a dip or even as a side dish it’s great with tortilla chips. ( everything is better with chips)

Cucumber Avocado Salad

Light and easy — Cucumbers and Avocado Salad with a light lime dressing. This side salad will disappear very quickly and you’ll be wanting more.

I made it without the green onion so feel free to add it or not it was just as yummy without. Just happen to have avocado and cucumber in the house but next time I will make sure to add a little green onion!

Ingredients:

2 English Cucumbers –Slice Cuke in 1/2 — scoop out seeds and slice or use any cucumbers you like I just like to remove seeds and cut smaller cukes into smaller pieces — it really doesn’t matter how you slice them up– if I use kirby type cucumbers (as pictured) I cut into smaller pieces — totally up to you– it’s all good — small Persians work well here and you’ll probably need 3 or 4 — I don’t scoop out seeds from the Persian cucumbers

1 large avocado pitted, peeled and cut into chunks or slices whichever you prefer

*1/3 cup green onion , chopped

2 Tbsp. Lime Juice from 1 medium lime

2 Tbsp. Olive Oil

1 tsp. Kosher Salt or Sea Salt

1/8 tsp. black pepper

Directions:

In a medium sized salad type bowl, combine sliced cucumbers , avocado and if you’re adding green onions.

Drizzle with lime juice, olive oil and season with salt and pepper to taste. I sliced cucumbers and dressing earlier than right before I served it added the avocado so it wouldn’t brown. The lime juice should prevent it from turning brown though.

That’s it — so simple and delicious! A perfect side salad.

Coconut Rice — Chrissy Teigen Recipe

This is my go to rice recipe — sweet and salty delicious recipe. Perfect served alongside a savory BBQ or any meal for that matter. Always a hit at our house. I like Chrissy Teigen’s recipe of all the coconut rice recipes. And don’t skimp on the toasted coconut. This is not diet food — but it’s delicious and worth the few extra calories. Absolutely yummy!

Don’t forget to rinse the rice and let it dry — it takes another 1/2 hour or so and is absolutely worth it. I just rinse it through a mesh colander– run cold water over rice and move rice around a little with your hands and let it dry . Rinsing or washing rice removes that excess starch, resulting in grains that are more separate when cooked.

Ingredients:

1/2 cup unsweetened shredded coconut

1 1/2 cups Jasmine Rice ( rinsed and drained)

1 14 oz. can coconut milk– full fat not light

1 3/4 cups water

1/4 cup sugar

1 1/2 teaspoons kosher salt

Directions:

In a dry pan, toast coconut over medium-low heat, stirring until lightly brown and fragrant. About 4-5 minutes. Watch carefully . Transfer to a plate to cool.

In a medium saucepan, combine all other ingredients including rice, coconut milk, water, sugar and salt.

Bring to a boil over high heat, stirring occasionally. Once it boils reduce heat to a barely simmer until rice is fully cooked and liquid absorbed keep covered. About 20 minutes. I time it for 20 and check on it at 15 minutes. Remove from heat when all liquid is absorbed and fluff with a fork. Then re-cover the saucepan and let it stand for at least 5 minutes before serving. Last night I made an hour ahead and let it sit and it was perfect.

Transfer to a sering bowl and top with toasted coconut.

Un-Stuffed Cabbage

I love stuffed cabbage but do not feel like dealing with the actual stuffing of the cabbage, it is way too labor intensive for me.  I have made several variations of this and found this one to my liking the best. You can play with the ingredients which is what I did . Original recipe is from Kosher by Design and it is perfect for Passover by just leaving out the rice and substituting matzoh meal in its place. Most perfect for Rosh Hashana and use rice.  Basically this is meatballs in a sweet and sour sauce with cabbage . I doubt very much that Joel would ever eat real “stuffed cabbage” but he liked this. The cabbage cooks down so much that you don’t even realize you’re eating cabbage. I also used 1/2 chicken ground meat and 1/2 beef ground meat , this is entirely up to you. I wouldn’t do all chicken because it might be a bit dry, you can definitely make this with turkey but use dark meat turkey or the balls will also be very dry. You can also make this ahead for the holidays which is always a very good thing and feel free to freeze it.  This is the original recipe adjust amounts for how much you’re making – this recipe is for 3 lbs. if you’re making for less people and only use 2 lbs. of meat you can cut ingredients accordingly.  You’ll want to use a large pot for this recipe. Ingredients:

Meat

3 lbs. ground meat– I used chicken and beef (dark meat turkey is best here) white meat turkey tends to be very dry. Mixed with beef it’s fine but if using alone you’ll need to use dark meat ground turkey. Use any meat you’d like or I like to combine — sometimes dark meat ground turkey with beef or all turkey — you need 3 lbs. White meat chicken tends to be very dry — so I will mix with beef 80/20 — do what works best for you

2 large eggs, lightly beaten. Use room temperature eggs they work best.*see my post about eggs–a little note on my blog.

3/4 cup uncooked long grain white rice, for Passover use matzoh meal and omit the rice – for Passover if you observe use 1/2 cup Matzoh Meal

1/4 cup water

1 onion finely chopped

Kosher Salt to taste–app. 1/2 to 1 tablespoon

Pepper to taste–app. 10 grinds on a pepper mill, or app. 1/4 of a tablespoon

*garlic powder if you like

Sauce:

2 packages of shredded cabbage, probably about 1 head of cabbage finely shredded, no need to do it when you can buy it pre-shredded (not red cabbage)

1 Tablespoon Vegetable Oil

Kosher Salt to taste ( app. 1/2 tablespoon)

1 1/2 tablespoons Kosher Salt

1 1/2 cups tomato juice

4 8 ounce cans tomato sauce ( or 32 ounces)

1/2 cup brown sugar ( use whichever brown sugar you have in house , it won’t make a difference. Light or Dark, I actually used dark.

1 cup sugar

3 lemons squeezed , I got about 1/2 cup , they were smallish lemons

1/2 cup raisins

Directions:

In a large mixing bowl combine the meat, eggs, water, rice and onions. Season with Salt and Pepper , and if you like garlic powder. Gently mix by hand, and I do mean gently, if you over do it the meat will be like concrete. Set aside.

Heat the oil in a large pot over medium heat. Add the shredded cabbage and about 1/2 tablespoon of kosher salt. Simmer for 10 minutes. Add the tomato juice, tomato sauce, brown sugar, sugar, lemon juice and the raisins. Stir till well combined and continue cooking sauce at simmer setting.

Gently form meatballs out of the meat mixture, I made a rather nice size meatball, not too large and not too small. Make whatever size you’d like. Just do not over-handle the meat because it will cause meat to toughen. Add to cabbage mixture, just drop into the hot sauce and do not stir, you can pile them on top of one another because they will cook down.

I left it to simmer for about 1 1/2 hours . I didn’t touch the meat balls for at least the first 1/2 hour, you’ll want them to cook through and form into nice balls before you stir, so just leave them to cook. After the first 1/2 hour or so you can gently stir and move the meatballs around. They don’t require a lot of stirring around .

This dish brought back memories of my childhood and was a most satisfying main dish.

Butternut Squash and Farro Salad

This salad came together in a wonderful way. I have made Butternut Squash Salads before but not this way. I am not gonna lie it has a bit of prep work, some of which can be done ahead of time. You can make it all ahead of time and just put together right before you’re going to eat it. I was serving for lunch so just woke up early and did it all except for the Farro which I made the night before. I know this salad seems complicated but it’s really not. I promise.

This salad is delicious as is for the vegetarians or add some grilled chicken, steak or fish for a complete meal. I added grilled chicken for this lunch.

As long as you don’t dress the salad you’ll have yummy leftovers. Arugula may get wilted so I don’t add till right before serving.

Delicious meatless meal as is.

This is how I did it — Enjoy!

Ingredients:

1 lb. butternut squash — cubed into small 1/2″ cubes ( see photo)

1 cup Farro cooked — I probably used about 1 1/2 cups for salad

4 Tablespoons sherry vinegar– divided

Cayenne Pepper

1/2 cup dried cherries or raisins / craisins , cranberries or whatever dried fruit you prefer– I used cherries because I like them bestie a salad but golden raisins or any dried fruit would be fine

1/2 cup walnuts, toasted and coarsely chopped

2 large shallots, sliced thinly

5 Tablespoons olive oil plus — 3 for dressing and 2 for butternut squash / shallots

Kosher Salt and freshly ground black pepper

3 oz. smoked gouda — small diced pieces — you can use whatever cheese you like and as much or as little as you like I happen to buy smoked gouda and it worked out perfectly

Arugula — I prefer baby arugula if you can find it — I used app. 3 cups but feel free to add as much or as little as you like here

Salad Dressing:

4 Tablespoons Sherry vinegar – divided — 2 for soaking dried fruit and then 2 more for dressing

  • see directions below

2 teaspoons grainy mustard or dijon whichever you prefer or have in the house

3 Tablespoons of Olive Oil

pinch of Cayenne Pepper

Kosher Salt and Pepper

combine all ingredients whisk together and emulsify and add a pinch of cayenne pepper and a little salt and pepper

Directions:

Pre-heat oven to 375 degrees. Toss squash and sliced shallots in a bowl with about 2 Tablespoons Olive Oil add salt and pepper and spread evenly onto a sprayed baking sheet. Bake until tender and browned , about 30 – 40 minutes . Set aside to cool when done.

Put the cherries or whatever dried fruit you’re using in a small shallow bowl with 2 Tablespoons of the Sherry Vinegar and let sit for at least 15 minutes– let them soak just toss them every once in a while. Remove the cherries after 15 minutes and drain them with a bowl underneath to reserve the liquid — you should have 2 Tablespoons and add 2 more Tablespoons of sherry vinegar and follow above directions for the dressing.

Cook the Farro — I made 11/2 cups and that’s all you really need is 1 to 1 1/2 cup cooked farro

Let the farro and the squash cool down completely. Mix in a big bowl with cheese, walnuts, dried fruit, and right before serving add the arugula so it doesn’t wilt . Add as much or as little of the arugula as you want.

I let everyone add their own dressing or you can dress salad and serve. I also added grilled chicken which of course is your call.

I would say this salad serves 4-6 .

My version of the Jennifer Aniston Salad

This salad has been all over the internet and I have to say it looked absolutely delicious and right up my alley. Upon closer inspection of it I realized that I would make it but with a few changes to better suit my taste. I definitely think it needs dressing but that’s just me, some of you may like this a lot without any dressing and apparently that’s the way Jennifer Aniston ate hers. Also she used Bulgur and I used Farro it’s just a little different flavor and taste , you can also use quinoa but I prefer Farro. I would also only use 2 cups cooked Farro , the original calls for 4 cups which I guess would be better for more people. You can substitute any of the ingredients or omit. I made for my daughter and myself and she didn’t want Parsley so I left it on the side so I can taste it with the parsley. I love the mint and thought it was an important flavor but you can play around with it and make it your way. I love chickpeas in my salad so this was a must but if you hate them just omit them. Obviously not an exact science so add more or less of any of the ingredients– this is just a guideline.

We ate a lot of the salad for dinner and still had leftovers.

Ingredients:

2 cups cooked Farro — obviously you can use Bulgur or quinoa or any grain you prefer — follow instructions on the package of Farro — it will probably be 1 cup uncooked farro to two cups water but check your packaging

1/2 cup finely diced red onion

1/2 cup finely chopped parsley

1/2 cup finely chopped mint

1/2 cup or more or less shelled pistachios –leave them whole they’re better this way

2 mini cucumbers — chopped into small pieces ( see photo) 1/2 cup approximately

chickpeas – I used 1 can organic chickpeas — rinsed and drained and I let them dry for a while

1/2 cup or more crumbled Feta — use as much or as little as you like

Dressing Ingredients:

1 whole lemon – juiced — I use a juicer to get every last drop

1/4 cup Olive Oil

Sprinkle of Kosher Salt — to taste

Directions:

Prepare farro according to package directions. I made about an hour or so prior to dinner so it would be cooled down.

Finely dice up all of your herbs and ingredients that require chopping

Put dressing in a measuring cup and with a small whisk whisk it good and add a sprinkle of kosher salt once it emsulifies it is ready – a few quick whisks should do it

Place all ingredients in a large bowl and right before eating dress it and mix well — very delicious and will be in my rotation often.
