Shrimp Marinara

I made Marinara Sauce last week and had it in the freezer but if you don’t want to make your own try and get a hold of some Raos Marinara Sauce in a jar you’ll be just fine. Raos is my go-to jarred sauce when I need sauce and don’t have my own. Making your own is super easy but I know not everyone wants to do it. I have some recipes on my site for making your own. Look for Sunday Night Red Sauce ( Marinara) .

I made this for the 2 of us and this is what I did if you have more people just simply increase ingredients , you won’t have to double Olive Oil but probably add another 2 Tablespoons if you’re doubling the recipe. No exact science here and you can make changes to suit your own preferences. I had left overs and would say that a pound of shrimp with pasta should serve 3-4 nicely. I used 1/2 a box of pasta but for more than 2 you would use a whole box and maybe increase amount of shrimp.

I used Bucatini type spaghetti because we like the ropy texture but you can use any spaghetti you like or no pasta or use zucchini zoodles.

Perfect Sunday Night Dinner or any night Dinner.

Ingredients:

4 Tablespoons Olive Oil

1 lb. Shrimp — I used app. 12 large shrimp for the two of us –peeled and de-veined

4 Whole garlic cloves, peeled and minced

Kosher Salt and Freshly Ground Black Pepper

Marinara Sauce — I made my own but probably 1/2 a jar or more depending on how much sauce you like–I love Raos Marinara or Arrabiata Sauce ( spicy version)

Spaghetti –any type you like for the two of us I used 1/2 a box but if you make the whole box it’s great leftovers the next day

*Basil is really nice served chopped up in this

*crushed red pepper is a must for us but also totally optional

Directions:

I pat the shrimp dry after cleaning and de-veining it and place in a bowl and sprinkle salt and pepper and mix around with the shrimp — or lay out the shrimp on some paper towels and sprinkle S and P , just make sure you get salt and pepper all around the shrimp– I like a bowl but it really doesn’t matter.

Heat 4 Tablespoons Olive Oil in a large skillet over medium heat. Add 4 minced garlic cloves and cook till golden not burnt if heat is too high turn it down the garlic cooks very quickly so sometimes I will put in hot oil and remove from heat till garlic turns golden and softens.

I then add the shrimp into the hot oil and cook the shrimp but not all the way through– maybe 2 minutes on each side you’ll want the to start curling and turn pink around the edges. When shrimp is cooked set aside shrimp in a dish– If you’re making double the amount of shrimp don’t crowd the shrimp in the pan you want them to sear not steam

Prepare the Pasta according to the box directions– I prefer it al dente.

After you remove shrimp pour the marinara sauce into the pan and bring to a low simmer stirring up any small bit from the shrimp. I added crushed red pepper because we like it spicy this is totally optional.

When pasta is ready I put shrimp into the simmering marinara sauce and probably cook for app. 4 minutes depending on the size of your shrimp. Obviously if you’re using small shrimp this will cook faster you’ll have to watch it.

I plated up the pasta added sauce and shrimp and served immediately

 

 

Easy Skillet Lasagna

This was truly one of the most epic meals! The whole meal in under an hour.  While I love a real lasagna I didn’t want to put the whole thing together and deal with it. Once you have the ingredients the prep time is minimal and you aren’t using store bought sauce.  You will be making the sauce and it will all cook together in the pan .  This can be done a few different ways and I invite you to play around with the ingredients and spices to your own liking. All I can say is Wow!  Delicious! Perfect Sunday night dinner .  All in one pot is truly a great way to cook, no fuss, no muss and no having to deal with cooking lasagna noodles!!!!!! Yeah!

This can easily be made with ricotta cheese and spinach or any veggies you like. I would even try it with cut up eggplant!

*You’ll need a large oven proof skillet with lid

*perfect for freezing leftovers

Ingredients:

1 to 1/2 Tablespoon Olive Oil–I used 1 1/2 you can start with 1 and add more to onions if you need it

1/2 lb. ground beef ( I used 80/20)

3 Italian sausage links, casings removed ( I used Hot Italian Sausage) use what you like , you can use turkey or chicken sausage as well

1 onion, diced

1 14.5 oz. can diced tomatoes

1 8oz.can tomato sauce

*Italian seasonings , if you have Italian seasonings in a jar that’s great if not use a little dried oregano and dried basil. Italian Seasonings is available in the spice department of all food stores.

*1/2 teaspoon crushed red pepper

App. 1/4 tsp. Kosher Salt and more to taste

2-3 garlic cloves, minced

app. 10 lasagna noodles, broken into 1/4’s, if it breaks up differently don’t worry it’s a very loose recipe! 8 ounces Farfalle Pasta also works if you don’t feel like using the lasagna noodles. Un-cooked Noodles!!!!!

8 oz. mozzarella balls ( fresh) I used the small ones this time. Use whatever cheese you like but these worked out beautifully.  You can always use shredded mozzarella, or just cut a large ball of mozzarella into small pieces ( as much or as little as you’d like) if using shredded mozzarella, you’ll need about 1 cup

2 cups water

Freshly grated Parmesan Cheese for serving

*you can also use 1 cup Ricotta Cheese for a very cheesy version, I would use this if I was making it with spinach and going veggie.

Directions:

Heat olive oil in a large skillet over medium-high heat. Add onions and cook till translucent, add garlic towards the end of onion process. Add ground beef to the onions, stirring occasionally till browned. I removed with slotted spoon and set aside in a bowl. I then cooked up the sausage making sure to crumble the sausage as it cooked.  I then removed sausage to bowl with meat , onions, and garlic and drained all excess fat from pan.

Pre-heat the oven to Broil.

Return meat to pan, add tomato sauce, diced tomatoes, spices, add 1/4 tsp. kosher salt to taste, if you need more add it. Add in the meat mixture and stir, bring to a simmer and add in broken lasagna pieces and 2 cups of water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13- 15 minutes for al dente. I stirred it gently a few times just to make certain that the noodles cooked through and didn’t stick together.

Remove from the heat . I placed my Mozzarella on top and placed in oven under broiler for about 5 mins. Check on it because you don’t want it to blacken. All ovens are different, in mine it needed about 6 minutes to just start browning without burning, but you don’t want to burn this up so set timer and keep an eye on it!

Remove from the oven and let it sit out for a few minutes. Plate it up and let everyone add their own parmesan cheese! Enjoy! you will.

This would serve 4. It’s tough to double because you would need a super large pan.

This makes for an amazing leftover!

Bolognese Sauce — Turkey or Beef

I must say Pasta is probably my most favorite food to eat. Bolognese sauce is one of my most favorites and this is my easy version.  There are different variations of this recipe that I use. One is with beef and pork sausage, another is dark meat turkey with turkey or chicken sausage. I do use dark meat turkey because I think it is much more flavorful, it is ideal but if you really don’t want to use the dark meat use 1/2 white and 1/2 dark or all white meat it’s up to you . The only negative to this sauce is that it really needs 3- 4 hours for the sauce to cook down and if you want to shorten the simmer use crushed tomatoes and probably 2 hours would be fine. The longer the sauce cooks the more flavorful it will be.  This sauce would probably serve 4 nicely with 1 lb. of pasta. You can easily double it and freeze the leftover sauce. So nice to have it in the freezer and just have to make the pasta and you have a wonderful homemade meal. I have now started serving the sauce over shredded zucchini as well.  It is so delicious and you may feel a little bit better eating it over zucchini or spaghetti squash than noodles.  Pasta or Vegetable it’s pretty awesome. Look on my blog for Zucchini  Bolognese.  And  it  freezes  beautifully.

Should serve 6-8 and it freezes beautifully so put sauce in the freezer for the next time.

Ingredients:

6 Tablespoons Olive Oil, plus more if necessary

1- 1 1/2 lbs. Italian style Turkey or Chicken Sausage, removed from casings. You can also mix in hot or sweet Italian pork sausage or hot Italian sausage — if you don’t mind using the pork. I think the pork has the best flavor — just saying

1 1/2 pounds ground Turkey ( I used dark meat ) or 1 lb. ground beef — I don’t love to cook with the lean version because it’s very dry so if using any ground meat use 85/15 at least.

Kosher Salt

Freshly Ground Black Pepper

2 medium yellow onions, peeled and finely diced ( app. 2 cups)

3 large cloves garlic, peeled and minced

2 28 oz. cans whole peeled tomatoes with their juice or you can used diced tomatoes which break down much quicker but you’ll definitely be adding liquid to that. Just keep an eye on it. If you’re in a real hurry and don’t have time for a 4 hour simmer use 2 cans of crushed tomatoes and cut cooking time in 1/2.

1/3 cup tomato paste

*app. 1/2 teaspoon dry Italia Seasonings or oregano is nice here but optional as well

*splash of red wine towards the end of cooking – after the 2 hours I sometimes add a big glug of red wine– app. 3 Tablespoons and let it simmer down and be absorbed into the sauce for the last 2 hours of cooking.

1 box. Rigatoni ( or any other macaroni you like ) or spaghetti or if you like use *shredded zucchini or *spaghetti squash

Grated Parmesan Cheese for serving

Directions:

Heat 3 tablespoons of the olive oil in a large heavy pan over medium high heat. ( I use my Le Creuset ) Add the sausage meat and break it up as it cooks, turning now and then, until browned all over, about 10 minutes. Remove the sausage with a slotted spoon to a bowl and set aside, add the ground turkey to the pan along with a good pinch of salt and a few fresh grind of pepper. Cook the meat stirring here and there, for 10 minutes as well, till meat is nicely browned. I remove and put in bowl with the sausage which was set aside. Add another 3 tablespoons of olive oil to the pan and add the onions and garlic however if you’re cooking with pork and beef there will be a lot of fat rendered in the pot, so if this is the case add 1 Tablespoon of Olive Oil unless it looks very dry then add a little more. Cook until onion breaks down and gets soft, another good 10 minutes. Add the tomatoes and their juice along with 1/2 cup of water. ( You may need more water as you go) Add the sausage and ground turkey, stir the sauce well. Bring the sauce to a boil, season to taste with salt and pepper and turn the heat to low. Cover almost completely with a lid (allowing a little steam to escape) and gently simmer for 4 hours. You may want to add splashes of water if sauce is drying out. After 2 hours I added the 1/3 cup of Tomato Paste, and replace lid and continue simmering for 2 more hours. I added water as it cooked, you’ll have to judge for yourself how much water you add. I added 1/4 cup at a time. The longer this sauce cooks for the better it is.  You will have to continually stir and check for water which I do at least once an hour if not more often. Also a splash of red wine works well here too if you have an open bottle of a medium dry red wine — chianti or malbec or pinot — you know what I mean.

*If using crushed tomatoes you’ll cook for about 2 hours — and add tomato paste when you add crushed tomatoes. It’s a different process but this works very well and cuts the cooking time down. I still like the slow simmer so the longer it cooks the better it tastes.

When the sauce is ready for serving, bring a large pot of water and prepare pasta according to package directions. You may want to reserve a little pasta water if you still need to thin it out.

serve with sauce over the rigatoni ( or any pasta you like) with a nice grating of Parmesan.

*so many stores now sell zucchini already shredded and it’s dry and ready to go.

Sausage, Orzo and Cabbage Soup

This is one of those delicious easy to make super comforting soups. Of course I may have lost some of you with the Cabbage and if you hate it you hate it but if you’re willing to give it a shot this is a super cozy kind of soup which we can all use a little bit of . Made this for Joel and I and had 2 quarts left over for 2 more meals. Perfect dinner served with a nice green salad . I used pork sausage because that’s what I had in the house feel free to use chicken or turkey sausage whatever works best for you. I used a spicy italian pork sausage . I also used a frilly-edged Napa Cabbage . This cabbage is nice and soft and breaks down quickly . If using regular green cabbage you’ll have to cook a bit longer — probably another 15 minutes or so. Of course you can be flexible with your pasta , I used orzo but you can use any small pasta such as ditalini, mini elbows or mini farfalla .

Enjoy this most satisfying soup which is just perfect on a cold wintery day or night.

Ingredients:

2 Tablespoons Olive Oil

1 pound Italian sausage, mild or spicy remove casings

2 cloves garlic minced

1 yellow onion, finely chopped

Kosher Salt

Freshly Ground Black Pepper, start with a pinch , plus add more to taste

1/4 cup Tomato Paste

1 large Napa or Savoy Cabbage, trimmed , quartered and thinly sliced

4 cups Chicken Stock

4 cups Water

1 cup Orzo

1 -2 Parmesan Rinds

*grated Parmesan for serving

Directions:

Heat olive oil in a large heavy bottomed Dutch oven type of pot.( Le Creuset works well here) over medium heat.

Add sausage in a single layer and break up into smaller pieces, stirring occasionally until sausage is cooked through and no longer pink. Remove sausage with a slotted spoon, leaving the rendered fat in the pot.

Add the chopped onion and several big pinches of kosher salt and black pepper. Saute the onions for about 5 minutes then add the garlic and continue cooking for a few mins. Lower the heat and add the tomato paste and continue to cook stirring constantly and scraping the bottom of the pot. Onions will start to caramalize in about 3 more minutes.

Add the cabbage, chicken stock, water, orzo , Parmesan Rinds, and add another big pinch of kosher salt. Bring to a boil and then simmer for about 15 minutes. Continue stirring so pasta doesn’t stick to bottom of pan. Add sausage and continue to simmer for about 15 more minutes or until pasta and cabbage are tender.

Remove an discard rinds. I couldn’t find one of my rinds and it is no big deal. If you use larger ones they’re easier to find. You may find when you spoon out the soup!

Taste for Salt and Pepper

I then turned off heat and let soup sit on the stove till we were ready to eat dinner. I brought to a low simmer and served in bowls with grated Parmesan.

No Breading Chicken Parmesan

So delicious and so perfect. I used thin chicken breasts to start , if you’re using thicker ones you’ll have to monitor the timing of them a bit more and you can just use a meat thermometer to do so. This really couldn’t be easier and it was super tasty and is a cheese lovers delight. It’s lightened up from traditional breaded and fried chicken parm. *if you’re chicken breasts are too thick you can pound them with a meat mallet to the desired thickness — this is a very useful tool. Just place chicken cutlet between 2 pieces of parchment paper or plastic wrap and pound to desired thickness.

Prep and ingredients are super easy .

This recipe is for 4.

Ingredients:

1 1/2 – 2 pounds of thin chicken breasts — you can use thicker ones –read directions above for pounding chicken breasts

1 egg

3/4 cup grated Parmesan Cheese

1/2 tbsp. garlic powder

1/2 tbsp. onion powder

1 Tablespoon Italian Seasonings — It comes in one jar and is available in most spice sections in supermarkets —

pinch kosher salt

1/4 tbsp. freshly ground black pepper

and because we like a little extra kick I add a sprinkle of crushed red pepper flakes

3/4 -1 cup Jarred Marinara or if you have home made that’s good too . I prefer Raos Arabiata or Marinara for jarred sauce.

Shredded Mozzarella — probably 1/2 cup to 1 cup depending on how much cheese you like — I like a good sprinkle of cheese — see pics.

A little olive oil for drizzle in pan before cooking

Directions:

Pre heat oven to 400 degrees

I used a large baking dish and sprayed with cooking spray and drizzled a bit of olive oil to bottom of pan — just a little

Beat egg in a wide enough bowl for dipping chicken

In a second wide bowl combine the parm cheese and spices and mix

Dip each piece of chicken in the egg and then the cheese, coating both sides. Place in prepared baking dish.

Bake for 20 minutes — since cutlets are thin this should be fine because you’ll be cooking more with sauce and cheese. If thicker cutlets you may need a bit more time.

Top each piece with sauce and shredded mozzarella. ( you can spread a little sauce in between chicken as well . I served over spaghetti and needed a little more sauce so this was enough. If you want you can heat up extra sauce in a small saucepan for spaghetti. Bake for another 10-20 minutes till chicken is 160 degrees when checked with meat thermometer and cheese is melted and bubbly. I like my cheese just slightly browned so you can turn to broil for a minute or so depending on your broiler but be careful you don’t want to burn the whole thing.

I served over pasta and had enough sauce for us.

Saucy Stuffed Shells – Baked and Meatless

  I just love a baked pasta — nothing like it for good old fashioned comfort food. This recipe is delicious and perfect comfort food for those cold winter nights. I wanted a crowd pleaser that was vegetarian and something that can easily be made ahead and frozen and that would appeal to both kids and adults equally.

     I served with a salad with my Homemade Maple Syrup Salad Dressing ( see on blog) and it was really pretty awesome. Took a few hours to prepare, mostly because I made my own sauce ( Sunday night sauce) but feel free to use a jar of prepared sauce if you’d like. This is a perfect meal to make ahead of time, and just pop into oven.

*This dish will stay fresh in the freezer for up to 3 months. Assemble the shells with the cheese and cover tightly and freeze. When you’re ready to eat, you can bake from frozen but be sure to add another 30 minutes to the cooking time. You can also freeze individual sized portions of leftover shells that have already been cooked. Reheat previously baked shells in the microwave in 90 second intervals until heated through. 

Perfect for Christmas and New Years.

Of course if you love it with meat you can make a meat sauce and follow same directions.

Ingredients:

1 box Jumbo Shells ( you won’t use all but a lot of them break, etc.)

1 lb. Ricotta ( I used Part Skim)

1 Egg

1 lb. Mozzarella Shredded ( I used Part Skim) if you can obtain fresh mozzarella and shred it that would make it even better! whatever works for you

1 cup grated Parmesan ( any kind you like)

1/4 cup chopped flat leaf parsley

Salt and Freshly Ground Black Pepper

*marinara sauce or any red sauce I made my own and use my own recipe. If buying sauce and there are some delicious good sauces out there, you’ll need at least 1 large jar of Sauce and my go-to if not using my own is Raos Marinara.   It’s nice to have a little extra sauce in case you need it when you re-heat the stuffed shells. 

Directions:

Preheat oven to 375 degrees.

Prepare Pasta , cook for between 12 and 15 minutes, you’ll want them soft but not undercooked at the center. Drain pasta and cool for easy handling.

Combine ricotta, 1/2 of the mozzarella, 1/2 of the Parmesan, parsley and egg in a bowl. Taste for Salt and Pepper.

When shells have cooled down, fill them with rounded spoonfuls of cheese mixture and arrange them seam side down in casserole dish. I used a 9 x 13 Pyrex and spray with cooking spray. Top Shells with remaining sauce and remaining mozzarella and grated cheese. Place shells in very hot oven . You can turn on broiler for last few minutes , it should be slightly browned and bubbly. Let cool for a few minutes before serving.

Delicious!

Pasta and Vodka

IMG_6409 IMG_6410 IMG_6412Pasta is probably my favorite go to meal, and I mean Vodka? really? Add a little cream and a can of tomatoes and you’ve got a spectacular meal. You’ll also need a little fresh basil and parmesan to finish it off. It’s an easy meal and if you have the cream and cheese in the house you’re good to go. I always stock the tomatoes and I happened to have the cream in the house and there is always a bottle of Vodka in the freezer right? Fresh Basil is a wonderful layer but if you don’t have it you’ll still be fine. This pasta cooked up in no time and it was heavenly. Perfect Sunday night dinner or Meatless Monday night dinner.

Ingredients:

1 lb. pasta ( rigatoni type of noodle is perfect)

3 cloves garlic, minced

*1/4 teaspoon crushed red pepper– I love the heat but use at your own discretion

1/2 cup grated Parmesan, plus more for serving

1 tablespoon olive oil

app. 3/4 to 1 teaspoon of kosher salt for sauce (taste for salt) you’ll also need about 2 teaspoons to cook the pasta in

1/3 cup Vodka

1 28 ounce can whole tomatoes, I prefer San Marzano type so look for that

1/2 cup heavy cream

a few fresh basil leaves, cut up into smaller pieces

Directions:

Prepare pasta according to directions on box,  I always throw in about 2 teaspoons of salt to it. When pasta is ready , just drain. I made the sauce while the pasta was cooking.

Place a large skillet type pan on the stove (see pics) Add the olive oil and heat until it shimmers ( app. 1 minute) add the garlic and red pepper (if you’re using it). Cook garlic and red pepper and cook, stirring until soft and fragrant but not browned, this should be less than a minute. Add the vodka and cook down the vodka until it is nearly evaporated. Add the tomatoes and remaining 3/4 teaspoon of kosher salt (start here and add to your own taste) bring to a boil (breaking up the tomatoes with a wooden spoon as they cook down) A little trick I use is to use a potato masher and push down on the tomatoes while they’re cooking, just be careful and do it slowly because you wouldn’t want to get burned by some hot tomato sauce.  Lower heat to medium-low and simmer for 30 minutes. Add the cream , basil and grated Parmesan and bring to a boil , then reduce and let flavors marinate for about another 1/2 hour on a very low heat. I continue breaking up the tomato bits. Add the cooked pasta to pot and stir to coat the pasta!!!!  Serve it up!!!!! A-mazing meat-less meal.

*if you like sauce “less tomatoey” without big chunks of tomato you can use an immersion blender once it’s cooled down < I will usually wait a bit till it’s just warm then add the cream then use blender stick or actual blender. If you really like “no chunks” use crushed tomatoes , I like the chunks but my grandkids don’t so I will use immersion blender or just crushed tomatoes .

Tomato Time Pasta– perfect Summer Pasta made with fresh tomatoes–Meatless

photo 2 (3)photo 4 (2)photo 5 (3)Nothing but beautiful tomatoes out there begging to be eaten in a million different ways. Perfect for a “Meatless Monday” dish or any night of the week . There are tons of local tomatoes out there now. At any local farmers market you can pick up pints of these beautiful babies. This is a lovely light pasta.

I had bought 2 pints of those beautiful little cherry tomatoes and right now there are those gorgeous yellow sunburst tomatoes also available.  I wasn’t sure what I would do with them. They varied in size so I knew if I made a sauce some were getting cut and some would stay whole. Nothing ever sounds better than a plate of pasta to me,  nothing.   These beautiful tomatoes are only out for such a limited time you have to get them while the getting is good.  Some of the tomatoes were super small and I left them whole while I halved the larger ones. There are so many variations of this sauce and feel free to improvise. We love it this way. So simple and so delicious.

Ingredients:

1 lb. spaghetti , any kind of long spaghetti is good for this — sometimes I use bucatini type and sometimes I use thin type long spaghetti– use whatever you’d like

1/4 cup extra-virgin olive oil plus more as needed

4 cloves garlic, peeled and minced.

1/2 teaspoon crushed red pepper* we like it spicy so if you don’t want it that spicy cut to 1/4, I actually used 1 whole teaspoon and it packed a lot of kick.

2 pints of cherry tomatoes or little plum tomatoes or you can use about 3 cups of chopped fresh tomatoes of any type. I cut the larger tomatoes in 1/2 and I left the little ones whole.

app. 20 leaves of fresh basil, I just cut them up into small slivers–this is totally optional if your kids don’t like green stuff– but it looks pretty

Kosher Salt and Freshly Ground Black Pepper to taste –I used app. 1 teaspoon on tomatoes and added towards the end as needed

freshly grated parmesan at your discretion

Directions:

Cook pasta according to directions on box for al dente. Reserve a cup of pasta water in the event you may need a little more liquid in your sauce. Add 2 tablespoons of salt to cooking water for pasta. The Italians like to say that their pasta water should be like sea water good and salty. After finished cooking pasta — reserve 1 cup of pasta water and set aside before you drain pasta.

Heat a large sauté pan over medium heat add 4 tablespoons of olive oil and garlic, cook until garlic is golden about 2 minutes. Be careful you don’t want to burn this garlic. Add the crushed red pepper now and the tomatoes, and cook over medium heat. I also added some kosher salt (about 1/2 teaspoon to start, you can always add more) and a little freshly ground black pepper. Stir for a while to make sure garlic doesn’t burn and tomatoes start to burst and deflate about 5  minutes and if you think you need a little more olive oil add it now . I let the tomatoes simmer in the pan for about 15 minutes to 1/2 hour for the best consistency. I smashed down stubborn little tomatoes at the end with the back of a wooden spoon or a masher if you have one.  A very low simmer at the end.  Taste for Salt and Pepper. The longer the tomatoes sit in the oil and cook down on a low simmer the better the sauce will be so if you have a little time let it sit.

Once the spaghetti is cooked and you’ve drained it ( remember to reserve a cup of pasta water).  Add it to the pan with tomatoes and over medium-high heat toss the pasta with the tomatoes well. Add the basil . I let everyone add their own cheese at the table.

Remove the pan from the heat and plate it up.

Yum! and even more delicious the next day.

Sunday Night Red Sauce (Basic Tomato Sauce) Marinara

Sunday Night Red Sauce with Perciatelli

This is my basic go-to red sauce. You can serve it and freeze the remaining sauce for a long while and then the next time you want to use it, you merely take it out in the morning and then you’ll have dinner for that night! Tonite I am making this sauce with Chicken Meatballs made from my Italian Wedding Soup Recipe and will serve with sauce and spaghetti. A perfect Sunday night meal if you’re cooking home. This is a great meal anytime and I love that I have a container or two frozen for another meal. Sauce should keep in the freezer for at least 3 months. It never makes it for that long since I use it pretty often especially when my family comes to visit.

INGREDIENTS:

1 whole onion –chopped

6 cloves garlic (average size; increase or decrease depending on size of cloves), peeled and chopped

2 tablespoons olive oil

2 28oz cans of whole, peeled tomatoes with their juices (San Marzano type)– the whole tomatoes take a bit longer to break down so if you’re short on time or just don’t feel like using whole tomatoes use diced tomatoes in the 28 oz. sized can.

Kosher salt

Freshly ground black pepper

*red pepper flakes (also optional; I love the heat) if you like it Arrabiata style and I do you can 2 Teaspoons of Red Pepper Flakes but taste as you go

* Italian herbs (You can usually buy this in a jar. Spice Islands makes an excellent one–it’s a combo of oregano, marjoram, thyme, basil, rosemary and sage. It’s a perfect blend of spices in a jar and saves a whole lot of time. This is also optional.)

*Teaspoon of sugar (also optional; I use it because it removes any acidic flavors)

* Red wine (optional but if you have it, use about 1/2 cup)

* Fresh basil (optional; you might not have on hand and it’s really okay without it but so fresh tasting with it. I actually had some in my herb pot and went out and cut some, but this certainly doesn’t always happen.)

Fresh grated parmesan cheese

You can use all of these spices or as many as you like at your own discretion. Season to your taste.

Pasta of your choice (This time I used Perciatelli. It’s thick and ropey and we love it.)

DIRECTIONS:

Heat the 2 tablespoons of olive oil in as large a saucepan as you have. It needs to be fairly large. Add the chopped onion and garlic and continue cooking on a low flame for about 10 minutes until the garlic softens and onions are translucent but don’t burn the garlic or the onions.  Add the 2 cans of tomatoes and their juice and if you have fresh basil, add a few leaves now. (A lot of the tomatoes already have basil in them.) Turn up the heat and bring the sauce to a boil. Then bring the heat down and simmer for about one hour, at the very least. I usually cook it for about 1 1/2 hours. Use the back of a wooden spoon to crush the tomatoes; continue stirring often and add as many herbs and seasonings as you like. Taste it for additional salt; throw in about a teaspoon of sugar; and if you have red wine, put in approximately 1/2 cup (and then you have my permission to drink the rest with dinner). Continue crushing down tomatoes and stir occasionally. It will thicken up and your house will smell like Italy or at least you’re favorite Italian Restaurant.

Cook pasta according to directions on the package.

I use about 8 oz pasta for the two of us

* Serves 4 as a main with 16 oz of pasta or 8 as a side dish

Tomato Time Pasta– perfect Summer Pasta made with fresh tomatoes–Meatless

photo 2 (3)photo 4 (2)photo 5 (3)Nothing but beautiful tomatoes out there begging to be eaten in a million different ways. Perfect for a “Meatless Monday” dish or any night of the week . There are tons of local tomatoes out there now. At any local farmers market you can pick up pints of these beautiful babies. This is a lovely light pasta.

I had bought 2 pints of those beautiful little cherry tomatoes and right now there are those gorgeous yellow sunburst tomatoes also available.  I wasn’t sure what I would do with them. They varied in size so I knew if I made a sauce some were getting cut and some would stay whole. Nothing ever sounds better than a plate of pasta to me,  nothing.   These beautiful tomatoes are only out for such a limited time you have to get them while the getting is good.  Some of the tomatoes were super small and I left them whole while I halved the larger ones. There are so many variations of this sauce and feel free to improvise. We love it this way. So simple and so delicious.

Ingredients:

1 lb. spaghetti , any kind of long spaghetti is good for this — sometimes I use bucatini type and sometimes I use thin type long spaghetti– use whatever you’d like

1/4 cup extra-virgin olive oil plus more as needed

4 cloves garlic, peeled and minced.

1/2 teaspoon crushed red pepper* we like it spicy so if you don’t want it that spicy cut to 1/4, I actually used 1 whole teaspoon and it packed a lot of kick.

2 pints of cherry tomatoes or little plum tomatoes or you can use about 3 cups of chopped fresh tomatoes of any type. I cut the larger tomatoes in 1/2 and I left the little ones whole.

app. 20 leaves of fresh basil, I just cut them up into small slivers–this is totally optional if your kids don’t like green stuff– but it looks pretty

Kosher Salt and Freshly Ground Black Pepper to taste –I used app. 1 teaspoon on tomatoes and added towards the end as needed

freshly grated parmesan at your discretion

Directions:

Cook pasta according to directions on box for al dente. Reserve a cup of pasta water in the event you may need a little more liquid in your sauce. Add 2 tablespoons of salt to cooking water for pasta. The Italians like to say that their pasta water should be like sea water good and salty. After finished cooking pasta — reserve 1 cup of pasta water and set aside before you drain pasta.

Heat a large sauté pan over medium heat add 4 tablespoons of olive oil and garlic, cook until garlic is golden about 2 minutes. Be careful you don’t want to burn this garlic. Add the crushed red pepper now and the tomatoes, and cook over medium heat. I also added some kosher salt (about 1/2 teaspoon to start, you can always add more) and a little freshly ground black pepper. Stir for a while to make sure garlic doesn’t burn and tomatoes start to burst and deflate about 5  minutes and if you think you need a little more olive oil add it now . I let the tomatoes simmer in the pan for about 15 minutes to 1/2 hour for the best consistency. I smashed down stubborn little tomatoes at the end with the back of a wooden spoon. A very low simmer at the end.  Taste for Salt and Pepper. The longer the tomatoes sit in the oil and cook down on a low simmer the better the sauce will be so if you have a little time let it sit.
