Getting Ready to Cook

This is one of my all time favorite recipes and the easiest, quickest to prepare. Buy shrimp from a reputable fish store or Whole Foods type of market and have them clean and de-vein them. My husband Joel is an ex-seafood guy and he always cleans and de-veins the shrimp. It is a collaborative effort in our house.  Once the shrimp and prep is done this recipe takes all of 15 minutes to cook.

Ingredients are simple and you probably have most of the ingredients in your pantry. Directions are super simple and so easy to follow, you will look like a “super chef” and impress the pants off of everybody!

This is a wonderful meal for Christmas/New Years if you’re celebrating at home.

Ingredients:

2 Tablespoons unsalted butter

2 Tablespoons olive oil

4 minced garlic cloves

1/2 cup dry white wine–use whatever you have open as long as it’s not too fruity, if you don’t want to use wine use chicken broth or vegetable broth

1 teaspoon kosher salt

Freshly ground black pepper– about 10-12 turns on the pepper mill

1 1/2 lbs. large or extra large shrimp .shelled– we are big fans of Mexican White Shrimp and I used under 10’s which means there are approximately 10 to a pound.

1/2 cup ( app.) chopped fresh Italian parsley

Freshly squeezed juice of half a lemon

*pinch of crushed red pepper flakes

Cooked Pasta or Rice — I used brown rice this time around

Directions:

In a large skillet, melt butter along with olive oil. Add garlic and saute until fragrant , app. 2 mins.

Add wine or broth, salt, red pepper flakes, and black pepper and bring to a simmer.

Let wine reduce by half, app. 3 minutes.

Add shrimp and saute until the shrimp just turn pink, 2-4 mins. on each side depending on their size. Squeeze the lemon over the shrimp, I stirred the shrimp in the sauce one final time and served over brown rice with a sprinkling of parsly.

This shrimp would be delicious served over pasta as well.

Saucy Stuffed Shells – Baked and Meatless

  I just love a baked pasta — nothing like it for good old fashioned comfort food. This recipe is delicious and perfect comfort food for those cold winter nights. I wanted a crowd pleaser that was vegetarian and something that can easily be made ahead and frozen and that would appeal to both kids and adults equally.

     I served with a salad with my Homemade Maple Syrup Salad Dressing ( see on blog) and it was really pretty awesome. Took a few hours to prepare, mostly because I made my own sauce ( Sunday night sauce) but feel free to use a jar of prepared sauce if you’d like. This is a perfect meal to make ahead of time, and just pop into oven.

*This dish will stay fresh in the freezer for up to 3 months. Assemble the shells with the cheese and cover tightly and freeze. When you’re ready to eat, you can bake from frozen but be sure to add another 30 minutes to the cooking time. You can also freeze individual sized portions of leftover shells that have already been cooked. Reheat previously baked shells in the microwave in 90 second intervals until heated through. 

Perfect for Christmas and New Years.

Of course if you love it with meat you can make a meat sauce and follow same directions.

Ingredients:

1 box Jumbo Shells ( you won’t use all but a lot of them break, etc.)

1 lb. Ricotta ( I used Part Skim)

1 Egg

1 lb. Mozzarella Shredded ( I used Part Skim) if you can obtain fresh mozzarella and shred it that would make it even better! whatever works for you

1 cup grated Parmesan ( any kind you like)

1/4 cup chopped flat leaf parsley

Salt and Freshly Ground Black Pepper

*marinara sauce or any red sauce I made my own and use my own recipe. If buying sauce and there are some delicious good sauces out there, you’ll need at least 1 large jar of Sauce and my go-to if not using my own is Raos Marinara.   It’s nice to have a little extra sauce in case you need it when you re-heat the stuffed shells. 

Directions:

Preheat oven to 375 degrees.

Prepare Pasta , cook for between 12 and 15 minutes, you’ll want them soft but not undercooked at the center. Drain pasta and cool for easy handling.

Combine ricotta, 1/2 of the mozzarella, 1/2 of the Parmesan, parsley and egg in a bowl. Taste for Salt and Pepper.

When shells have cooled down, fill them with rounded spoonfuls of cheese mixture and arrange them seam side down in casserole dish. I used a 9 x 13 Pyrex and spray with cooking spray. Top Shells with remaining sauce and remaining mozzarella and grated cheese. Place shells in very hot oven . You can turn on broiler for last few minutes , it should be slightly browned and bubbly. Let cool for a few minutes before serving.

Delicious!

Baked Chicken — Classic Style

This really came about because I asked Butcher to cut my chicken in 1/2 and when I got home I saw he cut it into 8’s. I am not going to throw away the chicken so had to think quickly what to do with it. While there are a lot of recipes out there I just really wanted a simple roast chicken. This came out very tasty and I will share with you what I did. Perfect weeknight meal or any night meal.

My trick with chicken is this — if you have the time. I try to shop in the morning or the day before so I will have my meal ready for cooking at the end of the day. I then pat dry the chicken and Salt it and put in a plastic bag in the refrigerator , I remove from plastic about an hour before I want to cook so it comes to room temperature. It’s sort of a dry brine but no other spices. It really does make a difference , obviously none of us always have the time for this step and that’s perfectly OK. It’s not necessary but I think it makes a difference. And invest in a meat thermometer it is a valuable kitchen tool.

Ingredients:

1 whole chicken cut into 8’s — 2 breasts, 2 thighs, 2 legs, and 2 wings — I have butcher remove the backbone. Any supermarket butcher will do this just ask.

Extra Virgin Olive Oil

Kosher Salt

Freshly Ground Black Pepper

*Paprika — I always use this because I love the way it tastes and looks but totally optional

Directions:

Pre-heat oven to 400 degrees

If you have the time –pat chicken dry and salt and let it sit in fridge in a bowl or a bag for a few hours or up to overnight.

If you’re not doing ahead just proceed from here– pat dry chicken –rub olive oil all over the chicken pieces and I spray the bottom of my roasting pan with cooking spray and then drizzle a little olive oil on the bottom of the pan and spread with a brush or just move it around. Sprinkle the chicken with salt and pepper and paprika. If you already salted go a little lighter with the salt but you’ll still need to salt. Chicken needs a lot of salt.

Arrange the chicken pieces in the pan so that all the pieces are skin side up, and the largest pieces ( breasts) are in the center of the pan. (see photo)

Don’t crowd the pan. Allow room in between the pieces for heat to circulate. See photos my chicken . Go with a larger baking dish if you have it — best for there to be room in between pieces to allow for even heat circulation between the pieces.

Bake the chicken uncovered in the oven for 30 minutes at 400 degrees. This initial high will help brown the chicken.

Then lower heat to 350 degrees and bake for an additional 10-30 minutes depending on your oven etc. If you remove the breast check the temp. and juices should run clear ( not pink) when poked with a sharp knife. Internal temp of breast should be 165 degrees and thighs 170 degrees.

If chicken isn’t browned enough , place under the broiler for a few minutes. I did this for the last 3 minutes. You may want to for 5 minutes until browned sufficiently.

Let the Chicken rest for 5 – 10 minutes. I tented with aluminum foil.

That’s it.

I served with fresh cranberry sauce, honey roasted carrots and parmesan roasted potatoes.

Classic Potato Pancakes –Latkes

Chanukah will be here starting this Sunday night, December 18. Here is my recipe for delicious Potato Latkes.

It is a delicious fairly easy recipe for simple latkes. If you eat them hot they’re best but that’s tough to do sometimes. They really are most delicious hot off the frying pan. Serve with Applesauce or Sour Cream . Enjoy and Happy Chanukah from my kitchen to yours. I do have a delicious recipe for homemade apple sauce on my blog if you’re feeling inspired to make it along side the potato pancakes. Homemade Apple Sauce is it’s title and just put that into the search bar or google homemade apple sauce cooking with Candi .

This is what I do.

This recipe should serve 4

Ingredients:

2 large Russet Potatoes — peeled and cut lengthwise into quarters

1 large Spanish Onion–peeled and cut into quarters

2 large eggs

1/2 cup all purpose flour

2 Teaspoons Kosher Salt

1/2 Teaspoon freshly ground black pepper

1 Teaspoon baking powder

Vegetable Oil for frying

Directions:

Using a food processor with a coarse grating disc, grate the potatoes and onion. Transfer the mixture to a clean dishtowel ( I prefer a thin one for this task) and squeeze out as much liquid as possible. This is key to a delicious latke.

Transfer the mixture to a large bowl. Add the eggs, flour, salt, pepper, and baking powder and pepper and mix until the flour is absorbed.

In a medium heavy-bottomed pan over medium-high heat, pour in about 1/4 inch of the vegetable oil. Once the oil is hot use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape into round discs. When edges of the latkes start to brown and get crispy ( about 5 minutes) , transfer the latkes to a paper towel lined plate to drain . Repeat.

If you’re making double the recipe I would swap out the oil and wipe with paper towel and start with fresh oil. For one batch the oil was fine. Just control the heat on your stove.

Chicken Scarpariello

Chicken Scarpariello could easily be one of my most favorite dishes to order in an Italian Restaurant. The translation is Shoemaker’s chicken and it is a classic Italian-American dish of chicken, sausage, onions and peppers . The flavors are layered and spicy and sweet and this recipe often has potatoes in it but this time I left them out and we didn’t miss them. I made this for 2 people so used only 1 lb. of chicken. Recipe is for 2 – 3 pounds of bone-in skin-on chicken , you can use whatever pieces you like but if you’re using breasts have them cut in 1/2. I also made whole recipe in my Le Creuset Stockpot because I cut recipe for just the two of us. If you make whole recipe you’ll want to transfer to a large roasting pan before putting in the oven. I didn’t because I only used 3 pieces of chicken and 2 sausage links so I kept it all in the Le Creuset dutch oven .

Enjoy this hearty recipe and if I were making potatoes I might just roast some on the side and add in when I serve. Potatoes are totally optional.

Serve with some good bread to soak up this delicious sauce.

This would be a delicious Holiday Meal.

Ingredients:

3 lbs. bone-in , skin-on Chicken I used thighs only this time,, use what you like but keep breasts small and cut in 1/2 and this recipe can be easily cut in 1/2

Kosher salt and freshly ground black pepper ( or coarse black pepper)

2 Tablespoons Olive Oil ( if you’re cooking up chicken and oil disappears add a little at a time)

4 links Italian Sausage — you can use 1/2 mild and 1/2 spicy whatever you’d like

2 large Bell Peppers and if you’re making for more people and transferring to large roasting pan you can use 3 Bell peppers — seeded and cut into thin strips

1 large sweet onion, cut in half lengthwise and sliced

1 teaspoon minced garlic — probably 2 small cloves

4-8 hot vinegar cherry peppers or pepperoncini, left whole If you don’t like hot you can substitute with sweet cherry peppers in vinegar or peppadew peppers in vinegar( I know Trader Joes has these) Use what you like and what you can find.

1/2 cup chicken broth

1/2 cup dry white wine

1/4 cup red wine vinegar

1 Tablespoon dried oregano

Directions:

Pre-heat the oven to 400 degrees. season chicken pieces with kosher salt and pepper. Heat the oil in a large Dutch oven style pot or use a large pot/pan for sautéing . In batches, ( don’t over crowd pot) brown the chicken , skin side down to start, you’ll probably want to sauté for at least 5 minutes or more per side and using tongs check for skin color to be golden brown, this may take longer or shorter and be careful not to burn the oil. I used a medium flame but if it starts to burn lower immediately . Remove the chicken to a plate when finished. Add the sausage to same pot and sauté until brown, about 3 -4 minutes per side. ( they will not be cooked through at this point– just browned. Remove with tongs , cut into 1″ slices and set aside along with chicken.

Now into the same pot sauté the bell peppers, onion and garlic until soft and beginning to brown , probably another 5 minutes or so. I sprinkled a little salt and pepper here while it was sautéing

Return the sausage to pot, add the cherry peppers or pepperoncini, chicken broth , wine, vinegar, oregano . Gently mix together, then transfer everything in the pot ( all liquid as well) to a large roasting pan. ( I always spray first for easy clean-up and easy removal of cooked food) use an olive oil spray if you have it and spray lightly) Nestle the chicken in the vegetables (skin side up) with sausage and roast in the oven until chicken is cooked through and sauce has reduced slightly, probably 30 minutes . If you are halving this recipe for 2 people you can put Le Creuset in the oven which is what I did but for larger amounts use roasting pan.

I served on plate and spooned a little of the sauce on top of chicken and vegetables.

You can test done-ness of chicken with a meat thermometer.

*I prefer using dark meat here but that’s totally up to you

Simple Red Chili — Turkey or Beef

It’s definitely that time of year when you wake up and there is a chill in the air and that signals chili weather in my book . Chili is not an exact science and you can feel free to make substitutions where you like. Obviously the toppings are optional and at your own discretion. Chili is just so easy to make. It sits on the stove or your slow cooker and when you’re ready to eat it, it’s all done. I like chips , taco shells or small soft tortillas with this. I love fresh jalapeno on the side chopped up,  chopped red onion , guacamole, refried beans, etc.  I usually make this one day ahead for a special event. This allows the flavors to all meld together and then I just reheat–couldn’t be easier.

Can easily be made on the stove-top or slow cooker — 2 hours on high and 4 hours on low. It was perfect. First you’ll want to brown up the meat in a pan on the stove. Then dump all ingredients into the slow cooker ( spray first with cooking spray) stir it all up and set it and forget it till you’re ready to eat it. I made this chili in the morning yesterday and it was perfect! With enough leftover for 2 more meals!

This recipe will probably serve 6-8

Ingredients:

2 lbs. ground beef or ground turkey–If I am using ground turkey I prefer ground dark meat if you can find it. It’s much more flavorful . You can use white meat turkey but try for 85/15. That’s 85% white meat with 15% fat. I just find the O% fat to be very dry. Of course these are all personal choices.

2 cloves garlic, minced

1 can (12 – 14 oz) tomato sauce, and then about 1 –  2 cans of chicken broth or water –start with  1 can of broth and only add if you need more

1 can (Ro-tel) diced tomatoes and chili peppers — If you can’t find Ro-tel brand use any brand that has diced tomatoes and chili peppers — again a 14 oz. can

1 can (15 oz.)red kidney beans, drained and rinsed

1 can (15 oz.) pinto beans, drained and rinsed or Cannellini Beans — whichever doesn’t really matter —

1 can yellow corn (optional, but I always like to add it in. If you like corn use a large can (14 oz) if you don’t want as much corn use a small can

1 small can (4 oz.) poblano green chilis, cut up or diced (also in Mexican aisle) if you can’t find just omit it

1 teaspoon ground oregano (I use Mexican oregano. Use it if you can get it. If not, regular is fine.)

1 tablespoon ground cumin

2 tablespoons chili powder

1/2 teaspoon cayenne pepper (I like the heat. This is optional. You can also take down to 1/4 teaspoon.)

1 teaspoon kosher salt (then you will taste for additional salt. I added more when I tasted it . You’ll have to do so at your own discretion

Grated shredded cheddar or jack cheese for serving

diced red onion and diced fresh jalapeno for serving

Tortilla chips, guacamole, sour cream and salsa for serving I also use hot sauce at serving time for those who like it hot and spicy.

*cilantro for topping (I love cilantro so I chop it up and leave it out for individual garnish.)

Directions:

Place the ground beef or turkey in a large stock pot (Le Creuset) and put in the garlic. Cook over medium heat until meat is browned. Drain off any excess fat.  Add in the tomato sauce, chili powder, cumin, oregano, salt and cayenne add all the other canned ingredients –beans, corn etc. Stir together well and bring to a low boil and then turn it down and simmer away for at least an hour. I use the 15 oz. can of tomato sauce as a measuring cup and add 1 can of chicken broth or water , if you’ll need more liquid you can always add a little broth/water at a time. Let simmer for an hour or so, covered, occasionally stirring, and adding liquid if necessary. See note above if you’re using slow cooker.  I usually add salt at this point. Simmer for  hour or so covered. It can simmer for a long while, if you so desire. I actually let it low simmer for a few hours and then if you’re cooking on stove top I heat it up and let it simmer for another hour or so right before serving. Slow cooker is a great way to go here.

Serve with assorted toppings I’ve listed. Cheese, jalapenos, chips, guacamole, salsa, chopped red onions, sour cream  and cilantro. We love small soft tortillas on the side of our chili or chips depending on my mood and what I have in the house.

Parm Crusted Potatoes

These potatoes are crispy, delicious and probably my all time favorites to serve alongside a rather simple chicken dinner. It elevates dinner to a new level. Maybe better than fries? Very few ingredients and pretty simple and you’ll look like a pro. And to add another layer of flavor serve them with sour cream — and they make a great hors d’oeuvre but I like them for dinner. BTW you can do the same thing with Cauliflower! All I know is they were delicious and I have made them a few times and play around with ingredients — if you don’t like Italian seasoning use oregano or omit entirely . I used garlic powder but if you prefer it without don’t use that either — just don’t omit the salt!!! Of course you can modify and play around with this recipe any way you like best. But use small potatoes which are available all over.

Ingredients:

1 lb. mini potatoes, baby potatoes or just small potatoes –baby Yukon gold are perfect for the two of us I used 6 small potatoes and cut in 1/2 which was 12 pieces — you’ll use what you like and modify baking dish to fit the amount of potatoes you’ll be using

1/4 cup butter or 4 Tablespoons Olive Oil — melted butter

1/2 tsp. garlic powder

1/2 tsp. Italian Seasoning

1/2 cup Grated Parmesan Cheese

1/4 tsp. at least of kosher salt — we like salty so I add a little more

Directions:

Pre-heat oven to 400 degrees

Wash potatoes but leave skin on and cut in 1/2 — spray your baking dish with cooking spray for easy clean up. I prefer a glass baking dish for these little beauties.

In my baking dish I put melted butter ( or olive oil) tilt pan to spread butter or oil all over the bottom of pan. Using a spoon scatter the parmesan cheese and spices. Spread as evenly as possible. It’s tough to spread so do your best just make sure cheese is spread uniformly as you sprinkle it along with spices. Place potatoes cut side down into mixture. If easier you can put cheese and spices in a bowl first and mix then sprinkle over the bottom of the pan

Bake potatoes for about 35-40 minutes until they’re soft and the parm crust is deep golden brown. I like my potatoes very crispy so I baked a little longer but keep an eye on them after 1/2 hour. Let them rest for a few minutes then using a small flipper or even a fork cut through the small layer of palm crust around base of each potato and flip over — after 5 minutes transfer to serving dish and serve alone or with some sour cream.

Leftovers can be stored in refrigerator in an airtight container for a week and re-heat in 400 degree oven for about 5 minutes until cheese is crispy again — not quite the same as freshly made but they’re still pretty darn good.

No Breading Chicken Parmesan

I woke up this morning and needed some inspiration for dinner tonite — unless we have plans on the book I like Sunday night dinners at home. Tonite is Chicken Parm with no breading just lots of delicious cheese, sauce and a side of spaghetti. This recipe is super easy and super delicious and will be on our table tonite! Perfection on a plate!

I used thin chicken breasts to start , if you’re using thicker ones you’ll have to monitor the timing of them a bit more and you should just use a meat thermometer to do so. This really couldn’t be easier and it was super tasty and is a cheese lovers delight. It’s lightened up from traditional breaded and fried chicken parm.

Prep and ingredients are super easy .

This recipe is for 4.

Ingredients:

1 1/2 – 2 pounds of thin chicken breasts

1 egg

3/4 cup grated Parmesan Cheese

1/2 tbsp. garlic powder

1/2 tbsp. onion powder

1 Tablespoon Italian Seasonings — It comes in one jar and is available in most spice sections in supermarkets —

pinch kosher salt

1/4 tbsp. freshly ground black pepper

and because we like a little extra kick I add a sprinkle of crushed red pepper flakes

3/4 -1 cup Jarred Marinara or if you have home made that’s good too . I prefer Raos Arabiata or Marinara

Shredded Mozzarella — probably 1/2 cup to 1 cup depending on how much cheese you like — I like a good sprinkle of cheese — see pics.

A little olive oil for drizzle in pan before cooking

Directions:

Pre heat oven to 400 degrees

I used a large baking dish and sprayed with cooking spray and drizzled a bit of olive oil to bottom of pan — just a little

Beat egg in a wide enough bowl for dipping chicken

In a second wide bowl combine the parm cheese and spices and mix

Dip each piece of chicken in the egg and then the cheese, coating both sides. Place in prepared baking dish.

Bake for 20 minutes — since cutlets are thin this should be fine because you’ll be cooking more with sauce and cheese. If thicker cutlets you may need a bit more time.

Top each piece with sauce and shredded mozzarella. ( you can spread a little sauce in between chicken as well . I served over spaghetti and needed a little more sauce so this was enough. If you want you can heat up extra sauce in a small saucepan for spaghetti. Bake for another 10-20 minutes till chicken is 160 degrees when checked with meat thermometer and cheese is melted and bubbly. I like my cheese just slightly browned so you can turn to broil for a minute or so depending on your broiler but be careful you don’t want to burn the whole thing.

I served over pasta and had enough sauce for us.

Sheet Pan Chicken –Honey Balsamic with Veggies

This is a very easy and delicious meal. The most work came from cutting up the vegetables and you can really use any veggies you’d like . This time I used a mix of red pepper, mushrooms, carrots and string beans. I would recommend adding a red onion but I didn’t have one in the house so didn’t use it. The onion would add a nice layer of flavor.

Also I used Chicken Thighs and again the timing on this recipe was for thighs –Chicken Breasts would be different as they cook much faster than thighs so not 100% about how that would work out but by all means give it a try and just keep an eye on them because they tend to dry out.

I like thighs because they can take the heat and my opinion is they are tastier.

Ingredients:

This is for the Honey Balsamic Chicken:

6 Bone in , skin on Chicken Thighs —

1/2 cup Balsamic Vinegar

1/4 cup Honey

1 Tablespoon minced Fresh Garlic

1 Tablespoon Dried Oregano

1 Teaspoon Chili Powder

1/4 cup Olive Oil

2 Tablespoons Whole Grain Mustard

Kosher Salt to taste–1 Teaspoon to start

Sheet Pan Vegetables:

I used about 1/2 lb. String Beans

2 Carrots peeled and sliced into strips (see photo)

Mushrooms–8 oz. Box –sliced

Bell Peppers–I used a Red Pepper cut into 6 long slices

You can use Sweet Potatoes, Broccoli, Red Onion, and really any veggies you like

2 Tablespoons Garlic Powder

3 Tablespoons Olive Oil

Salt and Pepper to taste

Directions:

Pre-heat oven to 425 degrees

Mix together in a bowl all the ingredients under Honey Balsamic Chicken — put in a ziplock bag along with the chicken thighs. Set aside for about 15 minutes while you prepare the vegetables.

*Marinate the chicken for at least 15 minutes or up to an hour but no more than this. Do not let chicken marinate for more than an hour because the vinegar acids start to break down the tissue in the meat and can make the chicken tougher .

Then I cut up all the veggies and put on a sheet pan that has been sprayed with Cooking Spray. ( I use a very large Sheet pan) and toss the veggies with the Olive Oil , Garlic Powder and some Salt and Pepper and spread them out on the Baking Sheet.

After the initial 15 minutes of marinating you then place the chicken thighs on top of the veggies and bake for 30-35 minutes — you can check the internal temperature of chicken with a meat thermometer and it should read 165 degrees if they are done.

I then remove the chicken to a plate and continue cooking vegetables for another 5 minutes, then I added back the chicken and turned oven to broil and probably 3-5 minutes is all you need to get everything nice and crispy! You’ll have to watch your oven but start with 3 minutes and check on it.

I added Brown Rice and had a most tasty delicious meal!

Pasta e Fagioli ( Pasta and Bean Soup) Weekend Cooking

019 I have been making this soup forever and it’s a most perfect soup to make during the weekend when you have a little time to cook and gather ingredients. I make a big pot and freeze some for later and keep some in the fridge for lunch the next day. This is really just a tomato base soup with beans and pasta. How bad can that be? unless you hate beans and pasta that is. I usually have ingredients in the pantry and it is a wonderful warm experience, with a nice salad this is a perfect meal. I used to only make this with dry beans but in the name of time and taste I used canned beans and have now always made this with canned.  I must admit this makes it a whole lot easier  and honestly no one knows the difference! It is a wonderful hearty soup halfway between a soup and a pasta no matter how you do the beans!

Ingredients:

1 medium yellow onion, chopped

2 – 3 tablespoons olive oil

4 garlic cloves, minced

1 28 oz. can chopped tomatoes ( San Marzano)

10 – 12 fresh basil leaves

red pepper flakes

handful of italian parsley, chopped

2 cans rinsed and drained Cannellini Beans

5 cups water or chicken broth or vegetable broth to keep it vegetarian — water works just fine but you’ll have to check your salt and pepper if using broth especially boxed broth which contains salt. Your call– super easy recipe.

app. 1 cup pasta, elbows, tubetti, ditalini, or broken spaghetti

Kosher Salt — to taste

Freshly Ground Black Pepper

Directions:

In a large , heavy stockpot ( Le Creuset) saute onion in olive oil. When onion is golden and transparent, add garlic. Cook for a few more minutes. Add tomatoes and herbs. Add some kosher salt about 1/2 Tablespoon and some grinds of the pepper mill now and you’ll be tasting all along for salt and pepper

Add the beans and the 5 cups of water  and cook over medium heat for 15 minutes – until the beans begin to break down and the soup begins to thicken. Lower heat to a slow simmer, as low as you can.  Stir frequently to prevent it from sticking and burning bottom of the pot. Taste for salt and pepper again.  I always like it to simmer for a long time, an hour would probably do it, but if I have the time I let it sit for as long as I can.  Sometimes after it’s been simmering for a while ,  I turn off the heat and right before serving just bring to a boil and add pasta. Just be careful not to let it burn, stir frequently . If you need more liquid add water a little at a time, I showed a picture of my pot filler which is the greatest thing to have in a kitchen, makes it super easy to fill a pot.

Right before you’re ready to serve bring to a low boil and add the pasta and cook until pasta is al dente, about 5 – 10 minutes depending on type of pasta you’re using. I used ditalini.

Serve immediately in large soup bowls.

Guests can drizzle some good olive oil and grate some Parmesan Cheese over.  Should serve 8 – 10 depending on appetites. I froze remainder for another time.
