Tomato Time Pasta with Fresh Corn –Summer Pasta

I was going to make my tomato time pasta for the two of us and I was using fresh cherry tomatoes and whole wheat pasta. I had two ears of beautiful fresh corn and I figured how can that taste bad? Corn and Tomatoes are delicious and mixed in with the pasta they were just a perfect summer meal. My original Tomato Time Pasta was posted on August ’14 and that was the basis for this. This is what I did .

Ingredients:

This recipe is for 4-6 servings , I cut in 1/2 for the 2 of us.

1 lb. spaghetti, I like long ropy spaghetti for this recipe , use whatever you like. I also used whole wheat pasta last night.

4 -6 Tbsp. Extra Virgin Olive Oil — start out with 4 and you might want to add a little more during the cooking process. I used 3 for 1/2 of this recipe.

4 cloves garlic, peeled and minced.

4 ears of fresh corn–I used 2 for 1/2 this recipe so I would double for whole recipe.

*1/2 teaspoon crushed red pepper– we like it spicy but obviously you can use more or less depending on your taste or omit entirely. I used a lot.

2 pints of cherry tomatoes ( app. 3 cups fresh tomatoes) I cut the larger tomatoes in 1/2 and left the little ones whole.

Fresh Basil

Kosher Salt and Freshly Ground Black Pepper

Freshly Grated Parmesan — on the table at your own discretion

Directions:

Cook Corn in boiling water for 2 minutes –Bring water to a boil and place corn in water for 2 minutes. Transfer to a bowl with ice water and cool corn down. When corn is cooled off –cut the corn off cob and set aside.

Cook Pasta according to the directions on the box for al dente. Reserve a cup of pasta water in the event you may need a little more liquid in your sauce. Add salt to the cooking water for pasta.

Heat a large saute pan over medium heat — add olive oil then lower the heat and add garlic , cook until garlic is golden brown and not burned. About 2 minutes– watch the garlic –just to soften and get fragrant. Add the crushed red pepper and the tomatoes, and cook over medium low to medium heat. I added about 1/2 teaspoon of kosher salt at this point –and some freshly ground black pepper about 1/4 teaspoon. Stir together all ingredients for a bit, making sure garlic isn’t burning and tomatoes start to burst and deflate for about 10 minutes. I then lower the heat and let the tomatoes simmer in the pan for at least 15 minutes and last night for 1/2 hour. This is when I added the fresh corn. Let it sit together for the last 15 minutes of cooking.  I even turned off the stove and let it just sit there , i then turned heat back on just before adding the pasta. Taste for Salt and Pepper.  Remember to reserve a cup of pasta water. I added a little water at a time to the tomatoes and corn at a low flame– stirred it in–probably used about 1/2 cup . It will give the sauce some needed liquid. Just stir in slowly don’t dump the whole cup in at once. Next add the cooked pasta right into the pan and stir it all up good. Tomatoes will be smashed up and olive oil will have turned a lovely light orangey red color. Add in the Fresh Basil–I cut it up into small pieces –again this is your choice you can throw it in whole leaves as well. There you have it. Dinner in 1/2 hour.

I plated it up and fresh parmesan was on the table if anyone wanted to use it.

Yum and even more delicious the next day cold out of the fridge.

 

 

 

Crunchy Noodle Salad–with Ramen Noodles

This is an oldie but goodie and always welcome on the table. It is perfect with a bbq and always seems to be a hit.  It’s the time of year when cold salads are abundant but this beauty is really wonderful all year round.

Napa Noodle Salad

4 cups sliced Napa Cabbage ( I cheat and buy the cabbage in a bag. It’s not always Napa but sometimes I don’t feel like chopping.  if you buy the bag, it’s fine, just use 1 whole bag. It’s more than 4 cups but it’s fine, and if all you can find is the cole slaw kind it’s Ok too, it will just have some carrots and some purple cabbage.

5 green onions (scallions) sliced very thin (green parts only)

Mix cabbage and green onions and refrigerate for a few hours (at least 2). This gives it a chance to meld and wilt a bit.

2 packages of Ramen noodles (It doesn’t matter which flavor you buy b/c you will be throwing away those flavor packs  –you won’t be needing them for this salad–just the noodles

handful of sliced almonds

1/2 cup sesame seeds (available in the spice aisle)

1/4 cup butter

Take the noodles (hard crunchy ones) and put in a large plastic bag. Bang noodles with a mallet or your fist (fist is fine) and just crack them up. They’ll be easier to work with. Add the almonds and sesame seeds and brown all together in the butter.

Dressing

1/2 cup sugar ( I know, but I never said I cook DIET)

1/2 cup salad oil (plain old vegetable oil will do just fine)

1/4 cup vinegar (I use white rice vinegar, which is available in Asian section of supermarket or just wherever the vinegars are.)

1 Tbsp. soy sauce (low sodium always)

Toss all together and Serve

*cabbage and onions need to meld and wilt a bit, so make sure to give them at least 2 hours in the fridge. The hard noodles should stay a little crunchy. Don’t burn–just brown–the ingredients until the butter gets a bit bubbly; not burnt. Be careful. While you’re browning the noodles with the almonds and sesame seeds, move them around with a wooden spoon so it all gets buttery.

I know this is fattening, but isn’t everything fattening so yummy??? And you’re not eating the whole thing, so enjoy!!!

Of course you can double up this recipe, it’s just a whole lotta cabbage to toss! As a side dish, this is a nice amount as is.

Serves 4 – 6 as a side dish

Avocado Salad with Corn and Tomatoes –Fresh and Delicious

DSCN0190 DSCN0195 DSCN0194 DSCN0199It’ s June so let’s break out all the delicious summer food. This is a most perfect summer salad and it is a vegetarian delight . It is totally vegan. I am not a vegan but totally love this salad with all it’s fresh flavors . I had 2 beautiful ripe avocados on hand and all the ingredients for this yummy salad.  I had some fresh corn so I just brought the water to a boil threw it in and when it turned yellow took it out and threw it in a bowl of ice water to stop the cooking.   Of course I love  jalapenos , use your own discretion and this would be amazing without as well but it was kick ass with them.  You can make the salad ahead and let juices meld but don’t add the avocados till you’re ready to serve.  You can give them a little squeeze of fresh lime juice so they won’t turn brown so fast.  I like to serve salad at room temperature, you just don’t get the flavors when it’s too cold. It will keep in fridge for a few days, but you’ll have to take out the leftover avocado since it will turn brown. I cut this salad in 1/2 for the 2 of us. This easily will serve 6 as a side. By the way Joel took a bite but too much healthy stuff going on in here for his liking, although he’s gotten better he’s not quite up to this yet, it’s OK because there was more for me with leftovers.

I was inspired for this recipe from the Barefoot Contessa recipe for Guacamole Salad. The corn was my idea.

Ingredients:

2 cobs of fresh corn ( cook and then shuck corn off the cob) if no fresh corn available use frozen . I use frozen when I have to and 1 small bag is usually sufficient. The frozen corn will defrost very quickly so just take it out and when you mix in with other ingredients it will start to completely thaw by the time you’re ready to serve. You want to serve at room temperature anyway.

1 pint grape tomatoes , halved

1 yellow bell pepper, seeded and diced into small pieces ( app. 1/2 “)

1 15 oz. can black beans, rinsed and drained

1/2 cup small diced red onion

2 tablespoons minced fresh jalapeno peppers, seeded ( app. 2 small jalapenos) use at your own discretion . Remove Seeds

1/2 teaspoon freshly grated lime zest

1/4 cup freshly squeezed lime juice ( 2 limes)

1/4 cup good olive oil

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon minced fresh garlic

1/4 teaspoon ground cayenne pepper

2 ripe Hass avocados, seeded, peeled and cut into small cubes.

Directions:

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt and pepper, garlic and cayenne pepper. Pour over the vegetables. Toss well. In the meanwhile cook the corn , bring water to a boil throw in for a few minutes to turn bright yellow, then I throw in a bowl of ice water for a few minutes to stop the cooking and lock in flavor and color. Then remove corn from cob. I let the salad sit for about an hour before adding avocados into the salad. Just fold avocados into the salad when you’re ready to serve. Check for seasoning and serve at room temperature.

photo (3) It’s Memorial Day Weekend again and it brings me to this delicious dessert filled with the most delicious in season blackberries.  I have posted numerous blueberry cobblers but this one has to be my personal favorite made with Blackberries.  It’s a real deal Old Fashioned Cobbler.  You can really make this with any fruit but I love Blackberries while they’re sweet, plump and delicious! Blueberries and Red Raspberries will also work  well. Or you can mix up the fruits!

Ingredients:

1 pound or about 3 1/2 – 4 cups blackberries , cleaned , rinsed and dried

1 tablespoon arrowroot or cornstarch

2 tablespoons fresh lemon juice

1 cup all-purpose flour

3/4 cup sugar, I use regular granulated sugar for cobbler inside and on top I use turbinado sugar. 1/2 cup granulated sugar for inside cobbler and 1/4 cup turbinado

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup whole milk or you can use low-fat buttermilk

3 tablespoons unsalted butter, melted

3/4 cup boiling water

Directions:

Preheat the oven to 350 degrees.

In a bowl I place the clean blackberries that I’ve washed and dried. I sprinkle them with the arrowroot and lemon juice and mix gently  Set aside.

In a medium size bowl, I sift the flour, 1/2 cup sugar, baking powder and salt. Add the milk and butter. Stir until just combined, don’t over stir, it shouldn’t be smooth. Then by the moundful drop dough onto blackberries. I spread around a little bit but don’t completely cover the top of berries. ( see photo) the dough will spread a little once it’s baked.

Pour boiling water over the dough and fruit before you bake it. Sprinkle top with 1/4 turbinado sugar or regular sugar. Raw sugar or turbinado sugar makes it a little crunchier topping. I prefer it to regular sugar for a topping.

*if you are preparing in advance which is what I did today. Prepare up till the boiling water and sugar part. Refrigerate for up to 2 days , bring to room temperature then pour boiling water and top with sugar and bake. I baked for app. 45 minutes till dough gets browned and crackly looking and blackberries are bubbling. ( see photos)

Remove from oven and let sit but serve while it’s still warm with ice-cream for extra added deliciousness!

Joel’s Salad with lots of Parmesan Cheese–hey he ate it!

This Champagne Vinaigrette appeared on my blog back in 2012. It’s really perfect on any kind of greens and this is the salad that I made along with it. I love Kale but I don’t like feeling like I’m eating the front lawn. I like my kale very finely chopped and massaged with dressing. I use my food processor to chop the kale and I dress the salad ahead of eating it and let it sit for a while so that the kale can absorb as much of the dressing as possible. This salad was really delicious and I know this is almost impossible to believe but I got Joel to eat some of it! The way I did that was to add a lot of parmesan cheese to his plate and he ate it.  Enjoy this dressing it is perfection in a bottle and good on almost anything you put it on. I will be making this salad for Father’s Day this year–it’s a winner.

Champagne Vinaigrette:

1 tablespoon Dijon Mustard

1 teaspoon whole grain mustard (Maille makes a wonderful mustard)

1/3 cup Champagne Vinegar

1 tablespoon Rice Wine Vinegar

1 teaspoon Honey

3/4 cup extra virgin olive oil

kosher salt to taste app. 1/4 teaspoon to start

freshly ground black pepper , a few grinds of the mill to taste

Ingredients for the Salad:

1 bunch of Kale or a bag of washed and chopped kale , baby kale is great as well

1/2 lb. of Brussels Sprouts, washed and cut thinly–now you can buy brussels already sliced which makes prep super fast and easy!!!

*this is optional but it adds pretty color and some more crunch. 1/2 small head radicchio, cored and thinly sliced

1/2 cup of Grated Parmesan or Shaved Parmesan

1/2 cup of dried fruit, I used dried craisins, but raisins, cherries, any of them will do

1/2 cup pignoli nuts, I roast them in the oven for about 4 minutes till they get toasty. ( in oven at 350 degrees for about 4 mins.)

*add any seasonal fruits or vegetables or protein you may like,  this is just a basic salad idea.

Directions:

Using my blender I threw all vinaigrette ingredients  except for the olive oil which I slowly streamed in through the top of blender until dressing emulsified. Taste for Salt and Pepper and you’re good to go.

Wash and Dry the Kale, remove the stems and ribs and just use the leaves. Even better you can buy triple washed kale already chopped. I still put that through my processor because it’s not chopped enough for me.

In the food processor I chopped up kale slowly, you don’t want to over chop the kale either. As soon as it starts to break down I stopped and removed it and added more.  I do it in sections till it’s all chopped.

Slice Brussels very thinly into slices , they will fall apart as you slice and mix them into salad.  Add Brussels to Kale with all other salad ingredients except for Parmesan Cheese. I added cheese when I was ready to serve to individual plates.

Cold Noodles with Sesame Sauce (Jewish Girls can cook Chinese Food too)

FullSizeRenderThis is one of my old tried and true recipes. Perfect for a large get together and totally tasty so if you’re in the market for a perfect side dish this Memorial Day here you go.  There are a lot of ingredients but it is very easy to put together and it’s always a hit! I make the sauce a day ahead which I highly recommend doing it gives the flavors a chance to really come together.  I had all the ingredients in the house and day of I will cook the noodles and mix together. If making sauce ahead of time , take it out of refrigerator and let the sauce sit at room temperature before mixing with noodles. I used 1 teaspoon of cayenne, but because I wasn’t sure of everyone’s taste buds for hot and spicy I left out the chili oil. If you want it spicier you can always add some hot chili oil, or more cayenne pepper.  You can actually make the sauce a few days ahead of time. Enjoy this oldie but goodie. I have played around with the recipe a lot, and have found these ingredients work the best for me. I also like to put a little fresh cilantro on the side for those who love it ( like me) and don’t leave out the chopped peanuts they give it that extra yummy crunch. Enjoy!

Ingredients: 

1 lb. linguine or spaghetti ( or you can use Chinese egg noodles)

1 tablespoon vegetable oil

7 tablespoons Peanut Butter ( creamy ) by the way I always use the low-fat one, it’s perfectly fine

2/3 cup warm water

6 tablespoons soy sauce ( use low sodium)

2 tablespoons rice wine vinegar

2 tablespoons sesame oil

1/2 to 1 teaspoon ground cayenne pepper, or more to specific taste

1 tablespoon sugar

1 teaspoon salt

1 tablespoon finely chopped fresh garlic

3 to 4 scallions , finely chopped

*1 sliced cucumber, peeled, seeded, and julienned (optional) but tasty and crunchy

*fresh cilantro chopped (optional)

*sprinkle of chopped peanuts ( optional) but extra added crunch if you have them on hand

*dash of hot chili oil ( to taste) I usually just throw in a dash of this.

Directions:

In a small mixing bowl, using a fork or a small wire whisk, beat the peanut butter together with the water until it is smooth. Add the soy sauce, vinegar, sesame oil, cayenne pepper, sugar, and salt. Beat till smooth. If you’re adding hot chili oil this is when you would add that.

Add the chopped garlic, and stir well. Because I was using it the next day, I left out scallions till I cooked pasta .

Cook pasta according to directions. Drain immediately and rinse under cold water, until noodles are cooled down sufficiently. Place noodles in a large bowl, drizzle with the 1 tablespoon of vegetable oil and toss well. Refrigerate noodles until you are ready to serve. About an hour or so before I am ready to serve, I pour sauce over noodles and mix well. Make sure sauce has been left out at room temperature for a while till it’s not too cold.  Add the scallions and cucumbers and mix well. Right before serving you can sprinkle the cilantro and chopped peanuts if you like. I pour about 2/3 of the sauce over noodles and mix well, adding more sauce as I feel necessary. I definitely didn’t use all of the sauce that I made, add slowly and taste as you go along.  Right before serving I usually add some more sauce, but leave it out at room temperature. This is a deadly go to leftover the next day.

Orzo with Feta, Tomatoes and Mint

IMG_7873IMG_7872 IMG_7864 IMG_7863Totally delicious and fresh tasting that’s what this is. Looking for an easy,  fresh side dish?  This could be it. It’s very easy and took about 1/2 hour to make whole recipe and I served it alongside Mustard Glazed Salmon for dinner. Mint gives this dish the most wonderful layer of flavor, don’t leave it out.  Easy, quick and packed full of flavor, you can even add crushed red pepper for a little heat if you like.

Perfection!!!!

Ingredients:

1 pound orzo pasta

1/4 cup olive oil plus 1/8 cup olive oil

1 medium shallot, finely chopped

1 clove garlic, minced

1 pint cherry tomatoes, quartered

1 cup or more feta cheese use as much or as little as you like but at least 1 cup for that tang and bite. I used crumbled feta which makes it a little easier to work with. Block of Feta is fine and equally delicious, you’ll just have to cut it up.

1 cup or more arugula ( I used a little more) but use at least 1 cup

1/2 cup fresh mint , chopped ( don’t omit)

3 Tablespoons white balsamic vinegar

1 teaspoon kosher salt ( you may want to taste before adding this , I used 1 teaspoon )

1/4 teaspoon freshly ground black pepper ( you may want to taste before adding this as well, this is what I did)

Directions:

Prepare orzo according to box directions for al dente and make sure you add salt to water

While the pasta is cooking, heat 1/4 cup of the olive oil in a large sauté pan over medium-low heat. Add the shallots and garlic, and sauté until the shallots soften and the garlic is fragrant, about 3 minutes on a very low heat. Be careful not to burn! Add the cherry tomatoes, and then heat for another few minutes and then I put heat on the lowest setting and let tomatoes just sit on stove-top while orzo cooked. ( about 5 more minutes)

Add tomato mixture to a large bowl along with the feta, arugula, mint and balsamic vinegar.

Drain the orzo and allow to cool a little bit. Add it to the bowl, and drizzle app. 1/8 of a cup of olive oil. Toss well . Taste for Salt and Pepper, I added 1 teaspoon kosher salt and 1/4 teaspoon ground black pepper. Adjust seasoning to your taste.  I put it in refrigerator till we ate dinner, it can be served cold or warm, delicious either way.

Toss and Serve.

Veggie Frittata for Mothers Day ’18

Our family  does a brunch for Mother’s Day and and this frittata is a delicious addition to any brunch. Of course we will also have Baked French Toast which is a brunch staple in this house, and lots of other tasty treats.   This is pretty delicious and a crowd pleaser. There is some prep involved so I cut up all the veggies the night before and leave them in little baggies in the fridge overnight.  Enjoy your Mothers Day from our house to yours.

Veggie Frittata

1 small zucchini , 1 inch diced (app)

1 red bell  pepper, seeded and diced (1 -2 ” diced)

1 yellow pepper, seeded and diced ( 1- 2″ diced)

1 red onion ( 1 – 2″ diced)

1/3 cup good olive oil

Kosher Salt and Freshly Ground Black Pepper

2 teaspoons minced garlic ( 2 cloves)

12 extra large eggs (let them sit out at room temperature)

1 cup half and half

1/4 cup freshly grated Parmesan Cheese

1 tablespoon unsalted butter

1/3 cup chopped scallions, white and green ( app. 3 scallions)

1/2 cup grated Gruyere cheese

Directions:

Preheat the oven to 425 degrees.

Place the zucchini, peppers, and onion on a sheet pan.( you want all the veggies the same size so they all cook evenly and at the same time) Drizzle with the olive oil, sprinkle with 1 1/2 teaspoons salt and 1/2 teaspoon freshly ground black pepper, and toss well. Bake in the oven for 15 minutes. Add the garlic, give it a toss, and bake for another 15 minutes. Remove from the oven and turn the oven down Rome and Thanksgiving 053DSCN2293IMG_1999IMG_1438DSCN2950DSCN3141to 350 degrees.  This can be done one day ahead and leave in a container in the fridge till you’re ready to use.

Meanwhile, in a large bowl, whisk together the eggs, half and half , Parmesan, 1 teaspoon salt and 1/2 teaspoon pepper.

In a 10″ ovenproof sauté pan, melt the butter and sauté the scallions over medium-low heat for 2 minutes. Add the roasted veggies to the pan and toss with the scallions. Pour the egg mixture over the veggies and cook for 2 minutes over medium=low heat without stirring. Transfer the pan the oven and bake the frittata for 20 – 30 minutes, until it is puffed up and set in the center. Remove from oven and sprinkle with the Gruyere and bake for another 4 minutes or until the cheese is just melted.  Put the pan right on the table and cut wedges and serve hot! Couscous Salad, Real Mediterranean Style

It’s springtime so I am thinking of lighter food, and of course salads come to my mind. I make this recipe with couscous or quinoa. I have another recipe for quinoa on my website so I figured that I would make one with couscous this time, but feel free to use either one. The dressing has a definite Greek flavor. This dish is perfectly tasty and served with grilled fish or chicken you have a perfect meal. As far as salads go, this one is perfection. This is not an exact science; if you like a lot of tomatoes, add more. If there is another item here that you don’t like, feel free to substitute, and I’d love to hear what you did. I love to hear variations on my recipes. This is so quick and easy to assemble. Can definitely be made ahead of time.

Ingredients: 

Vinaigrette:

1 clove garlic, finely minced

1 teaspoon Dijon mustard

2 tablespoons red wine vinegar

1 /2 teaspoon dried oregano (if you like to use fresh, use 1 teaspoon of chopped fresh oregano)

Kosher salt and freshly ground black pepper to taste – I started with a 1/4 teaspoon of Kosher Salt and a few grinds of the peppermill.

1/4 cup extra virgin olive oil (use a good one)

In a medium bowl, combine all ingredients and whisk in the olive oil slowly. Adjust the salt and pepper and set aside.

Ingredients for Couscous:

Prepare 1  box (usually 10 – 12 ounces) couscous (or quinoa) according to the directions but use 1/4 less water than it calls for. For example, the Near East Couscous calls for 2 cups of water or broth so I would reduce by 1/2 cup. After cooking, allow to cool for a bit then stick in the fridge for about an hour. I usually cook my couscous in either chicken broth or vegetable broth for extra added flavor.

1 pint of cherry or grape tomatoes, sliced in half (I like a lot of tomatoes, so use more if you do too) I tend to like my tomatoes cut into smaller pieces but cut however you like just don’t leave whole

1 cup pitted black or Kalamata olives (I prefer Kalamata because they are saltier)

1 roasted red or orange pepper (you can use from jar) I just eyeballed from the jar, use as much as you’d like

1 cup garbanzo beans (drained from the can are fine)

6 ounces cubed feta cheese

1/4 cup sliced green onions or chopped red onion would work quite well here as well

* chopped cucumbers would be a nice addition as well, I didn’t use this time

In a large bowl, gently toss the couscous, tomato, pepper, olives, beans and feta. Add the dressing, transfer to a lovely serving bowl and there you go. This is so delicious and light, it’s a perfect side dish and a beautiful salad .

Cinco de Mayo Salad and Green Goddess Dressing

photo (2)photo (5)photo (2) photo Happy Cinco de Mayo!!! This salad is fresh and delicious and perfect for celebrating the day. If you’d like add a protein to it — chicken , shrimp or even tofu. May is here and it brings warm weather and beautiful flowers and springtime has finally arrived here .  This is a perfect way to bring a little Cinco de Mayo into your home in a pretty healthy way.

Any excuse to celebrate a holiday with a new recipe! Happy Cinco de Mayo everyone and here is a new salad and salad dressing to help celebrate with. While I am not a vegan and don’t always cook that way,  I tried this salad dressing which I found in Gwyneth Paltrow’s cookbook, “It’s All Good”, and I have to say it is all good! All good ingredients. I am not talking diet food–just good, healthy food, that when eaten in moderation, yields very good results. I used * Vegenaise in making this and highly recommend it in the place of mayonnaise. You can also use yogurt in its place. This is low salt and low sugar. Delicious, fresh ingredients. I made it with the delicious salad listed below. I love love cilantro, and I have to say that if you don’t love cilantro, this one’s not for you. I used half of a jalapeno and it was not hot at all, next time I will use a little more.  I scraped the seeds out. Be very careful handling jalapenos and their seeds–make sure to wash your hands well afterwards and maybe wear gloves to prevent any problems.

*This dressing will keep well in a jar for up to a week.

*a little story about Vegenaise, which is lighter than mayonnaise and contains no eggs, milk or animal products. No GMO’s (Genetically Modified Organisms). Mix it with Dijon for great flavor in the place of real mayo. Extra added bonus is a great jar to store future salad dressings in.

Ingredients:

*this will be vegan if you use Vegenaise

DRESSING INGREDIENTS:

2/3 cup of Vegenaise, yogurt, or mayonnaise

2 scallions, white and light green parts only, chopped

1/4 cup freshly squeezed lime juice (about 4 limes)

1/2 green jalapeno, roughly chopped (you can use more or less, whatever level of heat you like)

1/2 cup extra virgin olive oil

1/2 teaspoon kosher salt

1 tablespoon honey

DRESSING DIRECTIONS:

Blend all ingredients in a blender except for olive oil (I open the top and pour oil in after all other ingredients are combined.) It is a beautiful light green color with specks of dark green. Joel was definitely suspicious of the color but he really loved it! Gave it a big thumbs up!

This should serve 4 nicely as a salad but adjust quantities based on how many people you are feeding.

SALAD INGREDIENTS:

About two hearts of romaine Lettuce, shredded

1/2 can of yellow corn (or 2 fresh ears of corn, shucked)

1/2 can black beans (I use organic canned beans and rinse and drain them)

4 scallions, white and light green parts only, thinly sliced

1 ripe avocado, cut into chunks

approx. 1/2 cup chopped tomatoes (I used delicious cherry tomatoes, halved)

1/4 cup roughly chopped cilantro

Green Goddess Dressing (see above)

If you’re using fresh corn, you’ll have to cook it first. I used the canned version this time. Place the lettuce in a large bowl and dress it with about 1/4 cup of the dressing, just so it’s nicely coated. I then added beans, tomatoes, scallions, avocado, cilantro and corn. Add a little more salad dressing, and serve immediately. Joel likes a lot more dressing on his salad so I served with dressing on the side. And no he didn’t eat all that stuff in the salad; he just ate lettuce and tomatoes…he really doesn’t know what he’s missing!
