Spicy Stir-Fried Asparagus with or without chicken/shrimp

This recipe caught my eye in the NY Times cooking section . The spicy part was what intrigued me the most. I usually make stir fry with a variety of ingredients and use sesame oil. This recipe calls for vegetable oil, and I  just used 2  tablespoons.  You may need to add a little more oil, so add as needed. I made this with just asparagus and brown rice, and chicken. It would be great with shrimp as well. I highly recommend it both ways, and now that the asparagus is so sweet it’s the best time. I have to admit I used a lot of seeds from the jalapeno and it was kick ass, you can remove most of the seeds of the jalapeno and just chop up the pepper, or any other fresh hot chile ( serrano). Pasta with Avocado and Tomatoes–Fresh and Easy

What a wonderful pasta to make using delicious avocadoes! Fresh and easy as can be. Big thumbs up for summer cooking at it’s easiest. I love pasta and I love avocado– what more can you ask for and a no-cook sauce all at the same time! Enjoy for lunch or dinner.

Don’t want to go out, don’t want to really cook a lot and I had lemons and garlic. I love avocados, its possibly my most favorite fruit yes, it is technically considered to be a fruit.  I sometimes have them for breakfast , lunch and dinner . I don’t care, I love them. So for all of you avocado people this one is for you for sure.  I think this whole thing took me all of 20 minutes from start to finish. I used 1/2 a box of spaghetti so I would double for 1 lb. Hate to admit it but I ate almost the whole thing by myself. It was that good! Lemon Blueberry Loaf Cake

Even if it doesn’t look like Summer out there right this minute it’s time for summer baking and nothing beats blueberries and lemons. Light and Delicious –a perfect little cake. Easy to make and easy ingredients. Enjoy!

photophotoDSCN0186I am clearly obsessed with everything blueberry and everything lemon. So a loaf cake with both was most definitely in order.  It doesn’t get much better, yum! I had a lot of lemons in the house and this took 3 large lemons to get the right amount of zest. I ended up with 2 lemons that look naked without their peel, but I am certain I will find some use for them. This really is a delightful combo and how perfect for a quick loaf cake. I will probably freeze this cake for a later use. You can even cut in half and eat part of it now and freeze the rest. I am a big fan of freezing baked goods, as long as you wrap them well and don’t keep frozen more than 3 months. If you’re in the market for another new recipe for blueberries, here you go. Lemon Garlic Chicken with Green Beans and Potatoes

This is one of the best chicken dishes ever!!! Super easy and you will look like a pro. Nothing exotic just chicken and a few easy to obtain ingredients. Beautiful and delicious! Perfection on a plate! Enjoy!!

photo 2 (2)I love one pot meals. I think they have become my most favorite kind of meal to make. This one is so delicious and perfect. Chicken was cooked perfectly and the lemons caramelized in the pan adding a delicious flavor to the chicken and potatoes and beans. We thoroughly enjoyed this and it is a perfect recipe for all year round. I made it with 2 chicken breasts for the 2 of us, this recipe should serve 4 beautifully according to directions with 4 breasts. You will need a large baking dish or you can make in a cast-iron skillet. The prep is pretty quick and the shopping is easy. Nothing exotic here just good old cooking with easy ingredients. Enjoy!

Baked French Toast — all time best

If you are considering making breakfast/brunch/lunch for Mother’s Day this has to be your go to recipe. I think it’s the best French Toast and so super easy. I usually make it twice a year–and there is never a single piece left. Any one who has ever eaten this will agree. Simply Amazing. DSCN4294I posted this originally back in October 2011 for Yom Kippur break fast. It is truly one of the best French toast recipes I’ve ever made.  I include it every year since my friend Ilene Stern gave it to me. I never have a single piece left. Delicious and decadent, perfect brunch and breakfast food. I almost always include it in my Mother’s Day Brunch as well. Once you’ve made this recipe there is no turning back, your whole family will love it and you’ll have to make it every time.

The only downside is that you must prepare and refrigerate the night before without cooking it, you cannot cook this dish till you’re ready to eat it, the bottom will get hard like a caramel candy would. So cook right before you’re going to serve. Enjoy!

Happy Anniversary CWC #4

Here I am in my pajamas working on my computer. Trying to plan out my next recipe!

I can hardly believe that 4 years have gone by since I started Cooking with Candi. It started as a labor of love and continues to be for me. It is even more satisfying today than when I started . I have so many more subscribers that I interact with and so many people in the blogosphere that have been so supportive. Instagram and Facebook have both been a tremendous boost. Here’s to a new year with more new recipes and of course my tried and true “oldies”.

Thanks to all of my subscribers for your continued support of this pet project of mine. Hope to continue sharing with you for many years to come. I appreciate all of your support and your input in helping me achieve my goals.

I have had a rough couple of months since my shoulder surgery but am on the mend and the good news is that I have a whole bunch of new recipes which I plan on trying out as soon as possible. Tonite is going to be my first time back cooking in the kitchen, We are so tired of take out food!!! Can’t wait to try out some of these new recipes and pass them on to all of you.

Parmesan Roasted Cauliflower

Looking for a delicious side-dish with cauliflower? This is a hands down winner . If you missed this the first time around here’s another shot at it. Of course if you don’t like cauliflower don’t even bother reading but if you’re like me and can’t get enough of this vegetable this one’s for you. It’s simple and delicious. Enjoy!

photo 2 (5)photo 3 (4)photo 4 (4)This side dish is so very easy to prepare and so very tasty.  I love cauliflower and it is readily available throughout the year and is a member of the high fiber food club.  While cauliflower may not be very colorful it is one of the healthiest foods out there. This member of the cabbage group is vitamin-packed , high in anti-oxidants, contains anti-inflammatory benefits, increased blood flow and is low in carbs and fats. Granted I am adding some fat here with the parmesan cheese but the cheese packs a wallop of flavor to this dish.

Cauliflower is also good just roasted with olive oil, salt and pepper, and you can always add some other spices.

No special equipment required here and not a lot of ingredients. Just a nice sharp knife to cut the cauliflower into florets and a large rimmed baking sheet.

Kale Quinoa Bake

This is a new recipe that I got from Jessica Seinfeld’s “Do it Delicious” Blog. My friend Cathy told me about it and she was right and once again Jessica Seinfeld hit it out of the ball park. Banana and Blueberry “Ice Cream” not Ice Cream Frozen Dessert

Let’s think dessert and let’s think “light” dessert. This is so delicious and even has a creamy consistency just like ice cream. No dairy , just fruit and a food processor. This is a great one for the kids. Use whatever fruits you prefer. I used Bananas and Blueberries this time. Also check out the Banana Not Ice Cream Ice Cream Recipe on my site. photo 4photo 3This was a delicious variation of the Banana non ice cream I already posted back on May 29, 2013.  I had bought a lot of bananas and had a giant tub of blueberries so without any milk I made this for my dessert and it tasted so creamy and delicious that it was hard to believe it was not real ice cream.  The natural creamy consistency of bananas makes this taste like real ice cream and yet it’s a delicious frozen treat that’s actually dairy-free.

The only thing is that you have to prep by freezing bananas overnight.

Perfect for little kids. No nuts, No milk, No nothing but fruit and a pinch of salt.

Go for it and you certainly can try and mix it up by using bananas and strawberries, raspberries, etc.

New Salad Dressing–Pollan Family Table

Let’s lighten it up after all that Holiday food over the weekend. Here is a delicious light salad dressing served over any salad you like with some protein is a perfect way to start the week. Even though I am unable to cook for the next few weeks due to shoulder surgery I will re-blog some of the recipes that I would be cooking around now. Enjoy it for me!

IMG_6099IMG_6093IMG_1488IMG_6094 I am in love with this new cookbook “The Pollan Family Table” . If you’re in the market for a new cookbook I highly recommend it. I made the “Pollan Signature Salad Dressing” tonight and it is delicious. Here is the recipe for the dressing, I used greens, candied walnuts and pears and shaved parmesan.  You can use it on any salad you like. You’ll need a tight-fitting jar or another jar that you can keep dressing in. I also did it in a blender but you can use a bowl and whisk it together and use right away. I was making it for later and I like the way a blender emulsifies the dressing . I love a Ball Bell Jar to store dressing in.
