Baked Balsamic Chicken Parmigiana

As all of you know from reading my blog and following my recipes I have truly embraced the one pan meals. They are so super easy to prepare and cook not to mention cleaning up is pretty snappy.  I threw this recipe together the other night and I have to say it was pretty tasty.  Juicy roasted tomatoes and balsamic vinegar act as a delicious sauce for this wonderful week-day meal but why not for the weekend as well? You’ll love the tomato balsamic sauce not to mention melted mozzarella cheese! This is a keeper and the little bit of red onion added another delicious layer of flavor to this tasty dish. Ingredients:

3-4 skinless chicken breasts ( I used 3 breasts for the two of us) 1 nice size chicken breast per person is probably a good guess.

2 Tablespoons Olive Oil

1 Teaspoon Italian Seasonings — if you don’t have this use 1/2 tsp. dried basil and 1/2 tsp. dried oregano

1 Teaspoon Kosher Salt

Freshly Ground Black Pepper to taste

2 Teaspoons of Garlic Powder — divided or use 1 1/2 Tablespoons Fresh Garlic which would probably be 5-6 garlic cloves

1 cup cherry or grape tomatoes which I left whole if you’d like for a mushier sauce you can 1/2 the tomatoes

1/4 red onion, peeled and thinly sliced

1/4 cup balsamic vinegar

1 Tablespoon packed brown sugar–if you want to omit the sugar you can — I used it

3/4 cup to 1 cup Mozzarella Cheese — I used shredded

*you can garnish with fresh chopped parsley or fresh basil

Directions:

Preheat oven to 400 degrees.

Place chicken breasts in a sprayed ( Pam or any other baking spray you like) and drizzle with the olive oil. Season with dried seasonings and if you’re using fresh garlic 1 Tablespoon of it here.

Rub seasonings all over the chicken.  Put tomatoes and red onion around the chicken in the baking dish.

Whisk together the balsamic vinegar, sugar and garlic powder or remaining 1/2 Tablespoon of fresh minced garlic. Pour over the chicken breasts and flip each breast to evenly coat.

Bake in pre-heated oven for app. 20-25 minutes depending on the thickness of your chicken breasts or until chicken is no longer pink in the middle. You can cut into a piece to check for doneness.

When chicken is cooked through sprinkle with cheese and set oven to broil for 4-5 minutes or until cheese is melted .

This would be delicious served over rice or pasta but we just ate it as is and it was pretty delicious on its own.

Sheet Pan Chicken –Meditteranean Style-String Beans and Potatoes

I love one pan and one pot dinners! Just amazing! This is an easy no-fuss meal cooked in the oven on one sheet with a marinade that has a distinct Meditteranean flavor from the lemon juice, olive oil and oregano.  Use chicken thighs or legs , I prefer dark meat for this but if you insist on using white meat –go ahead. Some green beans and potatoes make this a one pan staple. Delicious and Nutritious. Did I mention super easy to clean up? It was the Golden Globes so I wanted to eat and watch without a big mess to clean up. You’ll need a rimmed baking sheet for this recipe.

Enjoy! this is for 2 +people but you can double for 4. It will probably feed 2+ but depends on your people. This is what I did for the 2 of us. We ate the whole thing! no leftovers! If you are making for a larger crowd (4 or more) either use a very large baking sheet or 2 baking sheets .

Ingredients:

1/2 lb. baby red potatoes- I quartered them but if they are very small you can cut in 1/2

1/2 lb. green beans , trimmed

2 Tbsp. olive oil plus for marinade

Kosher Salt and Freshly Ground Black Pepper, I salt chicken liberally and potatoes because they tend to be bland –see notes below on salt and pepperimg_3437

*2 Tbsp. Chopped Fresh Parsley – totally optional along with some slices of fresh lemon for beautiful presentation

 

Marinade for the Chicken- Marinate for about an hour

app. 1 package of chicken thighs– bone in , skin on . When I say 1 package it is usually a little under 2 lbs ( 6 smallish thighs)  which is more than enough for 2 people. Usually about 6 chicken thighs in a package depending on the size of thighs.

1/4 cup olive oil

3 cloves garlic, minced

Juice of 1 lemon- I used juicer because I wanted to make sure I got every drop

1 Tbsp. Red Wine Vinegar

1 Tbsp. dried oregano

Kosher Salt and Freshly Ground Black Pepper , to taste–I used 1/2 tsp. kosher salt and about 10 grinds on the pepper mill for the marinade

In a large Ziploc Bag, combine chicken, olive oil, garlic, lemon juice, red wine vinegar and oregano; season with app. 1/2 teaspoon salt and a few grinds (10-12) of freshly ground black pepper, to taste. Marinate for at least an hour, turning the bag occasionally. Remove the chicken from the marinade by draining it, discard the excess marinade.

Preheat oven to 400 degrees. Lightly spray a large size baking sheet with cooking spray.

Place potatoes and green beans in a single layer onto the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Top with chicken in a single layer. Salt is an important component here–I sprinkled a light amount over chicken and potatoes and string beans –probably another 1/2 teaspoon and a few grinds of the pepper mill

Place into the oven and roast until the chicken is completely cooked through, should register 165 degrees with a meat thermometer after about 1/2 hour . After I check for readiness I place under the broiler for a few minutes, till skin is golden brown and a little charred ( but not too charred) watch chicken for signs of burning.

Serve immediately, you can garnish with lemon slices and parsley for a beautiful presentation!

Baked Chicken, Mushrooms and Rice

This was such a delicious dinner and pretty easy to put together. I used skinless -boneless chicken thighs . Chicken Thighs are pretty forgiving in the baking dept. because they don’t dry out. I find white meat to dry out easily.  The chicken baked on top of the the rice in one baking pan! My kind of meal. Serve a salad or a green veggie alongside and it’s just perfect.

This recipe should serve 4 depending on the size of the thighs you use. 2 cups of rice is a lot of rice so that won’t be a problem. I would cut in 1/2 if doing for 2 people because it’s a lot of rice for 2. I used 1 1/2 lbs of chicken, 1 cup rice and 1 pint of mushrooms.

Ingredients:

Chicken:

2 Tbsp. Olive Oil

1 1/2 tsp. paprika

1 tsp. garlic powder

1/2 tsp. dried thyme

1 teaspoon kosher salt

1/4 tsp. freshly ground black pepper

6 nice size skinless boneless chicken thighs –app. 2 lbs.

Rice:

1 large onion chopped small

4 cloves garlic–minced

2 Tbsp. Olive Oil

1 tsp. kosher salt

1/4 tsp. freshly ground black pepper

2 cups chicken broth or chicken stock

1 1/2 cups hot water

2 cups long grain rice– Basmati Rice or Jasmine rice can also be used

Mushrooms:

3 Tbsp. Unsalted Butter

2 cloves garlic

2 pints of button mushrooms ( or cremini) cut into quarters

Salt and Pepper to taste

Instructions:

Preheat oven to 350 degrees

In a bowl , combine the olive oil, paprika, garlic powder, thyme, salt and pepper. Add the chicken and coat each piece evenly with the seasonings. Set aside, allow the chicken to sit while you prepare the rest of the meal.

Spray a large oven-proof baking dish (10 x 15 at least) with a non stick cooking spray . Add the onion, garlic, oil, salt , pepper, broth or stock, and water into the dish. Stir well to combine. Then add the rice.

Arrange chicken in the water over the rice, cover tightly with foil and bake for 40 minutes. Make sure you add the chicken over the rice towards the middle of the baking dish, this will insure the rice gets cooked properly.

After 40 minutes uncover and bake for an additional 15-20 minutes , until the chicken is cooked. Change oven setting to broil and broil for app. 3 minutes to brown the chicken and crisp the rice.

Towards the end of cooking the chicken I prepared mushrooms. Heat butter in a small saute pan over medium heat. Saute the garlic in the butter and add the mushrooms; cook until softened , season with some salt and pepper. Then once they were cooked I let them sit on the stove with the heat turned off till the chicken was done. Once chicken is done you can add a low heat and while chicken is sitting heat up the mushrooms again.

When chicken and rice is finished cooking, allow it to sit for app. 5 minutes to set all the flavors.

I removed the chicken and fluffed up the rice and added the mushrooms into the rice. Arrange chicken on top of the rice when you plate it up. If you’d like you can sprinkle some chopped fresh parsley for color and added flavor!

This list is not necessarily my favorite recipes on my blog but the ones chosen by my subscribers. While I thought it was a pretty delicious year with lots of new recipes it seems that this list is composed of a lot of oldies but goodies. Baked Salami always hits #1 and it baffles me for so very many reasons. It is a recipe I have been making since I got married in 1975 and one would think that people just don’t eat like that anymore but it consistently hits #1 worldwide. Go figure? I get the Butternut Squash Soup  and of course Mushroom Barley and Peach Farfel. Cauliflower Salad is probably one of my most favorite salads on this list. In any event these are the recipes that you have looked at the most and googled the most and made the most I assume. I have followers all over the world and it’s funny to see what people favor from different countries. Though I can’t see which one of you individually look at each recipe I do see the hits from all over .

Pasta and Vodka

IMG_6409 IMG_6410 IMG_6412Pasta is probably my favorite go to meal, and I mean Vodka? really? Add a little cream and a can of tomatoes and you’ve got a spectacular meal. You’ll also need a little fresh basil and parmesan to finish it off. It’s an easy meal and if you have the cream and cheese in the house you’re good to go. I always stock the tomatoes and I happened to have the cream in the house and there is always a bottle of Vodka in the freezer right? Fresh Basil is a wonderful layer but if you don’t have it you’ll still be fine. This pasta cooked up in no time and it was heavenly. Perfect for Meatless Monday dinner. Ingredients:

1 lb. pasta ( rigatoni type of noodle is perfect)

3 cloves garlic, minced

*1/4 teaspoon crushed red pepper– I love the heat but use at your own discretion

1/2 cup grated Parmesan, plus more for serving

1 tablespoon olive oil

app. 3/4 to 1 teaspoon of kosher salt for sauce (taste for salt) you’ll also need about 2 teaspoons to cook the pasta in

1/3 cup Vodka

1 28 ounce can whole tomatoes, I prefer San Marzano type so look for that

1/2 cup heavy cream

a few fresh basil leaves, cut up into smaller pieces

Directions:

Prepare pasta according to directions on box,  I always throw in about 2 teaspoons of salt to it. When pasta is ready , just drain. I made the sauce while the pasta was cooking.

Place a large skillet type pan on the stove (see pics) Add the olive oil and heat until it shimmers ( app. 1 minute) add the garlic and red pepper (if you’re using it). Cook garlic and red pepper and cook, stirring until soft and fragrant but not browned, this should be less than a minute. Add the vodka and cook down the vodka until it is nearly evaporated. Add the tomatoes and remaining 3/4 teaspoon of kosher salt (start here and add to your own taste) bring to a boil (breaking up the tomatoes with a wooden spoon as they cook down) A little trick I use is to use a potato masher and push down on the tomatoes while they’re cooking, just be careful and do it slowly because you wouldn’t want to get burned by some hot tomato sauce.  Lower heat to medium-low and simmer for 30 minutes. Add the cream , basil and grated Parmesan and bring to a boil , then reduce and let flavors marinate for about another 1/2 hour on a very low heat. I continue breaking up the tomato bits. Add the cooked pasta to pot and stir to coat the pasta!!!!  Serve it up!!!!! A-mazing meat-less meal.

*if you like sauce “less tomatoey” without big chunks of tomato you can use an immersion blender once it’s cooled down < I will usually wait a bit till it’s just warm then add the cream then use blender stick or actual blender. If you really like “no chunks” use crushed tomatoes , I like the chunks but my grandkids don’t so I will use immersion blender or just crushed tomatoes .

Kitchen Sink Soup with Hamburger

It’s that time of year when a really delicious soup hits the spot. I haven’t made this one in a while but am putting it on the top of my list of “to make”recipes. Warm and cozy and yummy! Winter is upon us folks.

You’ll need some Beef Stock, some tomato paste, some garlic and a few other ingredients and you get this warming wonderful soup for the cold days ahead. I also made awesome little parmesan crisps to serve with soup. It’s hearty enough to eat as a meal and very enjoyable. I love soup as a meal and when it contains protein and vegetables it’s a truly hearty enjoyable meal.

I used orange, red and yellow peppers but green peppers are perfectly fine. I really did use what I had in the house so you should try to do the same. Red Potatoes were perfect because they are thin-skinned and hold their texture and shape well.

Sheet Pan Shrimp with Vegetables and Rice

We have been on a roll of eating out lately and as wonderful as all the food is we just wanted a night home with no take-out and some home-cooked food. IMG_6861IMG_6863 I decided to try this recipe and it came out perfectly. I so seldom use the broiler to cook but it worked out so well I must pass this one on. Sheet Pan cooking has become one of my most favorite ways to cook for so many reasons most obviously the speed in which everything cooks together in one pan!!!! So amazing.

The whole prep , cook and plate was under an hour! Actually way under an hour. Simple ingredients and pretty light in the calorie department. Give this one a try soon — you’ll thank me for it. This is what I did. You’ll need a large rimmed sheet pan.

Ingredients:

2 Tablespoons Olive Oil

1 Tablespoon Minced Garlic –app. 3 cloves garlic

1/4 teaspoon crushed red pepper

1 lb. raw large shrimp, peeled and deveined ( remove tails)

1 pint grape tomatoes

1 medium zucchini, cut on the diagonal into 1/2 inch slices

1 medium size yellow squash, cut on the diagonal into 1/2 inch slices

1 Lemon, cut into quarters

1 1/2 teaspoons fresh thyme leaves, divided

 

1/2 to 1 teaspoon kosher salt – I used almost a teaspoon ( mix well with salt and pepper and give it a taste)

1/2 teaspoon freshly ground black pepper

I used a pouch of Jasmine Rice — you can cook up whatever kind of rice you’d like. I had a pouch in the house and the Jasmine Rice is so delicious not to mention how easy the pouch is. For 2 people 1 pouch for 4 people 2 pouches

Directions:

I sprayed the sheet pan with Pam Cooking Spray.

Preheat the oven on the broiler setting with oven rack at least 6 inches from the heat.

Stir together the olive oil, garlic, crushed red pepper and 3/4 teaspoon of fresh thyme in a small bowl. Place Shrimp and Tomatoes in 2 separate bowls. Combine zucchini and yellow squash in a third bowl. Toss each with one-third of the oil mixture.

Heat a rimmed baking sheet in the oven for 2 minutes. Add zucchini, squash and lemon quarters (flesh side up) to hot baking sheet and bake until squash begins to soften, about 5 more minutes. Add the tomatoes after the initial 5 minutes and bake for another 5 minutes until tomatoes begin to burst. Stir in Shrimp and bake until shrimp are cooked through and zucchini is tender and lightly browned, about 5 minutes. Remove from oven and sprinkle with salt and pepper. Squeeze juice from the roasted lemon over veggies and stir to combine.

Cook rice according to package directions. Divide rice, shrimp and veggies among your plates. Top evenly with remaining thyme if you wish. Yummy!!!!

 

Easy Skillet Lasagna

This was truly one of the most epic meals! The whole meal in under an hour, and yes that’s lasagna folks. While I love a real lasagna I didn’t have the time to put the whole thing together and deal with it. Once you have the ingredients the prep time is minimal and you aren’t using store bought sauce , this is with sauce you make and I can’t say enough about the way it tasted! This can be done a few different ways and I invite you to play around with the ingredients and spices to your own liking. All I can say is Wow!  Delicious! Joel was very happy with our Sunday night dinner, I should have taken a picture of the big smile he had on his face when he saw this on his plate.  All in one pot is truly a great way to cook, no fuss, no muss and no having to deal with cooking lasagna noodles!!!!!! Yeah!

This can easily be made with ricotta cheese and spinach or any veggies you like. I would even try it with cut up eggplant!

*You’ll need a large oven proof skillet with lid

Ingredients:

1 to 1/2 Tablespoon Olive Oil–I used 1 1/2 you can start with 1 and add more to onions if you need it

1/2 lb. ground beef ( I used 80/20)

3 Italian sausage links, casings removed ( I used Hot Italian Sausage) use what you like , you can use turkey or chicken sausage as well

1 onion, diced

1 14.5 oz. can diced tomatoes

1 8oz.can tomato sauce

*Italian seasonings , if you have Italian seasonings in a jar that’s great if not use a little dried oregano and dried basil. Italian Seasonings is available in the spice department of all food stores.

*1/2 teaspoon crushed red pepper

App. 1/4 tsp. Kosher Salt and more to taste

2-3 garlic cloves, minced

app. 10 lasagna noodles, broken into 1/4’s, if it breaks up differently don’t worry it’s a very loose recipe! 8 ounces Farfalle Pasta also works if you don’t feel like using the lasagna noodles. Un-cooked Noodles!!!!!

8 oz. mozzarella balls ( fresh) I used the small ones this time. Use whatever cheese you like but these worked out beautifully.  You can always use shredded mozzarella, or just cut a large ball of mozzarella into small pieces ( as much or as little as you’d like) if using shredded mozzarella, you’ll need about 1 cup

2 cups water

Freshly grated Parmesan Cheese for serving

*you can also use 1 cup Ricotta Cheese for a very cheesy version, I would use this if I was making it with spinach and going veggie.

Directions:

Heat olive oil in a large skillet over medium-high heat. Add onions and cook till translucent, add garlic towards the end of onion process. Add ground beef to the onions, stirring occasionally till browned. I removed with slotted spoon and set aside in a bowl. I then cooked up the sausage making sure to crumble the sausage as it cooked.  I then removed sausage to bowl with meat , onions, and garlic and drained all excess fat from pan.

Pre-heat oven to Broil

Return meat to pan, add tomato sauce, diced tomatoes, spices, add 1/4 tsp. kosher salt to taste, if you need more add it. Add in the meat mixture and stir, bring to a simmer and add in broken lasagna pieces and 2 cups of water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13- 15 minutes for al dente. I stirred it gently a few times just to make certain that the noodles cooked through and didn’t stick together.

Remove from the heat . I placed my Mozzarella on top and placed in oven under broiler for about 5 mins. Check on it because you don’t want it to blacken. All ovens are different, in mine it needed about 6 minutes to just start browning without burning, but you don’t want to burn this up so set timer and keep an eye on it!

Remove from the oven and let it sit out for a few minutes. Plate it up and let everyone add their own parmesan cheese! Enjoy! you will.

Couscous and Butternut Squash Salad with Kale or Arugula –Perfect Autumn Salad

It’s the Monday after Thanksgiving weekend and it seems like we all need a definite break from heavy eating. This is a most delicious alternative to a heavy meal and feel free to add a little protein if you must. Enjoy!

This salad always makes me think of the Fall and the Winter.  I suppose it’s due to the butternut squash . This salad would really be delicious anytime of the year and if you added a protein it would make a delicious dinner salad. I made this salad the other evening and it was just perfection on a plate. Beautiful to look at and delicious to eat. Fairly Healthy and you can keep it vegan without any dairy or add cheese for a delicious vegetarian salad .  It takes a bit of prep work but you can prep a few hours ahead and be done with it prior to the meal which is always a good thing in my book.

I prepped butternut squash and couscous and used baby arugula this time. I dressed the salad and let it sit , Kale is better when it’s soft and broken down so…
