Saucy Stuffed Shells – Baked and Meatless

  I just love a baked pasta — nothing like it for good old fashioned comfort food. This recipe is delicious and perfect comfort food for those cold winter nights. I wanted a crowd pleaser that was vegetarian and something that can easily be made ahead and frozen and that would appeal to both kids and adults equally.

     I served with a salad with my Homemade Maple Syrup Salad Dressing ( see on blog) and it was really pretty awesome. Took a few hours to prepare, mostly because I made my own sauce ( Sunday night sauce) but feel free to use a jar of prepared sauce if you’d like. This is a perfect meal to make ahead of time, and just pop into oven.

*This dish will stay fresh in the freezer for up to 3 months. Assemble the shells with the cheese and cover tightly and freeze. When you’re ready to eat, you can bake from frozen but be sure to add another 30 minutes to the cooking time. You can also freeze individual sized portions of leftover shells that have already been cooked. Reheat previously baked shells in the microwave in 90 second intervals until heated through. 

Perfect for Christmas and New Years.

Of course if you love it with meat you can make a meat sauce and follow same directions.

Ingredients:

1 box Jumbo Shells ( you won’t use all but a lot of them break, etc.)

1 lb. Ricotta ( I used Part Skim)

1 Egg

1 lb. Mozzarella Shredded ( I used Part Skim) if you can obtain fresh mozzarella and shred it that would make it even better! whatever works for you

1 cup grated Parmesan ( any kind you like)

1/4 cup chopped flat leaf parsley

Salt and Freshly Ground Black Pepper

*marinara sauce or any red sauce I made my own and use my own recipe. If buying sauce and there are some delicious good sauces out there, you’ll need at least 1 large jar of Sauce and my go-to if not using my own is Raos Marinara.   It’s nice to have a little extra sauce in case you need it when you re-heat the stuffed shells. 

Directions:

Preheat oven to 375 degrees.

Prepare Pasta , cook for between 12 and 15 minutes, you’ll want them soft but not undercooked at the center. Drain pasta and cool for easy handling.

Combine ricotta, 1/2 of the mozzarella, 1/2 of the Parmesan, parsley and egg in a bowl. Taste for Salt and Pepper.

When shells have cooled down, fill them with rounded spoonfuls of cheese mixture and arrange them seam side down in casserole dish. I used a 9 x 13 Pyrex and spray with cooking spray. Top Shells with remaining sauce and remaining mozzarella and grated cheese. Place shells in very hot oven . You can turn on broiler for last few minutes , it should be slightly browned and bubbly. Let cool for a few minutes before serving.

Italian Wedding Soup made with Chicken Meatballs

It is most definitely soup season again. the chill in the air makes it the most perfect time of year to start making soup for dinner again. even if you live in a warmer climate this is a most wonderful meal. Paired with a salad and some crusty bread you have a very heartwarming meal.

Italian Wedding Soup with Chicken Balls

This is one of my absolute favorite recipes. It is a soup , which is also a full meal. It is hearty and pretty healthy.  It is one of my staples from September through April. It freezes well and you can just take it out of the freezer the night before, and you’ll have a wonderful meal the next evening. When you defrost it you will probably want to add broth/water to it. add a little at a time till you get the consisitency you like. Enjoy:)

Ingredients: chicken meatballs

1 lb. ground chicken–I prefer chicken to turkey but you can use turkey as well!

1/2 lb chicken sausage, casings removed–if you can’t find chicken sausage use pork sausage it’s delicious! 

3 slices whole wheat bread for bread crumbs ( I put into food proccesor with steel blade for crumbs) I remove crusts it should be app. 1 cup of bread crumbs or if you’re feeling lazy try Panko

2 teaspoons minced garlic ( 2 – 3 cloves)

1/4 cup grated Pecorino Romano ( fresh is best) but whatever you have will do

1/4 cup grated Parmesan ( again nothing beats fresh) but whatever you have will do here as well

3 tablespoons milk

1 extra large egg, lightly beaten

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Soup Ingredients:

 

 

2 tablespoons olive oil

1 small -medium yellow onion minced

1 cup diced carrots ( 3 )

1 cup diced celery (2 stalks)

10 cups chicken stock

1/2 cup dry white wine( use whatever you have open)

1 cup small pasta tubetini, ditalini, stars, elbows etc. 

5 ounces fresh spinach, washed and trimmed

*fresh dill ( I love the flavor) add at your own discretion about 1/4 cup minced fresh dill.

Directions:

preheat the oven to 350 degrees  put parchment paper on a cookie sheet.

for the meatballs, place the ground chicken, sausage,bread crumbs, garlic, Pecorino, Parmesan, milk, egg, salt and pepper  all in a bowl and mix well with a fork.  I use a teaspoon, and make 1 to 1 1/2 inch balls and drop onto parchment paper lined cookie sheet. you should have about 30 to 40 small balls. bake for 25 – 30 minutes, until cooked through and lightly browned. set them aside. (I made about 30 balls, they were a little larger this time out)

For the Soup:

 heat the olive oil over medium – low heat in a large heavy bottomed soup pot ( Le Creuset type pot) Add the onion, carrots, and celery and saute until softened, about 10 minutes, don’t brown. Add the chicken stock and wine and bring to a boil, at this point I let soup cook a while to soften the vegetables, app. 1 hour. ( a low simmer) if you’re in a hurry you can probably do the whole soup in 1/2 hour , veggies will be soft enough to eat. if some of the liquid evaporates you can always add a little more broth.

 Add the pasta to the simmering broth and cook another 6 – 8 minutes, until the pasta is tender. Sometimes I just cook the pasta up in a separate little pot and pour the soup over the pasta when I plate it up, this helps with the freezing just the soup and meatballs and the pasta stays al dente. Add the meatballs and simmer for another minute or so. taste for salt and pepper. Stir in the fresh spinach and cook for another minute or so, the spinach will just wilt. Ladle into soup bowls and serve with freshly grated Parmesan cheese.

Sheet Pan Chicken Thighs with Mustard -Lemon and Garlic with Brussels

Very delicious weeknight meal for the family or for just you! It’s easy and all in one pan with Brussels and red onions. Easy to put together, just try and marinate chicken for how ever long you can — at least 30 minutes and up to 48 hours in the fridge. The marination process is key — I did it for about 6 hours in fridge and removed from fridge to bring to room temperature before cooking.

I don’t recommend using chicken breasts in this recipe as they tend to dry out. So use chicken thighs to get juicy and delicious tasting chicken.

Enjoy this meal bursting with flavor!

You’ll need a rimmed sheet pan, a large glass bowl, a small bowl, and I recommend using a kitchen thermometer which if you don’t have one you should own for cooking chicken.

Ingredients:

2 pounds of chicken thighs ( about 6 ) bone in , skin on

3 Tablespoons Olive Oil ( divided)

1 Tbsp. Italian Seasoning ( available dry in most supermarkets)

2 tsp. Kosher Salt

app. 1/2 ground black pepper

2 Tbsp. fresh Lemon Juice

1 heaping Tbsp. Dijon Mustard

1 heaping Tbsp. stone ground Mustard

app. 10 oz. Brussels sprouts trimmed and cut in half if very large cut in 1/4s and if very small leave whole

1 Red Onion cut into 8 wedges

6 cloves garlic minced

Directions:

To marinate the chicken, pat dry the chicken and put in a large bowl. In a smaller bowl add 1 Tbsp. Olive Oil, Italian seasoning, 1 teaspoon kosher salt, freshly ground black pepper, lemon juice , dijon mustard, stone ground mustard. I whisk it all together and pour over the chicken in bowl and with clean hands squish around the chicken and cover and place in the fridge. Take out of fridge and bring to room temperature before putting into the oven (probably a 1/2 hour)

Pre heat oven to 400 degrees

I spray baking sheet with cooking spray first, then place trimmed and halved Brussels sprouts on the sheet pan. I then put 6 garlic cloves in mini processor and add 2 Tablespoons of Olive oil to processor and when this is done pour over the Brussels and coat well and sprinkle the remaining 1 tsp. kosher salt and some freshly ground black pepper to them.

Bake uncovered at 400 degrees F. for 30 minutes then crisp the skin up and brown it under the broiler. I did it for about 4 minutes till I obtained a nice crispy skin. Check chicken temperature before serving but it should be 165 and perfect!

Served over rice and it was delicious.

Creamy Mashed Potatoes

photo 3 (7) photo 2 (9)This is my go to recipe for the creamiest mashed potatoes around. I make them a few times a year and mostly on the holidays. Occasionally I’ll whip them up for dinner. They are rich and delicious and just the way mashed potatoes ought to be. I’d like to tell you that I don’t use butter and cream but I do. These are pretty easy to make, all I would say is to buy a good potato masher they come in pretty handy for a lot of other uses as well ( great for egg salad) . You can also use a hand mixer which would work out perfectly.  I like to work with Yukon Gold Potatoes. This recipe is for 5 lbs. and feeds about 12- 15 people , just perfect for a holiday dinner. These are my Thanksgiving Mashed Potatoes. If you’re doing a small Thanksgiving Dinner I would cut this in half .  Just cut all the ingredients in half.

Ingredients:

5 pounds Yukon Gold Potatoes or Russet Potatoes

3/4 cup unsalted butter

1 8 oz. package of Cream Cheese, softened

1/2 to 3/4 cups half and half

1 /2 to 1 teaspoon Lawry’s Seasoned Salt ( more to taste) I used at least 1 teaspoon you’ll have to taste for yourself.

1/2 to 1 teaspoon crushed black pepper. ( more or less to taste)

Directions:

Peel and cut the potatoes into pieces that are generally the same size.

In a large enough pot to cook all of the potatoes fill pot with cold water to cover the potatoes. I bring to a boil and cook for about 30 – 35 minutes. When potatoes are cooked through, a fork should easily slide into the potatoes without resistance, potatoes should be soft but not falling apart.

Drain the potatoes in a colander. When the potatoes have finished draining, place them back into the dry pot and put the pot back on the stove. Mash the potatoes with masher over very low heat, allowing the steam to escape, before adding the other ingredients.

Turn off the stove and add 1 1/2 sticks of butter, an 8 oz. package of cream cheese and about 1/2 cup of half and half. Mash, mash and mash away.

Add about 1/2 teaspoon of Lawry’s Seasoning Salt and 1/2 teaspoon of pepper.

Stir well and place in a medium-sized baking dish and taste for salt and pepper. I ended up using at least a teaspoon of salt, and a bit more pepper.  Place a few pats of butter over the top of the potatoes and place them in a 350 degree oven and heat until butter is melted and potatoes have warmed through.

* if making a day or two in advance–place potatoes in baking dish,  leave covered in fridge. Take it out of the fridge about 2 – 3 hours before heating up to bring to room temperature. Place your butter pats on top and bake in a 350 degree oven for about 1/2 hour or so till completely warmed through.

The Stuffing that Will Be on Our Table

I made this recipe for the first time Thanksgiving 2011 and it has become my favorite stuffing.  I found it in a Barefoot Contessa cookbook, loved all of the ingredients and thought it was delicious. I know there a lot of stuffings out there and unfortunately  this one is not vegetarian.

I am not gonna lie this stuffing takes some work and a lot of ingredients but it’s well worth it .

I don’t cook my stuffing in the turkey. I make it ahead of time and cook it in a buttered/sprayed baking dish the day of.

Ingredients:

3/4 cup diced dried figs, stems removed

3/4 cup dried cranberries

1/2 cup Calvados or brandy (I used Calvados, bought the bottle last year)

2  yellow onions, diced (approx. 1 1/2 cups)

1/2 stick unsalted butter

1 cup (3 stalks) celery, diced about 1/2 inch

1 lb. pork sausage (I do 1/2 sweet and 1/2 hot. Feel free to substitute any kind of sausage you would like. Try to get the butcher to take it out of casing for you. It’s one less thing to do.)

1 1/2 tablespoons chopped fresh rosemary (please don’t leave this out)

1/4 cup pine nuts, toasted (put in oven at 400 for about 5 minutes and watch them!)

3 cups herb-seasoned stuffing mix –I use Pepperidge Farm Brand

1 1/2 cups chicken stock

1 extra large egg, beaten

Kosher salt and freshly ground black pepper

Directions:

Preheat oven to 325 degrees.

Place the dried figs and cranberries in a small saucepan and pour in the Calvados and 1/2 cup water. Bring the mixture to a boil over medium heat, then lower the heat and simmer for about 5 minutes. Remove from the heat and set aside.

Melt butter in a large saute pan over medium heat, add the onions and celery and saute until vegetables are softened and onions are translucent (don’t burn them.) Add the sausage, crumbling it as you go. Continue to saute, stirring frequently and breaking up sausage. Keep cooking for about 10 minutes, until cooked and browned up. Add the figs and cranberries with their liquid, the chopped rosemary, and pine nuts, and cook until all ingredients come together, for a couple of minutes. Scrape up and remove all the brown bits with a wooden spoon.

Place the stuffing mix in a large bowl. Add the sausage mixture, chicken stock, beaten egg, 1 teaspoon kosher salt, and 1/2 teaspoon pepper and mix well. (This can be prepared ahead and stored in the refrigerator overnight, which is what I do. It’s just too much to do the day of.)

I put the stuffing in a well-sprayed, slightly buttered (optional), baking (gratin) dish. If you put this in the preheated over, you will likely cook it for at least 45 minutes and probably more like an hour to two hours if it’s doubled.  I also stir frequently while it is cooking, and then let it go for the last 15 minutes and it browns up. Taste for Salt and Pepper.

obviously if you are doubling this recipe you will need to use a large (very) frying pan. Or you can just do it in batches. You will need a very large pan to cook it up in though. You need to spread it out while it cooks so it cooks through. Once it is cooked you can always put it in a pretty baking dish and as it heats up just mix it through every once in a while so top doesn’t burn and bottom won’t be soggy.

I know everyone thinks that their stuffing is the best, but if made properly this one is absolutely amazing!

*This will probably serve at least 8 -12 as one of many sides, but feel free to double.

Sweet and Spicy Nuts – Perfect for Thanksgiving

My inspiration for this recipe came from Barefoot Contessa. These are my go-to nuts for Thanksgiving. Just a little something to nosh on before the big meal.  These last for a while so you can make ahead and keep them in a baggie or an air tight container.  These nuts make the perfect appetizers, no one who eats nuts can resist. I also like mine with a little “kick”, you can manage the heat on these with more or less cayenne pepper or chipotle powder.

And they make a lovely edible gift to bring to dinner if you’re arriving as a guest. ( check for nut allergies first though)

Enjoy and Happy Thanksgiving from our house to yours. Also a most perfect addition for Christmas so hold on to this recipe –I only post it 1x a year!

Ingredients:

vegetable oil–just enough to brush a sheet pan plus 2 Tbsp. for nuts

7 cups of nuts (you can break it up any way you want. You can do 7 cups of roasted mixed unsalted nuts or any other combination as long as they equal 7 cups. if you can’t find unsalted nuts you can use salted but be sure to adjust the salt on this recipe as per direction below) 

1/3 cup pure maple syrup

1/4 cup light brown sugar, lightly packed

3 tablespoons orange juice (fresh or container. fresh is always best (and one orange will do the trick,) but honestly no biggie.)

2 teaspoons ground chipotle powder–I use 2 teaspoons but if you really like them mild use a little less. You can also use cayenne pepper and sometimes I use a little of both.

4 tablespoons minced fresh rosemary leaves (divide 2 tablespoons for now and 2 tablespoons for later)

4 teaspoons Kosher salt (also divided 2 for now and 2 for later. don’t add second 2 teaspoons of salt if you bought salted nuts)

Preheat oven to 350

Brush a sheet pan (prefer one with sides) generously with vegetable oil (use a brush, love the silicone brushes)

First, combine nuts, 2 tablespoons of vegetable oil, maple syrup, brown sugar, orange juice, and chipotle powder in a large bowl (I prefer a large metal bowl). Toss to coat the nuts evenly.

Add 2 tablespoons of the minced rosemary and 2 teaspoons of the kosher salt and give it a good toss (a large metal spoon works the best b/c it can get a little sticky with a wooden spoon.)

Spread nuts in a single layer on sheet pan.

Roast nuts for 25 minutes, stirring twice. You will want to take them out of the oven to stir them b/c they may slide off the tray. Use a metal spatula. Roast for the rest of the 25 minutes until nuts are glazed .

Remove from the oven, and sprinkle with remaining 2 teaspoons of kosher salt (only if they were unsalted) and add the remaining 2 tablespoons of rosemary.

Toss well and set aside at room temp.

While they are cooling, stir them up a few times b/c they may stick together.

Taste for seasoning. They really don’t achieve full flavor until they fully cool. So you won’t know how spicy they are until they sit for a while. I’ve made these a million times and can tell you that this amount of chipotle has kick, but not psycho hot.

Serve warm, or let them cool. Put them in a container and serve whenever you like. They stay good for a long time.

*just a note: you can adjust salt, rosemary, and chipotle to your liking. I have recipe for Union Square Nuts and they don’t have chipotle and are also delish but I prefer these b/c I love the heat of the chipotle!

Greek Style Chicken and Lemon Rice in One Pan

The chicken may be the main here but gotta say it’s all about this spectacular lemon rice. Rice, chicken, spinach ( and yes Joel didn’t even detect here and ate it up) I went a little lighter on the spinach for fear of spoiling it for him but go with full 2 cups of spinach if you’re family loves it. I chopped it up so it was hard to really see that it even was spinach but you can just chop it up roughly. This would be delicious served with a Greek Salad and the one I would go with is my Maroulosalata salad. Perfect!! and very delicious and I marinaded chicken from about 10 till 5 but if you can do overnight even better and if you can’t do at least an hour. One pan means less clean up which is also an extra added bonus. Enjoy this wonderful meal.

*for the chicken marinade

6 chicken thighs ( I only used 4 for the 2 of us) I go to butcher when I can so thighs are meatier if they’re very small make 8

2 tablespoons olive oil

1 tablespoon lemon zest

1/4 cup freshly squeezed lemon juice

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1/4 teaspoon paprika

1/2 teaspoon salt and 1/4 teaspoon black pepper

Ingredients:

For Chicken and Rice

2 Tablespoons Olive Oil

1 yellow onion, peeled and diced

2 garlic cloves, peeled and minced

2 cups baby spinach, lightly packed and roughly chopped

1 1/2 cups long grain white rice ( I love Carolina brand)

3 cups chicken stock/broth

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon dried oregano

*crumbled feta for end if you’d like or some lemon slices or lemon zest and a little squirt of fresh lemon juice at the end — all of this is optional and up to you. I used crumbled feta at the end ( not too much just a sprinkle) and I used a little fresh lemon juice — you can also add chopped parsley and some lemon slices for a lovely presentation

Place Chicken in a large bowl or in a large resealable plastic bag ( I used plastic bag method)

Add all the marinade ingredients to the chicken ( pat chicken dry first) and toss chicken to coat well. Seal bag or cover bowl and marinate chicken in the fridge for at least an hour and up to 1 day ahead (obvi the longer the better)

Pre-heat oven to 350 degrees , remove chicken from fridge while preheating the oven.

In a large ovenproof pot ( I used my Le Creuset dutch oven) or large skillet that is oven proof heat 2 tablespoons olive oil. When oil is very hot without burning please add chicken thighs skin side down (and reserve the leftover marinade in bowl or bag — you will be adding the liquid to the skillet later) Brown chicken about 5 minutes each side — you’ll be cooking more later this is just to get them golden and crispy. Remove chicken from pot and set aside on a plate.

Add the onions and garlic to skillet and stir cooking for a few minutes or until the onions are very soft and translucent. Adjust the heat a little if needed– don’t burn the onions.

Add the chopped spinach, oregano, salt, pepper, and reserved marinade to the pot. Cook stirring for another minute or so until spinach is wilted

Add the rice to the skillet, and stir well to coat the rice with the pan juices

Pour the chicken stock into the pot and stir well, bring to a simmer or low boil

Arrange chicken thighs on top of the rice, the cover the pot ( if no cover use aluminum foil)and place pot in the pre-heated oven. Bake for 30 minutes.

Remove the lid or foil covering, return the skillet to the oven, and bake until chicken and rice is cooked through, about 8-10 minutes. Feel free to broil for the last couple of minutes if you’re feeling like chicken isn’t crispy enough

Remove from the oven and let chicken and rice rest for 5-10 minutes. Fluff rice so that the spinach and onions that may have settled get evenly distributed. Sprinkle with feta now or extra lemon juice or parsley and lemon slices then serve straight from the pan or dish out onto plates.

Easy Skillet Lasagna

This was truly one of the most epic meals! The whole meal in under an hour.  While I love a real lasagna I didn’t want to put the whole thing together and deal with it. Once you have the ingredients the prep time is minimal and you aren’t using store bought sauce.  You will be making the sauce and it will all cook together in the pan .  This can be done a few different ways and I invite you to play around with the ingredients and spices to your own liking. All I can say is Wow!  Delicious! Perfect Sunday night dinner .  All in one pot is truly a great way to cook, no fuss, no muss and no having to deal with cooking lasagna noodles!!!!!! Yeah!

This can easily be made with ricotta cheese and spinach or any veggies you like. I would even try it with cut up eggplant!

*You’ll need a large oven proof skillet with lid

*perfect for freezing leftovers

Ingredients:

1 to 1/2 Tablespoon Olive Oil–I used 1 1/2 you can start with 1 and add more to onions if you need it

1/2 lb. ground beef ( I used 80/20)

3 Italian sausage links, casings removed ( I used Hot Italian Sausage) use what you like , you can use turkey or chicken sausage as well

1 onion, diced

1 14.5 oz. can diced tomatoes

1 8oz.can tomato sauce

*Italian seasonings , if you have Italian seasonings in a jar that’s great if not use a little dried oregano and dried basil. Italian Seasonings is available in the spice department of all food stores.

*1/2 teaspoon crushed red pepper

App. 1/4 tsp. Kosher Salt and more to taste

2-3 garlic cloves, minced

app. 10 lasagna noodles, broken into 1/4’s, if it breaks up differently don’t worry it’s a very loose recipe! 8 ounces Farfalle Pasta also works if you don’t feel like using the lasagna noodles. Un-cooked Noodles!!!!!

8 oz. mozzarella balls ( fresh) I used the small ones this time. Use whatever cheese you like but these worked out beautifully.  You can always use shredded mozzarella, or just cut a large ball of mozzarella into small pieces ( as much or as little as you’d like) if using shredded mozzarella, you’ll need about 1 cup

2 cups water

Freshly grated Parmesan Cheese for serving

*you can also use 1 cup Ricotta Cheese for a very cheesy version, I would use this if I was making it with spinach and going veggie.

Directions:

Heat olive oil in a large skillet over medium-high heat. Add onions and cook till translucent, add garlic towards the end of onion process. Add ground beef to the onions, stirring occasionally till browned. I removed with slotted spoon and set aside in a bowl. I then cooked up the sausage making sure to crumble the sausage as it cooked.  I then removed sausage to bowl with meat , onions, and garlic and drained all excess fat from pan.

Pre-heat the oven to Broil.

Return meat to pan, add tomato sauce, diced tomatoes, spices, add 1/4 tsp. kosher salt to taste, if you need more add it. Add in the meat mixture and stir, bring to a simmer and add in broken lasagna pieces and 2 cups of water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13- 15 minutes for al dente. I stirred it gently a few times just to make certain that the noodles cooked through and didn’t stick together.

Remove from the heat . I placed my Mozzarella on top and placed in oven under broiler for about 5 mins. Check on it because you don’t want it to blacken. All ovens are different, in mine it needed about 6 minutes to just start browning without burning, but you don’t want to burn this up so set timer and keep an eye on it!

Remove from the oven and let it sit out for a few minutes. Plate it up and let everyone add their own parmesan cheese! Enjoy! you will.

This would serve 4. It’s tough to double because you would need a super large pan.

This makes for an amazing leftover!

Turkey Meatloaf

Turkey Meatloaf is definitely one of our family favorites . Perfect for a large family gathering or just the two of you with great left-overs. I love the down home flavor of meatloaf and this one is just delicious. 

I cut the recipe in 1/2 for the 2 of us using 2 lbs. of Ground Turkey and 2 eggs and cut everything else in 1/2. I still have enough leftovers the next day and it’s just enough. If you’re making for 4 or more go with the full recipe. I served with roasted (burnt brussels sprouts and roasted red potatoes) and if you do make the whole recipe you can easily freeze the leftover for another night.

Ingredients:

5 lbs ground turkey— I prefer chopped dark meat as it has a little fat and a lot less dry than white meat turkey. You can find 85% lean which is fine . It’s sometimes hard to find dark meat ground turkey so when I find it I buy it. It just makes for a tastier meat loaf. You can mix dark meat and white meat.

3 cups chopped yellow onions ( app. 2 large onions)

2 tablespoons olive oil

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

1/2 teaspoon dried thyme

1/3 cup Worcestershire Sauce

3/4 cup chicken stock

1 1/2 teaspoons tomato paste

1 1/2 cups plain dry bread crumbs

3 extra-large eggs, beaten

3/4 cup ketchup/1 tablespoon brown sugar

Directions:

Preheat oven to 325 degrees

In a medium saute pan (frying pan) , over a medium low heat, cook the onions in the olive oil, add salt, pepper, and thyme until translucent app. 10 minutes or so. Don’t brown them. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow this mixture to cool in frying pan off the heat to room temperature.

In the meantime, combine the turkey, bread crumbs, and eggs in a large bowl and mix well. Then add in the onion mixture when it’s cooled down and incorporate well. Shape into a rectangular loaf on a lightly sprayed sheet pan. When you shape as a loaf , try to make the ends even with the middle or they will dry out. ( I kind of like the ends like that but just saying…) Spread the ketchup/brown sugar evenly on top. Bake for app. 1 1/2 hours  until the internal temperature of meatloaf is 160 degrees and the meatloaf is cooked through. Once meatloaf comes out of the oven let it sit for about 5 minutes. 

Serve hot, at room temperature and delicious cold the next day.

Chicken Scarpariello

Chicken Scarpariello could easily be one of my most favorite dishes to order in an Italian Restaurant. The translation is Shoemaker’s chicken and it is a classic Italian-American dish of chicken, sausage, onions and peppers . The flavors are layered and spicy and sweet and this recipe often has potatoes in it but this time I left them out and we didn’t miss them. I made this for 2 people so used only 1 lb. of chicken. Recipe is for 2 – 3 pounds of bone-in skin-on chicken , you can use whatever pieces you like but if you’re using breasts have them cut in 1/2. I also made whole recipe in my Le Creuset Stockpot because I cut recipe for just the two of us. If you make whole recipe you’ll want to transfer to a large roasting pan before putting in the oven. I didn’t because I only used 3 pieces of chicken and 2 sausage links so I kept it all in the Le Creuset dutch oven .

Enjoy this hearty recipe and if I were making potatoes I might just roast some on the side and add in when I serve. Potatoes are totally optional.

Serve with some good bread to soak up this delicious sauce.

This would be a delicious Holiday Meal.

Ingredients:

3 lbs. bone-in , skin-on Chicken I used thighs only this time,, use what you like but keep breasts small and cut in 1/2 and this recipe can be easily cut in 1/2

Kosher salt and freshly ground black pepper ( or coarse black pepper)

2 Tablespoons Olive Oil ( if you’re cooking up chicken and oil disappears add a little at a time)

4 links Italian Sausage — you can use 1/2 mild and 1/2 spicy whatever you’d like

2 large Bell Peppers and if you’re making for more people and transferring to large roasting pan you can use 3 Bell peppers — seeded and cut into thin strips

1 large sweet onion, cut in half lengthwise and sliced

1 teaspoon minced garlic — probably 2 small cloves

4-8 hot vinegar cherry peppers or pepperoncini, left whole If you don’t like hot you can substitute with sweet cherry peppers in vinegar or peppadew peppers in vinegar( I know Trader Joes has these) Use what you like and what you can find.

1/2 cup chicken broth

1/2 cup dry white wine

1/4 cup red wine vinegar

1 Tablespoon dried oregano

Directions:

Pre-heat the oven to 400 degrees. season chicken pieces with kosher salt and pepper. Heat the oil in a large Dutch oven style pot or use a large pot/pan for sautéing . In batches, ( don’t over crowd pot) brown the chicken , skin side down to start, you’ll probably want to sauté for at least 5 minutes or more per side and using tongs check for skin color to be golden brown, this may take longer or shorter and be careful not to burn the oil. I used a medium flame but if it starts to burn lower immediately . Remove the chicken to a plate when finished. Add the sausage to same pot and sauté until brown, about 3 -4 minutes per side. ( they will not be cooked through at this point– just browned. Remove with tongs , cut into 1″ slices and set aside along with chicken.

Now into the same pot sauté the bell peppers, onion and garlic until soft and beginning to brown , probably another 5 minutes or so. I sprinkled a little salt and pepper here while it was sautéing

Return the sausage to pot, add the cherry peppers or pepperoncini, chicken broth , wine, vinegar, oregano . Gently mix together, then transfer everything in the pot ( all liquid as well) to a large roasting pan. ( I always spray first for easy clean-up and easy removal of cooked food) use an olive oil spray if you have it and spray lightly) Nestle the chicken in the vegetables (skin side up) with sausage and roast in the oven until chicken is cooked through and sauce has reduced slightly, probably 30 minutes . If you are halving this recipe for 2 people you can put Le Creuset in the oven which is what I did but for larger amounts use roasting pan.

I served on plate and spooned a little of the sauce on top of chicken and vegetables.

You can test done-ness of chicken with a meat thermometer.
