Soy Orange Rosemary Chicken

I put this together last night and it was most delicious if I do say so myself and obviously Joel was very happy with this one as well. Served alongside rice and a beautiful Brussels salad which I will post soon as well. In the meantime this is a great weeknight meal or lovely meal if you’re having friends over. I would say 2 lbs. would feed 4-6 depending on your eaters.

This is super-yummy and don’t forget to spoon the sauce over the chicken when you serve it!

Ingredients:

2- 21/2 lbs bone-in skin-on chicken– I used thighs –much tastier but if you insist on breasts cut in 1/2–this time out I made for the 2 of us but used the same amount of sauce for full recipe — the sauce cooks down and you’ll want some for top of chicken

8 ounces orange marmalade , or this time I used Orange Ginger Fruit Spread by Dalfour which had amazing flavor but even apricot preserves will work well here. The Orange flavor just adds a layer of flavor that you can’t get from the apricot and the ginger in the orange really kicked it up a notch.

1 1/2 Tablespoons Whole Grain or Stone Ground Mustard ( my favorite is from Maille)

2 Tablespoons Soy Sauce — I used low sodium

2 Tablespoons unsalted butter, melted

1 – 1/12 Tablespoons finely chopped fresh rosemary — if you like a lot of Rosemary add a little more if not a huge fan you probably won’t be making this recipe but use 1 Tablespoon

Kosher Salt and Freshly Ground Black Pepper (app. 1/2 teaspoon)

Directions:

You can marinade over-night but I did it first thing in the morning– you’ll want this to marinade at least 6 hours — this is important

I take chicken out rinse off and pat dry. I then sprinkle some kosher salt over chicken — not a lot just enough to “sprinkle” top and bottom of chicken

In a glass bowl or any non-reactive bowl combine marmalade, soy sauce, melted butter, rosemary and a few grinds of black pepper. Mix marinade till completely combined then add chicken pieces and coat each piece well. Cover and refrigerate for 6-8 hours or longer whatever is convenient for you. I also put chicken in a gallon sized baggie and squish it around. Completely up to you.

Remove chicken from the fridge and bring to room temperature about 1/2 hour before cooking. Pre-heat oven to 400 degrees. Spray baking dish with cooking spray– or you’ll have a tough time cleaning this one up.

Transfer the chicken to sprayed baking dish and get any and all marinade in the dish as well. I think I used a 13×9 dish. Bake for 45 minutes or until cooked through and browned up on top. Remove from the oven and allow to sit for a few minutes before serving. My oven cooked 4 pieces in 40 minutes so check chicken after 1/2 hour for progress — all ovens vary.

Chicken Scarpariello

Chicken Scarpariello could easily be one of my most favorite dishes to order in an Italian Restaurant. The translation is Shoemaker’s chicken and it is a classic Italian-American dish of chicken, sausage, onions and peppers . The flavors are layered and spicy and sweet and this recipe often has potatoes in it but this time I left them out and we didn’t miss them. I made this for 2 people so used only 1 lb. of chicken. Recipe is for 2 – 3 pounds of bone-in skin-on chicken , you can use whatever pieces you like but if you’re using breasts have them cut in 1/2. I also made whole recipe in my Le Creuset Stockpot because I cut recipe for just the two of us. If you make whole recipe you’ll want to transfer to a large roasting pan before putting in the oven. I didn’t because I only used 3 pieces of chicken and 2 sausage links so I kept it all in the Le Creuset dutch oven .

Enjoy this hearty recipe and if I were making potatoes I might just roast some on the side and add in when I serve. Potatoes are totally optional.

Serve with some good bread to soak up this delicious sauce.

This would be a delicious Holiday Meal.

Ingredients:

3 lbs. bone-in , skin-on Chicken I used thighs only this time,, use what you like but keep breasts small and cut in 1/2 and this recipe can be easily cut in 1/2

Kosher salt and freshly ground black pepper ( or coarse black pepper)

2 Tablespoons Olive Oil ( if you’re cooking up chicken and oil disappears add a little at a time)

4 links Italian Sausage — you can use 1/2 mild and 1/2 spicy whatever you’d like

2 large Bell Peppers and if you’re making for more people and transferring to large roasting pan you can use 3 Bell peppers — seeded and cut into thin strips

1 large sweet onion, cut in half lengthwise and sliced

1 teaspoon minced garlic — probably 2 small cloves

4-8 hot vinegar cherry peppers or pepperoncini, left whole If you don’t like hot you can substitute with sweet cherry peppers in vinegar or peppadew peppers in vinegar( I know Trader Joes has these) Use what you like and what you can find.

1/2 cup chicken broth

1/2 cup dry white wine

1/4 cup red wine vinegar

1 Tablespoon dried oregano

Directions:

Pre-heat the oven to 400 degrees. season chicken pieces with kosher salt and pepper. Heat the oil in a large Dutch oven style pot or use a large pot/pan for sautéing . In batches, ( don’t over crowd pot) brown the chicken , skin side down to start, you’ll probably want to sauté for at least 5 minutes or more per side and using tongs check for skin color to be golden brown, this may take longer or shorter and be careful not to burn the oil. I used a medium flame but if it starts to burn lower immediately . Remove the chicken to a plate when finished. Add the sausage to same pot and sauté until brown, about 3 -4 minutes per side. ( they will not be cooked through at this point– just browned. Remove with tongs , cut into 1″ slices and set aside along with chicken.

Now into the same pot sauté the bell peppers, onion and garlic until soft and beginning to brown , probably another 5 minutes or so. I sprinkled a little salt and pepper here while it was sautéing

Return the sausage to pot, add the cherry peppers or pepperoncini, chicken broth , wine, vinegar, oregano . Gently mix together, then transfer everything in the pot ( all liquid as well) to a large roasting pan. ( I always spray first for easy clean-up and easy removal of cooked food) use an olive oil spray if you have it and spray lightly) Nestle the chicken in the vegetables (skin side up) with sausage and roast in the oven until chicken is cooked through and sauce has reduced slightly, probably 30 minutes . If you are halving this recipe for 2 people you can put Le Creuset in the oven which is what I did but for larger amounts use roasting pan.

I served on plate and spooned a little of the sauce on top of chicken and vegetables.

Hope you enjoy as much as we did.

You can test done-ness of chicken with a meat thermometer.

*I prefer using dark meat here but that’s totally up to you

Baked Chicken Caprese

 I sort of threw this together and I have to say this meal came out delicious. I served over zucchini noodles (zoodles) and some sliced roasted fingerling potatoes. Feel free to use pasta and since the sauce is so delicate and light I would use an angel hair type of pasta.

This was a lightened up version of a Chicken Parmigiana and it satisfied my yen for Chicken Parmigiana but much lighter than the usual fare.

Ingredients:

3-4 Chicken Breasts — I used 4 Thinly sliced Chicken Breasts

2 Tablespoons Olive Oil

3/4 Teaspoon dried Basil

3/4 Teaspoon Dried Oregano

1/4 Teaspoon Garlic Powder

1 Teaspoon Kosher Salt

1/2 Teaspoon Freshly Ground Black Pepper

1 -2 Cups Fresh Tomatoes– I used Campari Tomatoes and sliced in 1/2 I preferred a larger tomato here since they really break down and make a sauce from the heat . If you can’t find Campari Tomatoes use 2 pints of grape tomatoes and slice in half.

1/3 cup Red Onion — diced

3 Tablespoons Balsamic Vinegar

2 Tablespoons Brown Sugar

1 – 2 cups Shredded Mozzarella– if you’d like you can also use Fresh Mozzarella –sliced

Directions:

Preheat oven to 425 degrees.

Place Chicken Breasts in a large baking dish or cast iron skillet. Sprinkle with Olive Oil, basil, oregano, garlic powder , salt and pepper

Place halved tomatoes and diced red onion all around the chicken

Sprinkle with balsamic vinegar and brown sugar

Bake for 18-20 minutes depending on the thickness of the breasts. I did app. 18 minutes because these were thin sliced breasts — thicker ones will take a few minutes more

After chicken is cooked through (peek at it with a little slice )sprinkle with the cheese

Set oven to broil and place baking pan on the top rack. Broil for about 5 minutes, or until cheese is melted .

I served with Zucchini noodles and roasted fingerling potatoes.

Delicious!!!

 

Maple – Dijon Chicken with Brussels Sprouts and Butternut Squash.

Here’s a recipe that I absolutely loved making and loved eating! Tasty and Easy and anyone can do it. All it took was a few pantry ingredients that almost everyone has in their home.

I just love one sheet meals — another reason to go out and buy a large sheet pan if you haven’t done so already. 18 x 13 is the size you’ll need because if you crowd the ingredients they end up steaming and not really roasting. Roasting is what you’re after here.

I chose Chicken Thighs because they can stand up to the cooking time along with the veggies. I didn’t use Drumsticks but you certainly can use both. If you insist on white meat you’ll have to remove chicken earlier than veggies or you’ll have dried out chicken for sure.

Enjoy this lovely sheet pan meal and add Brown Rice or White Rice or Rice Pilaf or any rice is kind of perfect here. Basmati and Jasmine are also perfect.

Ingredients:

2 Tablespoons Reduced Sodium Soy Sauce

4 Tablespoons Dijon Mustard, plus 1 Tablespoon

3 Tablespoons Pure Maple Syrup, plus 1 Tablespoon

6 large bone in chicken thighs skin on ,or use 4 thighs and 4 drumsticks or whatever pieces you’d like

Kosher Salt and Freshly Ground Black Pepper

app. 12 ounces butternut squash, peeled, seeded and cut into 3/4 inch cubes

app. 12 ounce Brussels Sprouts, trimmed and halved

6 sprigs of fresh thyme or dry thyme if you don’t have fresh

2 Tablespoons Olive Oil

and you’ll need some cooking spray — you can use Olive Oil spray or just regular spray

Directions:

Preheat the oven to 425 degrees. Spray an 18 x 13 inch large rimmed sheet pan

In a bowl that is large enough to put the chicken thigh in combine the soy sauce, 4 Tbsp. of the Dijon Mustard and 3 Tbsp. of the pure Maple Syrup and 2 Tablespoons of Soy Sauce

Season the chicken all over with Salt and Pepper and then I like to dip my chicken into the mustard mixture and place on prepared baking sheet

In a large bowl combine the Brussels sprouts, butternut squash, thyme, and olive oil, season with a sprinkling  of salt and pepper here too. (lightly)

Arrange the vegetables on the baking sheet around the chicken. Pour any left over Dijon-Maple -Soy sauce over the chicken and pour any remaining sauce over the veggies.

Bake until the chicken is cooked through and the veggies are tender, app. 35-40 minutes. Look at the chicken after 30 mins. I cooked for 35 minutes and it was browned up rather nicely.

Meanwhile, whisk together the remaining 1 Tbsp. Dijon and 1 Tbsp. Maple Syrup and remove chicken from oven.

Brush the remaining mixture over the chicken. Bake a few more minutes till browned and perfect looking if not browned nicely you can place under broiler for a minute or so. I have never had to do this but some ovens are different than others.

*next time out I am going to try this sauce on boneless , skinless chicken thighs — it’s gotta be good!

Serve alongside some brown rice or any rice you’d like.

Amazingly Delicious.

Maple Dijon Chicken with Brussels and Butternut Squash

No Breading Chicken Parmesan

So delicious and so perfect. I used thin chicken breasts to start , if you’re using thicker ones you’ll have to monitor the timing of them a bit more and you can just use a meat thermometer to do so. This really couldn’t be easier and it was super tasty and is a cheese lovers delight. It’s lightened up from traditional breaded and fried chicken parm. *if you’re chicken breasts are too thick you can pound them with a meat mallet to the desired thickness — this is a very useful tool. Just place chicken cutlet between 2 pieces of parchment paper or plastic wrap and pound to desired thickness.

Prep and ingredients are super easy .

This recipe is for 4.

Ingredients:

1 1/2 – 2 pounds of thin chicken breasts — you can use thicker ones –read directions above for pounding chicken breasts

1 egg

3/4 cup grated Parmesan Cheese

1/2 tbsp. garlic powder

1/2 tbsp. onion powder

1 Tablespoon Italian Seasonings — It comes in one jar and is available in most spice sections in supermarkets —

pinch kosher salt

1/4 tbsp. freshly ground black pepper

and because we like a little extra kick I add a sprinkle of crushed red pepper flakes

3/4 -1 cup Jarred Marinara or if you have home made that’s good too . I prefer Raos Arabiata or Marinara for jarred sauce.

Shredded Mozzarella — probably 1/2 cup to 1 cup depending on how much cheese you like — I like a good sprinkle of cheese — see pics.

A little olive oil for drizzle in pan before cooking

Directions:

Pre heat oven to 400 degrees

I used a large baking dish and sprayed with cooking spray and drizzled a bit of olive oil to bottom of pan — just a little

Beat egg in a wide enough bowl for dipping chicken

In a second wide bowl combine the parm cheese and spices and mix

Dip each piece of chicken in the egg and then the cheese, coating both sides. Place in prepared baking dish.

Bake for 20 minutes — since cutlets are thin this should be fine because you’ll be cooking more with sauce and cheese. If thicker cutlets you may need a bit more time.

Top each piece with sauce and shredded mozzarella. ( you can spread a little sauce in between chicken as well . I served over spaghetti and needed a little more sauce so this was enough. If you want you can heat up extra sauce in a small saucepan for spaghetti. Bake for another 10-20 minutes till chicken is 160 degrees when checked with meat thermometer and cheese is melted and bubbly. I like my cheese just slightly browned so you can turn to broil for a minute or so depending on your broiler but be careful you don’t want to burn the whole thing.

I served over pasta and had enough sauce for us.

Chicken in One Pan with Garlic, Tomatoes and Potatoes

You all know by now how very much I love one pan meals. I am talking about everything going in one pan into the oven and cooks. Not slow cooked just regular meals in one pan!!!!! So simple to prepare , you’ll look like you really know what you’re doing and so delicious to eat. This one got a ringing endorsement from Joel and he’s as fussy as they come. This one should be perfect for whole family and should serve 4 . This is what I did. Last night I just used chicken thighs you can use whatever parts of chicken you prefer. Skin on Bone in is preferred here. 

*you’ll need a large baking dish, I used a ceramic one as shown. Pyrex works well here as well.

Ingredients:

1 1/2 lbs.  Yukon gold potatoes ( I used about 4 for just the 2 of us ) peeled and cut into about 8 pieces each potato, you’ll want potatoes to be uniform in size so they all cook the same amount of time

6 cloves of garlic smashed ( take the whole garlic clove and whack it with the back of the knife and then remove skin)

1 pint cherry tomatoes or grape tomatoes

2 Tablespoons olive oil

app. 12 sprigs of fresh thyme

app. 1 – 2 teaspoons of kosher salt for potatoes and chicken

app. 1/2 to 1 teaspoon freshly ground black pepper

*1/4 teaspoon crushed red pepper–we love the heat but if you don’t just omit

1 whole chicken cut up in 8’s or 10’s , I ask butcher to remove the backbone and cut into 8’s or 10’s. App. 3-4 lbs. total or 6 chicken thighs bone and skin-on

Directions:

Preheat the oven with the oven rack in the middle to 425 degrees.

Spray the baking dish with a cooking spray (Pam) I mean you want the baking dish to clean up easy right?

Peel the potatoes and cut up into bite size pieces. Add to the sprayed baking dish . Smash and peel the garlic. Rinse the tomatoes and add as well along with the thyme.

Drizzle with the 2 tablespoons of olive oil. Season with about 1/2 teaspoon of salt and app. 1/4 teaspoon of freshly ground black pepper and the crushed red pepper. Toss it all together with your clean bare hands and spread into a single layer.

Rinse the chicken and pat dry with paper towels. Season both sides of the chicken with app. 3/4 teaspoon  and 1/2 teaspoon of black pepper. I am pretty liberal with the salt here because I feel chicken can be rather bland. Use at your own discretion and what works best for you and your family. Place the chicken amongst the vegetables , see my pictures for how I did it. Roast until the chicken is cooked through and the potatoes are tender. App. 50-60 minutes.

*A little note on the chicken. I checked my chicken after 50 minutes and it was done so I removed to a plate and covered with aluminum foil to keep warm . I placed potatoes back in oven for another 10 mins. or so till they were done. Delicious! the tomatoes burst and were perfect served alongside the chicken and potatoes.

*to check doneness of chicken–a meat thermometer inserted into the breast at middle part should read 160 degrees.

Lime-Garlic and Ginger Chicken —

Vm I made this recipe for dinner last night and it was just delicious. It elevated the weeknight bbq chicken for sure . The only thing is this recipe is best left to marinade for at least 6 hours. After breakfast I made the marinade and let it sit all day. This chicken can sit in the marinade for up to 8 hours–just let it come to room temperature before cooking. Not so tough to do and worth the results. If you don’t have an outdoor grill use a grill pan on medium-high . I plan on making this chicken all year round. Not a lot of ingredients at all and very easy to put together.

This can easily be doubled.

Ingredients:

1 1/2 to 2 pounds of boneless, skinless chicken thighs which is what I used but feel free to use chicken breasts

Kosher Salt and Freshly Ground Black Pepper

1/3 cup Mayonnaise — now I don’t use diet mayonnaise and the mayo burns off so you won’t be tasting it -the mayo makes it moist and yummy

1 Tablespoon Lime Zest — app. 2 limes and save the lime to squeeze over the chicken

1 Tablespoon finely grated fresh ginger — if no fresh ginger use about 1/8 of a teaspoon of powdered ginger –1/8 to 1/4 of powder is equivalent to 1 Tablespoon Fresh

2 garlic cloves finely minced — I always put my garlic in my mini processor for a fine mince . If you don’t have a mini processor you can just mince by hand but it’s a great little machine to own.

Directions:

Pat the chicken dry with some paper towels.

In a large enough bowl to add the chicken stir together the mayonnaise, lime zest, garlic, ginger and 1 1/2 teaspoon kosher salt and about 1/2 teaspoon black pepper. Add the chicken to the mayo mixture and stir to coat. I put my chicken in the fridge for the whole day and removed it about an hour before cooking to bring to room temperature.

To grill: Heat your grill to medium high and grill the chicken till cooked through I cooked for about 5 minutes per side and they were perfect. Breasts will cook up faster so just watch them . They’re finished when juices run clear. Turn as necessary to avoid burning them.

If cooking inside the house with a skillet/grill pan cook over medium-high heat also about 5 minutes per side.

I squeezed the fresh lime over before serving and they were just delicious.

Easy Peasy Chicken Caprese

This is one of those recipes that I make that is so super easy. Very few ingredients and other than cutting tomatoes and mozzarella balls, there is very little prep. You gotta love meals like this, especially in the summer when these beautiful heirloom tomatoes are abundant. I really only make this in the summer . It is light and delicious and makes for a beautiful salad as well and you can serve it at room temperature. I made this last night with burnt brussel sprouts on the side . You’re not going to believe how easy this is. It’s amazing!

Ingredients:

1 container marinated bocconcini ( mozzarella balls) you will need the oil from the container to marinate chicken ( it comes in an olive oil marinade with spices)

4 skinless, boneless chicken breast halves , I buy them pounded thin or use chicken tenderloins –you just don’t want them too too thick

Kosher Salt and Freshly Ground Black Pepper

1 pint heirloom ( if you can get them) cherry or grape tomatoes, halved

*a little cut up basil is always a good idea!

Directions:

Take bocconcini balls out of the marinade. Cut bocconcini balls in quarters. Transfer about 1/2 of the marinade from bocconcini to a medium size baking dish , add the chicken , salt and pepper the chicken and let it sit at room temperature for about an hour before cooking. If you’d like you can refrigerate , and take out and bring to room temperature before grilling.

Put cheese in a bowl, add the remaining oil marinade and add the cut tomatoes to this bowl. Salt and Pepper to taste, give it a good stir and put in refrigerator till you’re ready to cook chicken. I removed from fridge about 1/2 hour before I cooked the chicken. Just bring it to room temperature.

Grill the chicken over medium high heat , till you get nice grill marks, probably about 8 minutes. You can cut the chicken into smaller pieces and mix with tomatoes and cheese. I just plated up the chicken and put tomato/cheese mixture on the plate. Perfect summer meal.

Honey Roasted Chicken – Holiday Chicken

DSCN4234DSCN4234This recipe was actually given to me by my daughter Jennifer.  She has made it numerous times. always to raves from the family.  It is a delicious chicken dish and it perfect for the Jewish new year and for Passover. It’s sweet and savory and has a wonderful blend of flavors.

Remember to pay attention to cooking directions as you will not be preheating oven!!!!!!

Obviously this recipe can be cut in 1/2 for a smaller group.

Ingredients:

1 stick butter or margarine

1/2 cup minced yellow onion

2 large cloves garlic, minced

1/4 cup Dijon Mustard

1/2 cup mild honey

1 teaspoon kosher salt

a rounded teaspoon curry powder

2 tablespoons peach or mango chutney ( available in most supermarkets)

small handful of dried currants or chopped dark raisins

2 roasting chickens  cut up in 8’s or you can cut recipe in 1/2 and use 1 chicken and 1 roasting pan

Directions:

you will need 2 shallow baking sheets with 1 inch rims ( you may be able to get it on 1 large sheet)Spray baking sheets well with cooking spray.

to make sauce:

Melt butter/margarine in a heavy 2 quart saucepan over medium heat. while it is bubbling, saute onion and garlic until softened, about 3 – 5 minutes. add remaining ingredients except for chicken and stir until well combined. heat until warm throughout and set aside to cool slightly.

to prepeare chicken:

I would spray each baking sheet with pam cooking spray first

Rinse and pat chicken dry . (each piece) dip each piece in honey mixture, coating chicken completely. lay chicken pieces ( skin side up) on baking sheets. spoon any remaining sauce over chicken.

To Bake Chicken:

place chicken in a cold oven, turn heat to 400 degrees and bake for one hour. if you are using 2 baking sheets , roast in the upper and lower thirds of the oven and switch shelf positions 1/2 way through the cooking time.

to serve:

Transfer chicken to a warmed serving platter and serve . this chicken is good hot, at room temp. and cold out of fridge the next day.

*if you cannot find peach or mango chutney ( I found it at Whole Foods) Stonewall Kitchen Brand , you can use Peach Jam, Apricot Jam, etc. Probably Saucy Susan would work. Use your imagination and don’t kill yourself trying to find the chutney. I think the chutney would give it a bit more kick, and cut the sweet, but either one will be fine.
