Chicken Rigatoni a la Vodka

This was one delicious pasta meal made with ground chicken this time around. Pretty easy to make and the only special tool I used was an immersion stick blender but a blender will work as well. Easy ingredients and easy prep and came out just perfectly. Most perfect weeknight meal or any night meal.

Ingredients:

1 pound ground chicken

1 teaspoon Italian Seasoning

1/2 teaspoon red pepper flakes

2 Tablespoons Extra-Virgin Olive Oil plus 2 teaspoons of Oil for cooking the meat

2 Tablespoons Un-Salted Butter

1 Medium yellow onion — small dice

5 Medium Garlic Cloves minced

1/2 teaspoon dried oregano

1 teaspoon crushed red pepper flakes– use to your own liking — we like a little kick

1 28 oz. can crushed tomatoes

1/2 cup heavy cream

1/4 cup Vodka

12 oz. box Rigatoni or Penne

Kosher Salt and Coarse Black Pepper

Fresh Basil for garnish

Grated Parmigiano-Reggiano Cheese for garnish

Directions:

Cook the ground chicken in a large saucepan with 2 teaspoons olive oil and italian seasoning and 1/2 teaspoon red pepper flakes. Season with a bit of Salt and Pepper. Cook till crumbly and fully cooked. Remove and set aside in a bowl.

Heat the 2 Tablespoons Olive Oil and butter in the same saucepan over medium high heat . Once the butter has melted, add the onion and cook the onions down stirring frequently, until softened and translucent but not browned, about 5 minutes. Add the garlic, oregano and crushed red pepper flakes ( 1 Teaspoon ) cook stirring for another minute or so. Add the crushed tomatoes with their juices. Bring to a boil over high heat, then reduce the heat to medium-low so the mixture is barely bubbling — a simmer and cook for another 1/2 hour or so. Sauce will thicken and reduce somewhat. Season to taste with Salt and Pepper.

After sauce has cooked for 1/2 hour or so I turn off the heat and add the vodka and cream and then I use my immersion stick blender to blend the sauce till I like the consistency. I blended till completely smooth . You can use the blender just let sauce cool down first and work in batches. I then let sauce simmer for about 10 minutes to cook off the vodka. Taste for Salt and Pepper. 

Cook the pasta until al dente. Drain the pasta and reserve a cup of pasta water to thin out the sauce — I did because it thickened up a lot. Add the chicken to the sauce. Stir to combine and add water if too thick, stirring frequently. Let it cook for a little bit and then I plated up pasta added sauce and topped with fresh basil and grated cheese .

I froze leftover sauce.

This would probably serve 4 nicely.

 

 

 

 

 

Lemon Couscous with Chicken and Peas

photo (11)  Lemony couscous with grilled chicken and peas!!! Love it!!! It was so easy using very few ingredients and very yummy!   I used chicken breasts and threw them on the grill pan with a little olive oil , salt and pepper. If you really want to make this easy you can use a store-bought rotisserie chicken. You can also substitute any grain of your choice. I happen to love the Israeli couscous ( pearl couscous), it’s not as mushy and has a better texture for this dish especially. I also like to use organic lemons when I’m using the zest of a lemon. If it’s just the juice of a lemon I don’t get as nuts but I have to say I prefer the organic ones when I know I’ll be eating the skin of the vegetable or fruit.  The flavor of the fresh lemon is just wonderful .

Ingredients:

2 tablespoons olive oil

1 1/3 cups Israeli couscous ( pearl)

2 1/2 cups chicken broth

Zest of 2 large lemons ( organic)

1/4 cup fresh lemon juice

1/2 – 1 teaspoon kosher salt ( start with less and you may need to add a little more) the parmesan is salty, and you’re salting the chicken.

1/4 teaspoon freshly ground black pepper

1/2 cup grated Parmesan

4 green onions, chopped

1 cup frozen peas

1 lb. thin chicken breasts, a little olive oil and salt and pepper or use a rotisserie chicken breast

Directions:

On a baking sheet, brush chicken breasts with a little olive oil and lightly salt and pepper. The thin cutlets grill up very quickly app. 3 minutes per side. Grill and set aside . I cut chicken up into small pieces before adding them to couscous. You can also cut up thicker chicken cutlets into 2 inch pieces and using a grill pan or frying pan cook them the same way ( olive oil salt and pepper) I like to put chicken in a bowl glaze them with olive oil and s and p and then cook them.

In a large saucepan, heat the 2 tablespoons of olive oil over medium high heat. Add the couscous and cook until lightly toasted , 2-3 minutes. Add the broth, lemon zest, lemon juice, salt and pepper. Bring to a boil. Reduce the heat to medium-low and simmer uncovered until the couscous is tender but still firm to the bite, app. 8 minutes.

I then stirred parmesan cheese into couscous along with the green onions, peas and cut up chicken. Taste for salt and pepper.

I plated it up and we totally enjoyed!

Bucatini al’Amatriciana

Amatrice is a small town in Italy outside of Rome and this dish is named for it. This dish is intended to be made with guanciale , which is a pig jowl and it tastes like a porkier version of bacon or pancetta. I use pancetta, which now comes pre-diced in packages making for a very easy time. I also keep packages of the diced pancetta in my freezer, they defrost very quickly which makes them a perfect dinner ingredient.  I also use bucatini pasta which is thick and ropey with a hole like a straw. I wouldn’t wear white while eating this it’s a messy one. Super easy and delicious. I made it tonite with my marinated flank steak. I also used 2 containers of grape tomatoes, but you can easily substitute with 1 large  can of San Marzano tomatoes –the crushed one. The cherry/grape tomatoes give it a lighter sauce, and I prefer it especially in the summer months but it is equally as delicious made with canned crushed tomatoes. Enjoy!

Ingredients:

4 tablespoons olive oil

4 – 6 oz. diced pancetta ( or 1/4 lb. glacial)

1/2 yellow onion chopped finely

2 garlic cloves , minced

2 containers of tomatoes halved ( I used grape tomatoes , I love them ) or 1 large can crushed tomatoes 28 oz. size (San Marzano is best here)

*1 teaspoon red pepper flakes ( we like spicy) use your own discretion , can always add at the table

1/2 teaspoon salt, or more to taste

1/2 teaspoon freshly ground black pepper, or more to taste

Grated Pecorino Romano Cheese, or any kind of Parmesan Cheese

1 lb. bucatini ( you can obviously use 1/2 pound and save any leftover sauce to freeze for another time) any thick spaghetti will do but I love this one in this recipe. Perciatelli is another good choice. Of course feel free to sub any pasta .

Directions:

In a large heavy skillet, heat 2 tablespoons of olive oil over medium heat. Add the pancetta and cook, stirring constantly. I like my pancetta crispy, but just get it golden brown, about 5 – 7 minutes. Using a slotted spoon remove pancetta into a separate bowl. Add onions to olive oil till translucent, about 5 minutes. Stir in the garlic and red pepper flakes , I do this off the heat. I then add all the tomatoes, some kosher salt ( to taste) and some black pepper and add back in the pancetta. I also add 2 tablespoons of olive oil and cook the tomatoes till they start to break down and form a sauce. Taste for salt and pepper. Simmer uncovered for at least 45 minutes , up to an hour for perfect sauce.

Cook Pasta according to package directions, tender but still firm to the bite. Before draining pasta take out about 1 cup of pasta water and set aside. Drain the pasta and place in a large serving bowl, I add a little of the pasta water and then I add the sauce. Toss gently and serve. I served with Parmesan Cheese .

Turkey Meatloaf

Turkey Meatloaf is definitely one of our family favorites . Perfect for a large family gathering or just the two of you with great left-overs. I love the down home flavor of meatloaf and this one is just delicious. 

I cut the recipe in 1/2 for the 2 of us using 2 lbs. of Ground Turkey and 2 eggs and cut everything else in 1/2. I still have enough leftovers the next day and it’s just enough. If you’re making for 4 or more go with the full recipe. I served with roasted (burnt brussels sprouts and roasted red potatoes) and if you do make the whole recipe you can easily freeze the leftover for another night.

Ingredients:

5 lbs ground turkey— I prefer chopped dark meat as it has a little fat and a lot less dry than white meat turkey. You can find 85% lean which is fine . It’s sometimes hard to find dark meat ground turkey so when I find it I buy it. It just makes for a tastier meat loaf. You can mix dark meat and white meat.

3 cups chopped yellow onions ( app. 2 large onions)

2 tablespoons olive oil

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

1/2 teaspoon dried thyme

1/3 cup Worcestershire Sauce

3/4 cup chicken stock

1 1/2 teaspoons tomato paste

1 1/2 cups plain dry bread crumbs

3 extra-large eggs, beaten

3/4 cup ketchup/1 tablespoon brown sugar

Directions:

Preheat oven to 325 degrees

In a medium saute pan (frying pan) , over a medium low heat, cook the onions in the olive oil, add salt, pepper, and thyme until translucent app. 10 minutes or so. Don’t brown them. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow this mixture to cool in frying pan off the heat to room temperature.

In the meantime, combine the turkey, bread crumbs, and eggs in a large bowl and mix well. Then add in the onion mixture when it’s cooled down and incorporate well. Shape into a rectangular loaf on a lightly sprayed sheet pan. When you shape as a loaf , try to make the ends even with the middle or they will dry out. ( I kind of like the ends like that but just saying…) Spread the ketchup/brown sugar evenly on top. Bake for app. 1 1/2 hours  until the internal temperature of meatloaf is 160 degrees and the meatloaf is cooked through. Once meatloaf comes out of the oven let it sit for about 5 minutes. 

Serve hot, at room temperature and delicious cold the next day.

Springtime in a Bowl – Shrimp, Asparagus and Tomato Pasta

Since it’s truly Springtime here in NY I think about lightening up the menu. Asparagus is so very beautiful this time of year and shrimp is always my go-to. This recipe is a variation on my Summertime Tomato Pasta. I wanted to use some of those beautiful asparagus out there. Even though I knew Joel would pick them out I still made this dish. The asparagus are large enough for him to easily pick out and put on my plate. This dish is light and delicious and pretty quick to prepare. It is like springtime in a bowl!  There are so very many things to do with asparagus but this just appealed to me  and if you leave the shrimp out you have a lovely vegetarian pasta dish and if you leave the pasta out you have a super light dish!   I also used linguine in this recipe because it just seems to hold on to the flavors nicely. Ingredients:

1 lb. box linguine ( I used Fini Linguine , it was lighter than regular linguine and was just perfect) but any spaghetti will work here.

2 Tablespoons Olive Oil

2 pint size containers of little grape tomatoes, cherry tomatoes, or any small tomato ( app. 16-20 oz. of tomatoes)  I cut tomatoes in 1/2.

kosher salt

freshly ground black pepper

* crushed red pepper ( we like the heat) use your own discretion depending on how you like it, totally optional

3 large cloves of garlic, chopped finely

1/2 cup dry white wine ( I use whatever I have open)

1 lb. Asparagus , trimmed, stalks cut on a diagonal into app. 1 1/2 inch pieces

1 pound large shrimp, peeled and deveined

fresh basil chopped ( app. 1/2 cup)

1 teaspoon dried oregano

Directions:

Cook the pasta according to box directions.( Fini Linguine cooks in 6 minutes perfectly) scoop out a little pasta water after cooking about 1/2 cup to 1 cup and keep it handy if pasta is too dry, you can add water to it a little bit at a time.

Heat the olive oil in a large skillet over medium high heat. Add the tomatoes, app.  1/4 teaspoon kosher salt and app. 1/4 teaspoon freshly ground black pepper. Cook, stirring occasionally, until tomatoes are soft , it takes at least 5 minutes . You want the tomatoes to start to burst so they make a delicious sauce.  Add the crushed red pepper and garlic. Cook for another few minutes ( don’t burn the garlic)keep on low heat and stir around. Add the wine and the asparagus. Bring to a low boil and simmer for at least 5 minutes . Taste for Salt and Pepper, if it needs more this is when I would add it, and I did. I added a bit more salt here, pepper was fine. You need to use your own discretion about the salt .

Sprinkle shrimp in a bowl with a little salt and pepper. Add the shrimp to the pan and continue to simmer until the shrimp is cooked through, about 10 minutes. Shrimp needs to be firm to the touch, and opaque if cut into. Stir in the chopped basil and the oregano.

Pour the sauce over the pasta and toss well to combine.  You can always add more crushed red pepper when finished.

This was really delicious and light. Joel of course picked out every piece of asparagus, and put them in my bowl. That was fine with me because I love asparagus.

*this dish will easily serve 4, if you like you can always add another 1/2 lb. of shrimp for 4 people.

Roast Chicken Salad with Buttermilk Dressing – Weeknight Salad

DSCN0069photoI was in the mood for something light for dinner and wanted to make a dressing with buttermilk since I had it in the house and wanted to use it.  I picked up a roast chicken from the market because I was very pressed for time.  I grabbed some beautiful romaine, but I know this would be perfectly awesome with kale or any greens you would like to use.  In any event I used romaine this time. I removed the skin from the chicken and shredded it with my hands. Just used romaine, tomatoes, chicken and dressing. Next time out I add avocado for sure and would love some bacon and corn in this salad.  This is an awesome lunchtime salad and so easy to pull together for a light dinner meal and mix in whatever other veggies and ingredients you’d like.  Dressing is killer and only 3 Tablespoons of Buttermilk! This is also awesome if you have leftover chicken and don’t know what to do with it.

This dressing should be good for at least 4 servings. Feel free to double it.

Ingredients:

Buttermilk Dressing:

1 clove garlic

1 egg yolk ( let egg sit out at room temperature) just not really cold

3 tablespoons of buttermilk ( low-fat is fine)

1 tablespoon whole grain mustard

1/4  teaspoon kosher salt and a few grinds of the pepper mill (you can always add more salt if you would like)

1 tablespoon apple cider vinegar

1/2 cup olive oil

*feel free to double

Combine all ingredients except for olive oil in the blender including salt and pepper . Keeping blender on , add olive oil from the top in a slow stream until well incorporated.

Put salad greens, avocado , chicken and any other vegetables you’d like in a large bowl. Add dressing (start small)  and mix salad adding dressing as needed.

Easy Israeli Salad

This salad is so delicious and fresh and works so well with grilled chicken, fish or really any protein. It’s a perfect accompaniment to a BBQ.

I just love it for lunch or dinner and it’s so easy that anyone can do it. Add in feta cheese, olives, or canned chick peas to add to this wonderful deliciousness.

Whatever and whenever you decide to serve this it will be most wonderful.

Just a word about making ahead… I chopped and diced all the vegetables and put in a bowl and put in the fridge. I juiced my lemon and had it set aside. Right before serving I added olive oil and lemon juice stirred it up well and tasted for salt and pepper.

If you add oil and lemon juice too soon it will be very soggy and I don’t like it that way at all. So just have it all ready to serve and add dressing right before.

Ingredients;

this is what I used feel free to substitute or add in whatever you’d like. ( Canned Chick Peas are also delicious in this) Olives, Scallions, Feta Cheese, whatever you feel like.

1 Large Seedless Cucumber or remove the seeds from a seeded one or just keep the seeds if you don’t care

1 box grape tomatoes halved

1 yellow pepper, diced or an orange one. I used orange and yellow about 1/2 and 1/2

1/2 cup diced red onion

2 Tbsp. Fresh Parsley , chopped

3 Tablespoons Lemon Juice

2-3 Tablespoons Olive Oil– I used 3 but you can start with 2 add the salt and pepper and add for more flavor after

Kosher Salt and Freshly Ground Black Pepper

*I love chick peas so I always add about 1/2 can of rinsed and drained chickpeas and of course a little feta never hurt anyone either — use as much or as little as you’d like and of course some Kalamata olives work very well here as well– obviously you can make this delicious salad your way

Directions:

In a large bowl, toss together all the vegetables. Add the lemon juice, olive oil and chopped parsley and mix thoroughly to coat.

Season with Salt and Pepper to your liking. Serve cold or at room temperature. I like it cold but it’s delicious either way.

Matzo Brei –Savory Style

This is a delicious way to make a meal with eggs and matzo. Sometimes we eat it for dinner and it’s just sort of perfect. Real comfort food for us.  I always loved Matzo Brei since I was a little girl, and I always wondered why it is that we only eat this delicious concoction during Passover.  It’s such a delicious treat why don’t we eat it more often? In our house we usually eat it till the matzo runs out. Usually for the week of Passover, then we stop. It’s so good. Everyone has their own little special spin on it.  Before I met Joel I always ate my matzo brei sweet with maple syrup sort of a matzo french toast. Joel loves it crispy and salty with a lot of pepper and since I know him he always asks for it this way , I sort of grew to love it this way as well. What’s not to love?  You definitely don’t have to be Jewish to love Matzo Brei. This is how we make it around our house.

Ingredients:

*serves 2 just barely (can and should be doubled)

3 Sheets of Matzo broken into little pieces

2 Large Eggs

Salt and Pepper

2 Tablespoons Vegetable Oil to cover bottom of pan — but usually 2 Tablespoons is about right

Directions:

Break the matzo into little pieces and place in a bowl. Cover with very hot water from tap. Let it stand for a couple of minutes, and then drain it. ( I usually put a plate over bowl and pour out all the water) Beat Eggs in another bowl, season with salt and pepper. Use your own discretion here, Joel likes it with a lot of salt and pepper. Wait a few minutes so matzo isn’t very hot before adding the eggs then combine the eggs with the drained Matzo till a batter forms. Heat the vegetable oil in a large frying pan over medium -high heat — make sure oil is very hot . I carefully  add the matzo mixture to the hot oil  and start to fry it up scrambling it as I go, we like it in little pieces. ( you can make this batter into small pancakes as well and just fry up until golden brown) I cook it till it is all fryed up and crispy. It should cook up pretty quickly if the oil is hot enough. You can serve it with less salt and pepper and put jam on the side, maple syrup on it, cinnamon , whatever you like! Matzo Brei is awesome even when you feel like you can’t face another piece of matzo.

Passover Popovers

Super easy , super light and delicious. Give this one a try. These are delicious during Passover with some preserves for Breakfast as well as with your Seder Meal. Enjoy and Happy Passover Cooking from my kitchen to yours. I used a muffin tin and it worked out perfectly. Bake these light airy treats for your Seder to rave reviews. One per person is perfect , this recipe yielded 9 popovers. photo20130321-113701.jpg photo

Ingredients:

1 cup cake meal

4 eggs — always work with room temperature eggs unless otherwise stated for best results

1 tsp. salt

1 Tbsp. sugar

1 cup water

1/2 cup peanut oil

Directions:

Preheat oven to 400 degrees.

Mix the cake meal, salt and sugar in a bowl.

Bring oil and water to a boil, add cake meal mixture and remove from stove.

Beat in one egg at a time and mix a lot. It will be thick.

Allow to stand for 15 minutes.

Drop into a well-greased muffin or popover tin using a tablespoon to 3/4 full. I spray with cooking spray . I used a Canola Oil baking spray, or lightly grease pan with canola oil.

Bake at 400 degrees for 35 minutes till medium golden brown. I placed pan in the center of the oven .

Warm before serving if desired.

 

 

 

 

 

 

 

Grandma Regina’s Farfel for Passover

DSCN2696DSCN2700I must preface this with the fact that anyone who’s ever had this farfel dish loves it. It is steeped in tradition, it was made absolutely the best by my Grandma Regina, and only seconded by my mother (G’ma Millie). It is a very tricky dish to make, and after many failed attempts, I figured out that doubling it doesn’t work, and you must let it dry out!!! It should probably sit out to dry for at least 2 hours. I know this sounds crazy, but it’s true. Of course, G’ma Regina never wrote a single thing down, so you’ll be winging the spices and the oil, because I always do. It’s not the healthiest thing in the world, but it’s so delish and we only  make it but once a year. When I was little I couldn’t wait to have it at my grandparents’ house. We looked forward to it every year at Seder. It’s no surprise that it’s Joel’s favorite. He remembers my grandmother’s and that’s a tough act to follow even after all these years.  It’s tradition in our house to always have it on Passover, and what better way to remember Grandma Regina. There is no better legacy to a great cook than a well cooked farfel.

This recipe is definitely passed down with love and lots of patience because this recipe takes time and love. It is well worth it though.

Ingredients:

1 1/2 canisters matzoh farfel–I used 14 ounce containers

1 lb. mushrooms, sliced (regular white mushrooms)

2 spanish onions, peeled and sliced thinly

Vegetable oil

Kosher salt (app. 1 tablespoon)

Freshly ground black pepper (app. 1/2 tablespoon)

1 tablespoon garlic powder (every year I guess this amount. If you’d like, you can also use fresh garlic, and then it would probably be approx. 2 minced cloves.)

Paprika (get some good paprika here and use a good dash for color)

6 eggs

Directions:

Beat eggs with spices (the paprika will add a red color). Coat the farfel with the egg mixture. Add oil to a large heavy skillet, about 1/4 inch deep, and heat over medium-high flame. Toss farfel in the hot oil, and coat well; farfel should brown a little bit. (Don’t burn.) Then add water to just cover the farfel, bring to a boil, then simmer until water dissolves. After the water is all gone I turn the flame off and just let it sit there and dry out. I cannot emphasize enough how important this step is. Go out and do something else, and come back to it.

Meanwhile, in a separate pan, saute the mushrooms and onions with salt and pepper and a dash of paprika here as well.  The farfel is very bland and you’ll need the salt and pepper. Put this in a container ’til you’re ready to use it. You will eventually add it to dried out farfel. When farfel is completely dried out (at least 2 hours), add the mushroom and onion mixture to it. Taste for salt and pepper. Mix well and bake in a Pyrex dish at 375 degrees for about  1 – 1/2 hours. You want it to get crispy. If it’s too dry, add a little more oil to baking dish. Stir it often–you’ll have to open oven a few times and stir. Your house will smell great while making this. My family likes this on the crispy side, so I let it cook for a long time, but you’ll be able to tell when it’s done–it will be bubbly and crispy! Enjoy and good luck!
