Halibut and Roasted Tomatoes

I used Halibut because although I am married to a former fish guy he really prefers shellfish and is extremely fussy with what fish he will eat. He does like halibut so halibut it was. You can easily use Roasted Striped Bass which is what Jessica Seinfeld suggests. It was easy and delicious, and I would certainly serve this to company.

You don’t need a lot of ingredients and it really really was quite simple and elegant.

Ingredients:

2 pints grape tomatoes

8 sprigs of fresh thyme

4 cloves garlic

2 Tablespoons extra-virgin olive oil plus 1 tsp. extra-virgin olive oil

4 pieces halibut or striped bass ( 6 oz. each) and about 1 inch thick

1 tsp. kosher salt , divided ( 1/2 tsp. + 1/2 tsp. )

1/4 tsp. freshly ground black pepper divided ( 1/8 tsp.  + 1/8 tsp. )

Directions:

Preheat the oven to 425 degrees. Wash the tomatoes and place on a rimmed baking sheet pan which has been sprayed lightly with cooking spray. Smash and peel 4 garlic cloves and add to the pan along with 2 Tbsp. of Olive Oil, 1/2 tsp. kosher salt , 1/8 tsp. of freshly ground black pepper. Toss together with clean hands.

Rinse the fish and pat dry with paper towels. Place in the middle of the pan, pushing tomatoes aside. Pour the remaining 1 tsp. olive oil over the fish and rub to coat. Add the remaining 1/2 tsp. of salt over the tops of fish as well as 1/8 tsp. pepper.

Roast until the fish flakes easily when pierced with a knife and tomatoes are softened. 18-22 minutes. I roasted 2 fillets and it took exactly 20 minutes.

Orzo with Lemon Shrimp and Spinach

photoDSCN0367DSCN0363DSCN0372DSCN0384DSCN0390By now you all know how very much we love shrimp. It comes in handy to have an ex-shrimp monger on hand to clean and devein my shrimp. I love cooking it but not so much cleaning and deveining it. Joel not only obtains the best shrimp around but he really does do a great job of cleaning and deveining. ( I think it’s in his DNA) In any event we make a pretty good team when it comes to shrimp dishes.
So now on to this delicious dish. I didn’t feel like grilling and this dish was calling out to me. I saw Giada de Laurentiis make a shrimp scampi on her show and she made it with arugula , it looked so awesome and light I figured I’d do it my way and make it with spinach even though I knew Joel wouldn’t eat the spinach. Our friend Drew was over and he loves spinach so we ate Joel’s spinach, once again it’s his loss. This dish was pretty easy to pull together once shrimp was prepped. Not a whole lot of ingredients, and whole thing took about 1/2 hour.  This dish was very light in flavor and a perfect summer night meal, doesn’t have to be served super hot , can be room temperature. Thanks again to Giada for the wonderfully inspiring recipe.

*once the shrimp is prepared this dish is a snap. Have your fish store clean and de-vein your shrimp for you.

Ingredients:

Vinaigrette:

1/3 cup olive oil

zest of 2 large lemons ( try to use organic if you’re zesting and eating the peel) and scrub those lemons well

1/2 cup fresh lemon juice ( from the 2 large lemons you just zested)

1/2 teaspoon of kosher salt

1/2 teaspoon of freshly ground black pepper

In a small bowl, whisk together the olive oil, lemon zest and lemon juice, salt and pepper until smooth and set aside.

Ingredients:

1 lb. orzo

1 lb. shrimp , I used large under 10’s, peeled and deveined  ( you can have fish monger do this )

2 tablespoon olive oil

1 large shallot , chopped

app. 1 more teaspoon kosher salt

1/2 cup dry white wine ,  ( I used what I had on hand)

6 ounces of spinach , I used baby spinach, use whatever greens you like. Giada used arugula .

Directions:

Cook orzo according to directions. Drain and reserve 1 cup of the pasta water.

Place shrimp in a bowl and sprinkle with kosher salt and some freshly ground black pepper . Heat the 2 tablespoons of olive oil over medium high heat. Add the chopped shallots and cook until soft for a few minutes. Add the shrimp, cook shrimp until they turn pink and are just cooked through depending on the size of your shrimp. When shrimp is cooked through remove the shrimp from the skillet. Increase the heat to high and add the 1/2 cup of wine, allow to boil up and scrape up all the brown bits from the bottom of the pan, cook for another minute or so until most of the liquid has evaporated.  Then add orzo to the pan along with the vinaigrette and the spinach and let it wilt down.  I added most of the reserved pasta water , you’ll use as much or as little as you need, I used whole cup of reserved pasta water. Add the shrimp back in and toss well until all the ingredients are well coated. Serve up and enjoy.

Grilled Salmon — Asian Flavor

DSCN0287DSCN0283DSCN0282DSCN0280DSCN0295This is a go to salmon when I have no idea what to make but have already purchased the salmon.  I almost always have all the ingredients in the house, it’s an Asian sort of style because of the predominant flavor of the soy sauce. The honey and mustard give it a sweet and sour kind of punch, the garlic is just always good flavor to anything. This was our meal tonite with Green Goddess dressing and a BLT salad which I have already posted on my blog. This is a great meal for 1, 2 or as many as you’d like . Recipe as is will easily be enough marinade for 4- 6 pieces of salmon. For just the two of us I buy a pound of salmon fillets with the skin on, 2 8 oz. pieces.  I marinated for about an hour but you really only need about 20 minutes for flavor to soak in.

Ingredients:

Filets of Salmon , I usually buy 1/2 lb. piece per person with skin on

Marinade:

2 Tablespoons Dijon

2 Tablespoons Honey

3 Tablespoons Soy Sauce

6 Tablespoons Olive Oil

1 clove garlic, minced

Directions:

Whisk together the ingredients above. Drizzle about 1/2 of the marinade ( depending on how many pieces you have) onto the salmon and allow it to sit for at least 20 minutes.

Preheat your grill to high, then I lower the heat to about medium-high. Place the salmon skin side down on the grill; discard any marinade that the fish was sitting in. Grill for about 4-5 minutes, depending on the thickness of the filet. Turn carefully with a wide spatula and grill for another 4-5 minutes. The salmon may be slightly raw in the center , but don’t worry because it will keep cooking as it sits.

Transfer the fish to a plate, skin side down, and spoon the remaining marinade on top. Allow the fish to rest for app. 5 minutes before serving. We like it with the skin on but you may want to remove first before serving. This fish is delicious with rice and served warm off the grill, at room temperature and delicious the next day cold.

Now if you don’t have a grill just put in a preheated 400 degree oven and cook for about 20 minutes, skin side down .

Pan-Fried Salmon with Green Goddess Tzatziki

photo (3)DSCN0105Just a wonderful weeknight dinner using Salmon right on the stovetop. Really delicious Tzatziki which is so super easy to make, it’s super fresh tasting and the herb flavor really comes through.  I have many different sauces that I make and a few different tzatziki sauces as well but this is what I did this time.  Original recipe comes from Giada De Laurentiis .  I played around with a few ingredients  but definitely got my inspiration for this one from her. It helps to have a fish spatula for flipping over salmon which I learned from my cooking classes with Karen Lee. Tzatziki sauce can be made a day ahead and chilled in the refrigerator. There will definitely be left over sauce , you’ll have enough sauce for at least 6 pieces of salmon. It makes for a delicious dip as well, and great served with grilled chicken.

Ingredients:

2  7 oz. salmon fillets, about 1 inch thick, skin on

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

3 tablespoons olive oil

Tzatziki:

1 cup plain Greek Yogurt ( 2% fat)

2 tablespoons mayonnaise or vegenaise

1/3 cup chopped fresh basil

1/4 cup chopped fresh chives

2 tablespoons chopped fresh tarragon – I had trouble finding fresh tarragon so I had to add dry tarragon. I used about a teaspoon of dry, I would have really liked the fresh but couldn’t find it that day.

1 tablespoon white vinegar, you can use white wine vinegar as well

1/4 teaspoon kosher salt, plus you may want extra at the end for taste

1/4 teaspoon freshly ground black pepper, you may also want to add more of this as well

1/2 an English hothouse cucumber, seeded ( app. 1 lb)

Directions:

For Tzatziki:

Combine the yogurt, mayonnaise, basil, chives, tarragon , vinegar , salt and pepper in a food processor. Blend until the herbs are finely chopped and sauce is a pretty pale green. Scrape the sauce into a bowl.

Coarsely grate the cucumber using the large holes of a box grater onto a paper towel lined plate, pat dry and let it sit out and air dry for a few minutes. I used my mini processor and then let it dry on paper towels for a few minutes.  Then mix the cucumber into the tzatziki. Add salt and pepper to taste. The tzatziki can be made one day ahead if you like.

For Salmon:

Pat dry the Salmon with some paper towels, then sprinkle the salmon with salt and pepper. Heat the oil over medium-high heat in a large skillet. Cook the salmon, skinned side up , till it turns a golden brown, about 4 – 5 minutes depending on thickness of salmon. Flip the fish ( if you have a fish spatula this will be easier) and cook for another few minutes until done. It really all depends on the thickness of your fish. You’ll definitely need to turn on the exhaust fan for this one.

Serve warm, at room temperature or even chilled with the tzatziki. Yum! I served with roasted asparagus .

Spicy Goan Shrimp- Never too old to learn something new continues

DSCN0096DSCN0097DSCN0099DSCN0101I love taking cooking classes and while I’m back in New York I always try to get over to Karen Lee’s cooking class. Karen is so knowledgable, warm and friendly. Her kitchen on the Upper West Side of Manhattan is her home and all you can do is try and absorb as much as possible. At our last class we cooked many things and this was one of my favorites of the day. It’s hard to choose a favorite but this one definitely hit a chord with me. I couldn’t wait to make it for Joel because I knew he would love it. This shrimp dish is Goan cuisine , which consists of regional foods popular from Goa, located along the SW coast in India on the Arabian Sea.  You can control the spice, but just the way the recipe is written was perfect for us. Take a look at Karen’s blog and she is a wonderful caterer who works out in the Hamptons all summer. www.karenleecooking.com

I bought beautiful Equadorian White shrimp (under 15)  from a local fish store, Roslyn Seafood Gourmet which I think is wonderful and they cleaned and deveined the shrimp for me. I marinated for about 4 hours and if you can I’d suggest marinating for as long as possible, even overnight at least 2 hours so shrimp can absorb all that deliciousness. This marinade has a sweet and spicy kick to it. I also think it would make a wonderful appetizer.

Big recommendation on this recipe, and thanks Karen for a great class and a great recipe. This one is a real keeper.

Ingredients:

1 pound raw medium to large shrimp , I used under 15’s ( 15 to a pound) ask your fish man to clean and devein the shrimp, it will save you a lot of time and effort.

Marinade:

2 big cloves of garlic

2 slices of fresh ginger (about a quarter size each, and maybe 1/4 inch thick) I like a nice zing of ginger so I went a little heavier on the ginger . About 2 teaspoons at least once it’s chopped.

1 tsp. kosher salt

*chop the garlic and ginger together and mix with the kosher salt to make a fine paste

1/2 tbsp. rice wine vinegar

1/8 tsp. cayenne

1/4 tsp. ground turmeric

5 turns freshly ground black pepper in a grinder

1 tsp. brown sugar

1/8 tsp. ground cloves

1/4 tsp. ground cinnamon

1/4 tsp. cumin

1/2 tbsp. olive oil + 2 tbsp. olive oil for cooking

3 tbsp. white wine for de-glazing the pan

few squeezes of fresh lemon or lime

Directions:

Rinse and dry the shrimp. ( after you peel and devein them) if you’re smart you’ll ask fishman to do it. Mix all the ingredients for the marinade in a large bowl. Add the marinade to the shrimp and mix to coat well. I marinated for about 4 hours, try for at least 2 . You can do it overnite.

Heat a 10 -12 inch sauté skillet for 1 minute over high heat. Add 2 Tbsp. olive oil . Saute the shrimp for about 3 – 4 minutes on each side. Now I must say that the shrimp  took about 6-7 minutes, it really depends on the size of your shrimp for your cook time so watch for the shrimp to curl up and start to turn nice and pink. Nothing is worse than biting into undercooked shrimp, so make sure it’s cooked through even if you must cut into one. It should be opaque white inside.

Remove the shrimp from pan to a serving platter. I deglazed the pan with about 3 tbs. of white wine. You can squeeze a little lime or lemon juice in as well and let it cook down for a minute or so then pour marinade over shrimp and voila!

I served over basmati rice , sautéed spinach or any braised greens would be awesome as well.

Salmon and Cherry Tomatoes

SalmonSalmonSalmonSalmonI found this recipe in Ina Garten’s new cookbook, “Foolproof”. It’s super tasty and not difficult at all. I own a cast iron skillet so I used that for the salmon. I suppose if you don’t have one you can just use any skillet as long as it’s oven proof. The pairing of the balsamic vinegar with the tomatoes and fresh basil over the salmon was delicious. I highly recommend this if you love salmon and don’t mind the 2 pan thing. Since I don’t grill that much in the wintertime in CO this was a perfect alternative. The salt and pepper and little olive oil gave the fish a very nice crust. Make sure you have a metal spatula to lift fish up and turn over in pan. I love my cast iron skillet, and they are super affordable and make a real difference.  Lodge brand is the one I use. I roasted potatoes as a side dish.

Ingredients:

Olive Oil

1 cup chopped sweet yellow onion, Vidalia is always good

2 teaspoons minced garlic, ( 2 cloves)

1 pint cherry or grape tomatoes, cut in half.

Kosher salt and freshly ground black pepper

1 1/2 tablespoons balsamic vinegar

1 1/2 tablespoon cuut up fresh basil leaves

1 ( 2 pound) salmon fillet, cut into 4 pieces ( have your seafood person do this)

* this recipe is for 4 people , I made it for the 2 of us and just cut in 1/2.

Directions:

Preheat the oven to 425 degrees

Heat 3 tablespoons of olive oil in a medium saute pan. Add the onion and saute over the medium-low heat for about 5 minutes. You’ll want onion to be soft but not browned, stir occasionally. Add the garlic and saute for another minute. Stir in the tomatoes, a scant teaspoon of kosher salt, and 1/2 teaspoon pepper. ( You can adjust the salt to less if you like) . Cook tomatoes over medium -low heat for about 15 minutes, stirring occasionally, until the liquid evaporates and the tomatoes thicken slightly. Off the heat, stir in the balsamic and basil.

Salmon:

I layed fillets out on paper towels, brushed all sides with olive oil, and sprinkled with salt and pepper. I then placed skin side up in the cast iron pan which I pre – heated for about 5 minutes. Cook the fish for about 4 minutes, don’t move them . Turn the salmon skin side down with a metal spatula . Transfer the pan to the oven for about 6 minutes. Remove the fish , make sure it’s cooked through, and place on a serving platter and cover with aluminum foil, allow to rest for at least 5 minutes. It will continue to cook for a bit after you remove it from pan.

Reheat the tomato mixture, season to taste, and serve along the salmon. You can serve at room temperature, hot or warm.

Sexy and Sassy Shrimp for Valentines Day – Fra Diavolo

photo (3) photo (5)photo (2)OK it’s Valentines Day and that’s the reason for the sexy, and the reason it’s sassy is because this shrimp packs some heat known as Fra Diavolo sauce. What a perfect meal for Valentines Day and it’s red!!! this was so delicious and light. I highly recommend it and it really was an easy dish to make. I would say it’s downright easy to make. This 1 lb. of shrimp should feed 4. I made it with Bucatini pasta, which is a thick ropey spaghetti, you can use whatever type of spaghetti you prefer or none at all. I would say that this whole dish start to finish took 1/2 hour. That’s so perfect. Buy your shrimp peeled and deveined which will save you time. Happy Valentines Day!

*don’t leave out the fresh herbs, they kick it up a notch

Ingredients:

1 lb. large shrimp, peeled and deveined

1 teaspoon of kosher salt , plus more as needed

1/2 medium yellow onion, chopped

1 (14 oz. can) diced tomatoes

3 tablespoons olive oil, plus 2 teaspoons

1 cup dry white wine

3 garlic cloves , chopped

1/4 teaspoon oregano leaves

1 teaspoon crushed red pepper, I didn’t think this was too spicy ,  you’ll have to adjust to your own taste buds. I actually thought 1 teaspoon was pretty mild, next time I will add more, but we like it spicy.

3 tablespoons chopped fresh italian parsley leaves

3 tablespoons chopped fresh basil leaves

Directions:

In a medium bowl toss the shrimp with 1 teaspoon of kosher salt and crushed red pepper flakes. Heat 3 tablespoons oil in a large skillet over medium-high heat. Add the shrimp and saute for a few minutes, toss around a bit and continue cooking until shrimp is just cooked through. ( you’ll want it pink and slightly curled up)

Remove shrimp to a bowl, set aside.

In the same skillet add 1 – 2 teaspoons of olive oil and add onions and saute until translucent and soft, about 5 minutes. Add the can of tomatoes with their juices, wine, garlic, and oregano.  Simmer until the sauce starts to thicken up, about 15 minutes. If sauce sits for a while it may loose some of its liquid , you can just add a little bit of water at a time to get sauce where you’d like it, but just a little at a time.  When you’re ready to serve, add the shrimp back into simmering sauce with any juices that they may have accumulated, toss to coat the shrimp, and cook for about 3 minutes . You can cut into a shrimp to make sure it’s cooked , it should be opaque not translucent. Stir in the parsley and basil. Taste for salt, and serve.

*prepare pasta according to directions and serve shrimp and sauce right on top.

Tuscan Shrimp with White Beans

Misc. dinners and New Years Eve 071Misc. dinners and New Years Eve 073Misc. dinners and New Years Eve 074  This is a wonderful and very simple meal and perfect for the upcoming Holidays or any time of the year. By very simple, I mean the ingredients are as simple as the preparation. I cooked this whole recipe up in a 1/2 hour–very little prep and you’ll look like a chef! So great. This is my kind of recipe. The original recipe comes from Michael Chiarello and I highly recommend it.
The beans are a perfectly healthy alternative to pasta.

Ingredients:

*this is for 4 servings

3 cups canned Cannellini white beans

1/4 cup plus tablespoons olive oil

app. 16 large shrimp ( this would be 4 per person, so adjust depending on size of shrimp) cleaned and deveined — I sometimes like to leave the tail on the shrimp –as you can see but it is totally up to you.

4 cloves garlic, sliced

1/4 – 1/2 teaspoon crushed red pepper depending on how spicy you want it

1 cup diced tomato from a can is fine. in the summer I would use fresh tomatoes

1 cup whole basil leaves

1 tablespoon fresh lemon juice

Kosher Salt and Freshly ground black pepper

*you can use some extra-virgin olive oil for drizzling

* sprinkle of fresh chopped italian parsley if you like as well

Directions:

Drain the beans over a bowl and reserve the liquid. Put the white beans in a large skillet with just enough of their liquid to moisten them. Add 2 tablespoons of the olive oil and bring the beans to a low simmer. Keep them warm while you prepare the shrimp. Lay out the shrimp on some paper towels and sprinkle with kosher salt and freshly ground black pepper.

Heat 1/4 cup of oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook , tossing frequently for a few minutes till shrimp turns pink , curls up and is cooked. ( don’t overcook) Remove the shrimp to a bowl with tongs. Add the garlic to the pan and saute until the garlic browns a little bit. Add the crushed red pepper flakes and cook for another minute. Add the tomatoes and basil and stir briefly, the add the lemon juice. Season with a little more Salt and Pepper. Cook for another minute or so, and then stir in the shrimp. Toss well and cook briefly to reheat the shrimp and make sure it’s fully cooked.

We placed beans on a large platter with shrimp over them. Drizzle with a little of the best olive oil you have on hand. Sprinkle with parsley if you’d like. Serve warm. You can also just serve shrimp with beans on the side. We thought it made a lovely presentation on the platter.

Salmon with Maple Glaze and Pineapple Salsa on the Side

Here’s another Salmon recipe for you. Originally from Paula Deen but with no butter this time around! The pineapple salsa was awesome served alongside with basmati rice. The glaze is simple and most of us have ingredients in the house.   I grilled the salmon in a basket and it came out amazingly delicious.  One piece got a little more charred than the other one, and I ate that piece ( picture with the spinach) it was really just the skin that got burnt.  If you’re brave you can put it right on the grill (just make sure your grill is well-oiled). You can marinate this overnight if you like, or just for a few hours if time doesn’t allow. I also served alongside some garlic sauteed spinach, which of course I alone ate because Joel absolutely will not eat spinach.

Ingredients: 

4 (6 ounce ) salmon fillets

1 tablespoon maple syrup

1 tablespoon teriyaki or soy sauce

1 tablespoon pineapple juice (juice from fresh pineapple )

1 teaspoon fresh ginger, minced

1 clove garlic, minced

Directions:

In a ziploc plastic bag place salmon fillets and pour marinade right over, squish around a bit and make sure it surrounds the fish.

Pineapple Salsa:

1 medium size ripe tomato, chopped into small cubes

1/4 cup chopped red bell pepper

2 pickled jalapeno pepper slices (right out of the jar; no gloves required), finely chopped. (If you don’t like jalapeno just omit.) I didn’t even chop them, it’s entirely up to you, and I also put in more jalapeno.

1/2 cup pineapple chunks, fresh or canned. (I used fresh, and used the little bit of juice from them for marinade.)

1 teaspoon kosher salt

1 tablespoon sugar

Directions:

Place all ingredients in a small saucepan. Simmer over low heat for about 5 minutes. Cool it down, refrigerate for a few hours,  and serve with salmon.  I served with Basmati Rice and garlic sauteed spinach. Perfect!

Shrimp, Spinach, Tomatoes and Pasta

I love the recipe with Chicken, Spinach , Tomatoes and Pasta so much that I decided to make it with Shrimp. It turned out as delicious as I imagined it would. My daughter and grandsons are out here visiting, and I wanted to make a special dinner for her first night. I didn’t feel like making chicken again, so I made the basic recipe but changed it around a little bit for the shrimp. How can this be bad??  With cooking you can mix and match and screw around with the recipes, more or less seasonings, etc. With baking you really can’t, when you start substituting it gets very dicey and I don’t recommend doing it unless you’re just screwing around in the kitchen. There is nothing worse than going to the effort and expense of baking and having to scrap the whole cake because you tried to change an ingredient.  Usually with baking , I follow the directions carefully and try new ingredients before I will make them for any one else.   With cooking you can be more flexible and be a bit more daring. There is definitley room for error with cooking but not with baking. Baking is much more precise a science. Heed the advice and have fun with this recipe. This is what I did.

Ingredients:

2 boxes Cherry Tomatoes or little grape type tomatoes. During the summer you may want to use some of those beautiful fresh tomatoes either from your garden or from the farm stand. In the winter months stick with the small cherry types. I was able to obtain some fresh cherry tomatoes grown locally and they were sweet and delicious.

Kosher Salt and Freshly Ground Black Pepper

2 Tablespoons Butter ( unsalted)

4 Cloves Garlic, minced

4 Tablespoons olive oil, divided

3/4 cup Chicken Broth

3/4 cup white wine ( I use whatever I have open) if no white wine in house double up on chicken broth

Shrimp , we used Ocean Garden brand or any Mexican White Shrimp shell on whites under 10 – 15 size.  Use whatever you like but I highly recommend this brand. I used enough for the three of us about 5 pieces each ( they are nice size) and cooked up the rest for shrimp cocktail for the next day. Joel recommends using Mexican White Ocean caught shrimp. The under 10 size means there are under 10 to a pound. These are the perfect size for shrimp cocktail and many dishes. They are rather costly though. Ask your seafood person for help , you’d be surprised how a little knowledge goes a long way in this area. We buy it by the box (5 lb.) and it comes frozen in a block. It gets defrosted, cleaned and deveined. You can also go into your local fish store and buy 1 lb. of shrimp about 10 – 15 to a lb. and have them clean it and devein it. We prefer the shrimp from Mexico or Equador, ask for white shrimp from Central or South America.

1 bag baby spinach

*crushed red pepper if you like a little heat ( totally optional)

1 lb. of spaghetti , I used perciatelli type of pasta. Use whatever type you like.

Directions:

Cook pasta according to directions. Drain and set aside. I like to keep a cup of the pasta water in case I need a bit more liquid for finishing the sauce. I always do this.

Clean and devein shrimp.  Thank goodness Joel does this for me, but you can ask them in your seafood dept. or fish store to do this they usually will,  it takes a lot of the work out of it.

Cut small tomatoes in 1/2, if you are using larger tomatoes just chop up.  Heat olive oil over medium high heat, turn heat down to low and add garlic for about a minute. Pour in wine and broth , raise the heat and allow the liquid to come to a boil. Allow the liquid to boil for a few minutes and it will reduce , cooking liquid should reduce by at least 1/2. Lower to a simmer and add tomatoes, I let them cook for a while, probably 1/2 hour or so for this sauce. The tomatoes will release their liquid a bit, and soften up .  Sprinkle some kosher salt and pepper now on tomatoes.  ( about 1/2 teaspoon of kosher salt) and a few grinds of the black pepper ( to taste) Let tomatoes simmer, while you cook shrimp. You can always turn heat off, and just turn back on when you’ll add the shrimp.

I pat shrimp dry on some paper towels, and sprinkle with kosher salt and pepper.

In another smaller frying pan, I add 2 tablespoons butter and 2 tablespoons olive oil over low – medium heat. When oil is hot , I add shrimp , I just quickly sear the shrimp about 3 minutes each side. Then I add shrimp to my tomatoes and simmer for a few more minutes. I add the pasta right in to my large skillet, and mix in pasta with the shrimp and tomatoes. Right before serving , I add in the bag of baby spinach and let it wilt, and that’s it! Plate it up!
